“silent sufferers to receive potentially life saving diagnosis” It is estimated that as many as 250,000 Australians are suffering from Coeliac Disease, according to the Daily Telegraph March 12, 2007. They state that at 1 in 100 people are estimated to have the disease but only 1 in 5 are actually diagnosed. This is largely due to lack of awareness of the condition and symptoms being confused with other conditions such as irritable bowel syndrome (IBS), stress and aging.The symptoms for Coeliac Disease can include diarrhea, fatigue, constipation, weight loss, mouth ulcers, headaches and severe stomach cramps. Delayed diagnosis and long term exposure to gluten has also lead the disease to be linked to osteoporosis, infertility and multiple miscarriages and cancer.Due to the variety of non-specific symptoms it can be difficult for your GP to spot the signs for Coeliac Disease. Some interesting facts from this month’s Australian Coeliac Sentinel The 12th International Celiac Symposium was held in New York in Nov. 2006, organised by an Australian, Dr. Peter Green who is Director of Celiac Disease Centre at Columbia University in New York City. The high but undetected rate of celiac disease in many communities and patient groups was the topic of many of the presentations. In Hungary, community nurses used finger prick tests for celiac disease that can be read in 5 minutes to find affected children before they start school. Amongst the 2676 children tested, 1 in 73 were found to have Celiac disease. In Finland, it was reported that the prevalence of celiac disease has doubled in the last 20 years. In Sweden suffered from an epidemic of celiac disease among children born in 1993, but only half as many children born with the disease in 1999. Today marks the beginning of Australia ’s Coeliac Awareness Week.Every year the Australian Coeliac Society instigates publicity and events in an effort to create more awareness of Coeliac disease and the Gluten Free diet throughout Australia. Each state society holds events through local support groups targeting doctors, restaurants, food retailers, manufactures and the general public. Their objective is simple - spread the word about Coeliac disease and the requirements of a gluten free diet. Although I am in Canada and cannot be part of all the festivities back home I thought I would spend this week reporting on the various events and activities and do my little bit to help increase the awareness of Coeliac disease. Below is an interesting article from the Australian Coeliac Society, which talks about the prevalence of Coeliac disease in Australia and the effects it has on our society. Gluten Free Pizza

I love pizza! In my freezer I always have a stash of Kinnikinnick Pizza bases. They are on the slightly expensive side at $2 per base, but I think that they are worth it and it is still cheaper to have a pizza at home than to go out. Plus mine are yummier.. is that a word? Anyway, there are so many different combinations that you can use on pizza. I tend to just open up the fridge see what I can find and go from there. This week we had some left over roast lamb, some yellow peppers from a thai dinner, spanish onion from risotto night and fresh cheddar cheese which is always on hand. I love bringing a variety of ingredients together from a variety of different meals to create my own tasty surprise. I have posted the recipe on GFL Cooking under Roast Lamb Pizza. Enjoy!

Roger’s Chocolates Gluten Free

I recently moved into a new apartment and to my delight my new flatmate worked for Roger ’s Chocolates ! Although I am not a die hard chocolate fan I new I was not going to be able to resist the temptation of all these tasty delights, so I decided to email Roger’s and get the word on whether these delicious treats were gluten free? Their response “The only chocolate we have that is not Gluten Free is the Peach Victoria Cream, there is trace amounts in the flavouring. All of the other chocolates we have are Gluten Free. The Bear Paws are Gluten Free.” I had asked specifically about Bear Paw’s because they are my favourite, along with the white chocolate with almonds, and the chocolate coated strawberries (valentines day special). So for all those in Canada, visit your local Roger’s Chocolates and spoil yourself this Easter… and for those who are not fortunate to have a Roger’s Chocolates locally, they do ship worldwide! Rosemary Lamb on Grilled Polenta

