CRISP BROWNED BUTTER COOKIES 1970-01-01 00:59:59 Cookies are all-time "must haves" at my place and since they are easy to make, and good for take along or for later (if they remain - which rarely happens!!!) I often make them. Here is an easy recipe for Crisp Butter CookiesINGREDIENTS:1/2 Cup Sugar1/3 Cup butter1 Egg1 tsp Vanilla1 Cup All-Purpose Flour1/2 tsp Baking Powder1/8 tsp Salt3 Tbsp of Chocolate Chips ( any variety) METHOD: Preheat oven to 400 degreeCook butter over medium heat until lightly browned and let it cool completely for 10 mins in a large mixing bowl.To the above add sugar, vanilla and egg and beat well for about 2 mins.Add the rest of the ingredients and beat well on low speed for another 2 to 3 mins or until well mixed. Note: Dough will be very soft but don't panic bcoz that is the way it should be.Stir in chocolate chips. Drop dough by 3/4 spoonfuls 2 inches apart onto ungreased cookie sheet. GOBI MATAR CURRY 1970-01-01 00:59:59 This is my entry for Pooja's Theme of the week.INGREDIENTS:1 cup Green Peas/Matar ( Soaked and cooked well)Cauliflower1 Big Onion chopped1 Tomato chopped1/4 bunch(about 5 strands) of Coriander leaves- chopped1 tsp Ginger-Garlic Paste1 tsp Kitchen King Masala1/2 tsp Coriander Powder1 tsp Red Chili Powder1 Green Chili1 Red Chili1/2 tsp Sugar1/2 tsp Turmeric PowderTamarind2 Tbsp of thick yogurt.Salt as per tasteMETHOD: Cook green peas and cauliflower separately and keep it aside.Heat about 1 Tbsp of butter and saute onions until brown.To this add ginger-garlic paste, green chili, red chili and saute it for another few mins.Now add chopped tomato + coriander leaves along with all the dry masala ingredients and cook until tomatoes are well cooked.Cool and blend into a smooth paste adding yogurt and tamarind paste.To this paste add required amount of water and the veggies and cook on low flame covered for around 5 mins.Garnish with coriander leaves and serve hot.Enjoy!!! JHATPAT BESAN HALVA 1970-01-01 00:59:59 INGREDIENTS:1 Cup Besan1 Cup Sugar (powdered)1/4 Cup Ghee1/2 Cup Whole MilkSaffronAlmondMETHOD:Spread Besan evenly on a microwavable plate and heat it for 1 min. Then slowly mix the powder using the fork and again heat for another 2 min with mixing the flour here and there in between and thus nicely roasting it.Soak saffron in the above milk.Melt about 3 Tbsp of ghee in a heavy bottomed kadai and then add the above besan and fry until the raw smell of besan is completely gone (besan turns to golden brown). Tip: Keep stirring constantly and do not let it form granules.Now add the remaining ghee( if wanted) and above milk and keep stirring for another few mins until it is all mixed well and forms a single mass. Here is a healthy snack which is packed with fiber and is so very easy to make . INGREDIENTS:1.5 Cups Wheat Flour.5 Cup All Purpose Flour/Maida1 Big Onion1 Jalapeno4 Green Chilies1/4 Bunch Coriander leaves1 Tbsp Jeera1 tsp Turmeric powder1 Tbsp Olive OilSalt as per taste METHOD:In a food processor finely chop onions + Green Chilies + Jalapeno + Coriander leaves.To the above add salt and turmeric powder and set aside for about 3 min's. There are more versions to this dish than you can count, here's mine.INGREDIENTS:2 Cups rice1 cup butter milk/yogurt1 tsp Methi seeds1 cup PohaSalt as per taste.METHOD:Wash and soak rice + methi seeds in warm water for 2 hours.Wet the poha with little waterGrind the above along with buttermilk/yogurt + poha+ salt into a very smooth thick batter.Keep it in a warm place for fermentation for about 8-12 hrs.The batter will come up nicely if it is fermented well.The thickness of the batter should be such as when poured onto a heated griddle it should automatically set itself into a nice thick circle.Cook both sides on medi
PIZZA BISCUITS 1970-01-01 00:59:59 When I saw Mini Pizza at Soumya's (Home Spices) blog I really loved the idea and wanted to try it out. I changed it a bit by making them thin like biscuits, so named it Pizza Biscuits. Thanx Soumya for the lovely idea. This is my contribution for Coffee's MBP.INGREDIENTS:Pizza Dough (I used home made)Tomato KetchupOnion chopped very finelySambal OelekOlives (pickled)Sun Dried Tomatoes - slicedCheese (of your choice)Garlic PowderMETHOD:Pre-Heat the oven at 350 degree.Mix in tomato ketchup with little Sambal Oelek (Note: you can use any hot sauce). Roll the pizza dough as thin as possible and using cookie cutter cut them into nice rounds.Apply little olive oil on top of these cookies and place it in preheated oven for just 3 mins.Remove and apply the tomato paste on top evenly. Add the rest of the toppings and cheese over it and pop it in the oven for 5 to 6 more mins or until the cheese melts.Enjoy!!!Note: you can change the topping as per your liking.
