Crush Pad (Destemmer Pad)- Part 1 2007-03-04 00:59:54 There are several key factors in evaluating the processing equipment.
1.) Through-put, normally in tons per hour
2.) Cost, in dollars in the U.S.
3.) Approach: destemming only, crushing/destemming, sorting, & gentleness.
The winemaker must decide on approach - gentle grape processing vs. speed & efficiency. The two don’t always have a negative correlation with each other, but gentle processing with a similar speed capacity will typically cost more. Therefore speed is a major consideration. In most cases, it would seem to me that the more gentle the processing equipment the better. There are some theories that state that some grapes need to be beat up more, such a Merlot. I would still error on the side of being gentler than less gentle.
The basics of the pad are a hopper, destemmer, and pump. There are other pieces as well, but I will save that for Part 2 where I will be discuss our approach, the rationale, and rough pricing. The hopper is the unit

Over the next several months I will be documenting my experiences and opinions of starting a winery. My hope is that I can shed some light on opening a winery. This has been a dream of my since I graduated college, California Polytechnic State University - San Luis Obispo, in 1999. I never dreamed that I would be able to start a winery as such a young age. I figured I would make some money in the tech world, turn 50 years old or so and decide it was time for a change & to follow my dreams. Luckily I didn’t make fortunes in the tech world. Don’t under estimate insulation 2007-03-16 01:25:02 When I started this project I figured the building would have insulation
and it won’t be such a big issue. I never knew the problems and issues associated with insulation, not to mention the cost. Also, when insulating a building not all R-Factors (measure of performance) are equal. The fiberglass roll-out insulation can lose effectiveness around beams and posts, especially when rolling out the fiberglass only between support beams. Depending on the building a builder might say he is installing R30, but since the around the beams and posts there is almost no insulation, the overall effectiveness of the building might actually be well below R20. Also, don’t be fooled by thermal barriers which claim to have a high R-Factor and cost a fraction of tradition or insulation board (which is what we went with).
We are using a Dow Thermax product in our building. It seems to be a high performance material with a white inward facing washable facing. The cost per square feet is not too bad at