This week I decided to experiment a little with one of my Aussie favourites - BBQ Lamb on Grilled Polenta with Fresh Spinach Leaves. Grilled polenta is one of my favourite dishes. You can use it in place of bread, as a pizza base, in place of potato or just by itself. One of the key things I have learnt since making this dish is that you should use butter and parmesan to help bind it together and give it more flavour. Polenta by itself can be a little plain, so the added flavour of butter and parmesan really helps. You can also add salt, pepper and herbs to the mix, for added taste. BBQ Lamb, Chicken, Beef or Chorizo? I have tried this dish with all of them and my favourite combination would have to be lamb and chorizo. It has a lovely flavour and the contrasting colour of the red chorizo against the yellow polenta and green leaves really adds to the presentation. Back in Canada…

After many hours of traveling across the pacific we are back in Whistler, British Columbia. We had a fantastic time in Australia but it is certainly great to be back in the land of snow! Whistler is having one of its best seasons on record and with over 35 feet of snow, we are happy to be back enjoying it. Since being back, I have been frequenting my local grocery stores to pick up all my favourite gluten free products; Thai kitchen yellow curry paste, Glutino corn bread, Kinnikinnick english muffins and pizza bases, Bob’s Redmill gluten free cookie flour and Lifestream buckwheat waffles with maple syrup. For a little touch of home I decided to make Jam Drops today. As a child my Mum and I would always makes these when I was at home board. It was one of my favourite recipes back then and still is today. To keep things interesting I decided to experiment a little. Our Australian Summer Holiday

Well the time has come and our wonderful trip home to Australia has come to an end. It was a fantastic holiday catching up with all our family and friends.Here are some of the Gluten Free highlights ~ * Thai Food: Since living in North America one of the things I has miss most about Australia is Thai Food. We really have some of the best Thai in the world. It was great to go back to Kirribilli and eat at our local Thai restaurant - Spice Market. When James’ & I lived in Kirribilli we would go there once or twice a week. It is hands down the best Thai food I have ever had (and after traveling throughout Thailand that’s saying something). They are always accommodating of my Gluten free needs and the Thai Green, Yellow and Red curries are simply delicious!!! * Sausages: It wouldn’t be a trip to OZ without a few ’snags on the BBQ’. Sun, surf, boats & bikinis, my hometown of Port Macquarie is simply fantastic. My childhood friend Bronwyn still lives there & just like old times we spent our day’s horse riding, wakeboarding, surfing, swimming, playing backyard cricket and catching up about our various adventures over the last few years. Gluten Free Balsamic Chicken

During the winter time at least once we week we have a ‘family’ dinner with all our friends. Last week we were lucky enough to have one of my very good friends from Australia cook for us. He was visiting Whistler and for over a month now has been making our taste buds water with talk of his infamous Balsamic Chicken . Now there is some history to this dish, which I believe has quite a name for itself amongst a certain group of Aussies in Brisbane. Colin, the creator of this delicious delight, considers this his #1 winning dish to cook any time he needs to impress. Gluten Free Cornflake Cookies