ASPARAGUS TERIYAKI 1970-01-01 00:59:59 Here is an unusual and tasty recipe for teriyaki style asparagus.INGREDIENTS:Asparagus1 Tbsp soy sauce1 Tbsp sesame seeds4 Garlic flakes chopped very finelyGinger chopped very finely1 tsp Onion Powder1 tsp Sambal OelekSalt & Pepper1 Tbsp Olive OilMETHOD:Bring a large pot of water to boil and add salt. Cook the asparagus in it until tender for around 5 mins. Drain and keep it aside.Whisk together soy sauce + sambal oelek+ pepper and keep it aside.Now heat little olive oil and sesame seeds. When sesame seeds start popping add finely chopped garlic and ginger and saute it for a few mins. To this add the above sauce mix and onion powder.Now add steam cooked asparagus and toss it for a few mins. Adjust salt.Serve hot!!!Tip: If you have a grill then just grill the asparagus instead of steaming it.
BAINGAN BHARTHA 1970-01-01 00:59:59 INGREDIENTS:1 Big Egg Plant1 Big Onion(finely cut)1 Big tomato (finely cut)1/2 spoon turmeric powder1 tsp Chili Powder to taste2 Green Chilies1/2 tsp Garam Masala Powder1/2 tsp Coriander Powder1/2 tsp Cumin Powder1 Tbsp Ginger Garlic PasteSalt to tasteCoriander leaves(finely cut)METHOD:Prick the eggplant nicely with the fork all over.Broil the eggplant in the oven(right under the broil) for about 7 mins one side and anther 7 mins on the other side until the skin starts charring. Let it cool and remove the skin.Now start chopping this eggplant nicely into as small pieces as possible or until they are mashed nicely.Fry the onions till it turns to golden color. Then add Ginger-Garlic Paste to it and fry for another minute.To this add tomatoes and all the rest of the masala's and fry for 2 more minutes until tomatoes are nicely cooked and mashed.Now to this add the mashed eggplant + 2 Tbsp of water and cook on light flame for about 5 more mins until all the ingredients are nicely blended.

Yup, Thanksgiving is the time when all the family members get together and spend some quality time with their loved ones. Here I am all alone with my hubby dear miles away from our families. Sometimes I just so much wish to see them again; it'd have been great if they were close to us... Hoping so much to have them here at my place for dinner and cooking something nice for them; they've done this for so long since we were kids... I am still hoping to have them over here sometime, hoping, yes hoping... Hmm, I guess I was feeling a bit down today missing my family, Then as usual the "jaadu ki jhappi" of my hubby made me feel great :)Anyways the other day I just didn't feel like cooking, but then I stumbled upon Lakshmik's Veggie Quesadilla recipe that looked quick n easy. VEGETABLE STEW 1970-01-01 00:59:59 INGREDIENTS:1 Cup Corn seeds( Frozen)1 Green Capsicum sliced2 Red Capsicum sliced1 Cup of Boiled Green Mutter1 Big Onion sliced5 Long Beans uncut1 Bunch Spring Onions5 Garlic Flakes1 Jalapeno - sliced or chopped lengthwise- use less if you don't like spicy1/2 inch Ginger grated1 Tbsp of ground fresh Black Pepper1 tsp of Sambal Oleak ( its a fresh red chilli paste with some vinegar - available in any Asian markets or even Indian grocery store - a must have in pantry)1 tsp of Soy Sauce2 Tbsp Olive OilSalt as per tasteMETHOD:Put all the sliced veggies except onion , garlic& spring onion in a baking tray sprinkle about 1.5 Tb sp olive oil , salt, pepper and keep in it oven on broil for just 5 mins.Now in a huge pan add the little oil and fry the sliced onion until they turn dark brown then add garlic and fry until they go transparent.To this mix in all the rest of the vegetables and toss in along with sambal oleak & soy sauce and cook for another 3 to 5 mins.Serve hot. METHI MATAR MALAI 1970-01-01 00:59:59 INGREDIENTS:1/2 cup Green peas (boiled)1/2 cup Cream or malai1 bunch Methi leaves (chopped)1 tomato - grind into paste1/2 tsp Cumin seeds1 pinch Asafoetida3 tsp Ghee or butterSalt to tasteRoast and Grind to a paste --> 1 Onion +1 tsp Curds + 1tsp Sugar + 1.5tsp Cashew nuts +1/2tsp red chili powder+1/2 tsp turmeric powder + 1tsp Khuskhus(poppy seeds) + 1/2"piece Ginger + 2 peppercorns + 2 Cloves + 1/4" stick CinnamonMETHOD:Immerse methi in salted hot boiling water for 10 minutes. Drain and wash well in colander under running water. Keep aside.Heat ghee, add cumin seeds and asafoetida.Add tomato paste and fry for 2 minsAdd paste and stir fry for 2-3 minutes.Add ground spices. Stir, and add peas, methi leaves and malai.Add all other ingredients. Boil for 2-3 minutes or till gravy thickens. If gravy feels too watery sprinkle a dash of flour and stir.