Well our rainy season has arrived! So what better to do than start baking. I decided to go with a childhood favourite of mine - Gluten Free Cornflake Cookies . I used one of my Mum’s old tried and true recipes with just a few changes to make it my own. I did some research on the internet and apparently these cookies we quite the popular treat in the 70’s. One women said she had waited to 10 years to find the elusive recipe! On Monday, whilst in Vancouver, we decided to visit Whole Foods Market for some Gluten Free supplies. I was extremely excited to find that they are now stocking Enjoy Life granola!!! I first found Enjoy Life cereal in a small town off the coast of Alaska. We were on the Alaskan ferry traveling up the inside passage when our ship docked for an hour. We decided to take a break on land and stock up on supplies. We visited the local grocery store and out of interest I strolled around to check for Gluten Free goodies. I was totally surprised to find Gluten Free Granola. At that stage I had been in North America for 8 months and was desperately missing my morning muesli/granola. I quickly purchase a few boxes before we returned to the ship. March is National Noodle Month ! And fellow Gluten Free blogger Karina, Gluten Free Goddess, has rallied Gluten Free cooks and asked us to ‘show off your noodle’ My month started out with good intensions, I had so many recipes in mind I was going to noodle up a Gluten Free storm. Of course, as the month went on ‘things’ got in the way. Particularly the fact that I have decided to re-join the workforce! After 12months of working from home and travelling the world, it has certainly come as a shock to the system, but all in all I am enjoying it. Best of all, my new work mates love food. Honestly at lunch times you would think we were on the set of a movie with the spread we put on. Each day we take it in turns making lunch for the group and gradually everyone is learning how to adjust recipes to be Gluten Free. What a welcoming surprise to find this note on the menu board at Glacier Creek restaurant on Blackcomb Mountain ☺ It looks like Gluten Free buns are here to stay in Whistler… Last winter season Whistler Blackcomb began offering Gluten Free hamburger buns at their on mountain restaurants Glacier Creek (Blackcomb) and Roundhouse Lodge (Whistler). It had always been a small temporary note stuck on the board or window where you ordered. I am very happy to report that this season WhistlerBlackcomb have continued to offer Gluten-Free hamburger buns and made them a permanent member on the menu. Over the years I have snowboarded at many resorts, but I would have to say that Whistler Blackcomb has gone above and beyond in the Gluten-Free menu items they provide. hhmm don’t you just love Sundays! And there is no better Sunday than Easter Sunday when you get to wake up and have Chocolate for breakfast. To spoil me this Easter, my hubby bought me some delicious Lindt White Chocolate Truffles… I was absolutely addicted to these before becoming Gluten Free. Although excited, my first comments to him were ‘but these contain malt?’ Well it seams not here in north america. He had checked the label and sure enough, there were no Gluten containing ingredients (and no symptoms so far to suggest otherwise) For him I decided I could not go wrong with the decantant Cadbury Cream Eggs. Although way too sweet for me, they were absolutely no problem for him to polish off. In other news, on Saturday I decided to bake my delicious Chocolate Biscuit Balls… these are scrumptious, so be warned that it is hard not to undulge on too many. Enjoy! Catherine at ‘A Gluten Free Guide’ is having a Pizza Party ! When I first became Celiac/Coelaic I have to be honest and admit that I definitely missed pizza. Before becoming Coeliac I had worked at a wood fired pizza restaurant in Sydney, Australia. During that year I certainly enjoyed my fair share of delicious pizzas and developed a life long passion for pizza. Below are my favorite Gluten Free re-creations of those delicious wood fired pizzas… Garlic Pizza Spread the pizza base with a good quality olive oil. Top with fresh garlic, parsley, a sprinkle of sale and a generous layer of shredded parmesan cheese. Cook in the BBQ or oven until crisp. Bruschetta Pizza Cover base of pizza with tomato paste. Layer with finely sliced roma tomatoes, fresh basil, spanish onion and garlic. Sprinkle with salt and pepper. Cover with a drizzle of basil oil, then top with shredded mozzarella and parmesan cheese. Chorizo Sausage Pizza Spread a thin layer of tomato paste over pizza base. Next lay


Sunday Night Dinner…Gluten Free

:: Satay Chicken with Thai Cucumber Salad :: Rice and/or Noodles Place rice in small saucepan with 1 cup of cold water and 2 teaspoons of powdered chicken stock or curry flavouring. Cover and bring to the boil. Do not remove lid at any stage. Once boiling, remove from heat and cool for 10 mins – lid on. Next, place saucepan back on low heat and leave a further 10min. Fluff with a fork and serve. Place noodles in saucepan and cover with boiling water. Allow to sit for approx 15-20min or until soft. Drain and serve. Chicken Skewers – Baked then grilled Dice chicken breast into bite sizes cubed and thread onto wooden skewers. Place on a baking tray and top with fresh garlic, salt and pepper, a dash of chicken stock. Drizzle with olive and bake in the oven on 350F for approx 10-15min. Turing half way through. My friend has been diagnosed as Gluten & Dairy Intolerant

A good friend of mine has recently been diagnosed with a Gluten & Dairy Intolerance. At first I was sad to hear the news but then I realized that it was actually good. She had been feeling unwell for such a long time that it was a relief for her to finally know what the problem was and start being able to control it. Of course once you are diagnosed, then what do you do? There are the obvious things to take out of your diet such as bread, pasta, milk & cream but what about all the hidden things in chicken stock, soy sauce and especially butter which is used in just about every type of cooking! To help I offered to go over to her house & teach her how to cook one of my favorite meals - Thai Yellow Curry.
