Weekend lunch

For lunch I made hot dog crescents and ambrosia fruit salad. Just cut the hot dogs in half,make a slit and fill with cheese (I use medium cheddar),wrap in a crescent roll and bake on a cookie sheet at 350 degrees for 8-10 minutes.The kids love these.The salad is a can of drained mandarin oranges, 1 cup grapes,1/2 cup maraschino cherries ,1 Braeburn apple peeled and diced,3/4 cup mini marshmallows and 1/2 cup shredded coconut.Mixed gently in a bowl.

Baked Oatmeal

I must admit that I never tasted oatmeal until about 8 years ago when my husband made a bowl for me. Growing up I ate grits slathered in butter,salt ,pepper and bacon. But oatmeal has become a weekend morning breakfast that we all enjoy.I make baked oatmeal and usually serve it with a simple fruit salad of banans,apples and strawberries. Sometimes I will serve turkey bacon as well. My husband and I love this stuff,especially on cold mornings like the one we are having today.This recipe came from an old PA Dutch cookbook .Baked Oatmeal 1/3 cup butter2 large eggs3/4 cup brown sugar1 1/2 teaspoons baking powder1 1/2 teaspoons vanilla1 teaspoon nutmeg or cinnamon1/4 teaspoon salt1 cup milk2 tablespoons milk3 cups oatmeal (regular or quick)Melt butter.Grease 1 1/2 quart baking dish and drop in eggs and beat well.Add brown sugar, baking powder, vanilla, nutmeg or cinnamon, and salt. Spaghetti Sauce

This is my absolute favorite meal. My nana's spaghetti sauce. I make a big pot of this stuff about once a month and everyone loves it. It reminds me of home and big dinners with my family.All of my aunts and cousins make this recipe too. I serve it with simple garlic bread.The kids eat it willingly,even the picky ones,which is a miracle in itself! The key is to make it earlier afternoon and let it simmer on the stove for a few hours. These little yummies are addicting! I wanted sweet cupcakes today and was searching through my cupboards and remembered I had a huge container of peanut butter. Venison Stew

Another cold snowy day.The boys spent most of the afternoon playing in the snow so I made a venison stew to filltheir bellies.This is a great stew andyou can substitute beef in place of the venison. I serve it over rice or egg noodles.Tonight was the latter.Very filling.Great winter comfort food.INGREDIENTS:2 tablespoons vegetable oil2 pounds venison stew meat3 onions, chopped2 cloves garlic, minced1 tablespoon Worcestershire sauce1 bay leaf1/2 teaspoon dried thyme1 tablespoon salt3 cups water7 small potatoes, peeled and quartered1 pound carrots, sliced1/4 cup all-purpose flour1/4 cup waterDIRECTIONS:In a large soup pot, deeply brown the meat in oil. Stir in onions, garlic. Worcestershire sauce, bay leaf, thyme, salt and 3 cups of water. Simmer, covered, for 1 1/2 to 2 hours, or until meat is tender.Stir in potatoes and carrots; cook until tender. Combine flour and 1/4 cup water. Stir into the stew. Remove bay leaf before serving.

Cornmeal Crusted Tilapia with Salsa

Tilapia has become a staple dish in our house.It is a mild white fish that my husband and I as well as the children love. I usually bake it with fresh herbs and lemon but tonight I pan fried them. The cornmeal paprika mix was really good. This is a repost recipe from last year,but I have new readers and the picture I took this morning begged to be posted.Huge kid pleaser,but I do not make it as often as my boys would like because of the nutritional content.But this morning I wanted to make this for the boys and I am glad I did.I usually do not add the pecans unless we are having guests or I make it for a friend or neighbor.Cutting the biscuits can be a bit time consuming first thing in the morning but preparing it the night before and popping it in the fridge works too! This morning we woke up to another frigid day. Wind chill was well below zero. I made a pot of coffee as usual but decided on a treat for myself...Nutella Hot chocolate.For those of you Nutella virgins out there you must try it.It is a hazlenut spread that is awesome on most anything. I was iontroduced to it in high school by a friend who's family traveled extensively and they always had the best food and drink at their house.I made excuses to go over there just for this hot chocolate and Orangina (a whole different blog on this stuff coming soon) . This is hands down one of the best kid friendly recipes that I have that kids and adults alike rave over.And it is fairly easy to make on a weeknight. Just serve over rice or egg noodles and you havea great tasting, filling meal. There is never any left over.You could substitute applesauce for the aplle juice, as I did last night because I was out of juice and it worked out fine.I always use low sodium soy sauce and add a sprinle or two of arrowroot to the sauce to thicken it up nicely.You can control the heat with more or less red pepper flake,depending on your preference. Easy to do.Everyone loves it.Tilapia is mild enough to make the kids happy.They eat it without complaint! These little meatballs are really good.I remember going to my aunt's house and her making them when I was a little girl. And they are super easy to make and fast to get on the table.The Rice A Roni is the best part.Gives a nice salty flavor. And super kid friendly. I always serve with mashed plain old fashioned mashed potatoes.Just butter ,salt and pepper to pour the gravy over.The meatballs will cook and soften and some of the rice will fall into the sauce. I lat them simmer for about 35-40 minutes on low with a lid to make sure that the rice gets soft, so if the broth reduces just add more water and stir.These are a great variation on the traditional white rice and tomato version. I had very ripe bananas that I wanted to use up so I made banana oatmeal cookies. I usually make banana muffins or bread but wanted something different.These cookies are so good.They are cakey,so they remind me very much of banana bread. Ok, this recipe is a keeper.I diced the cheese,ham and chicken when the baby was down for his nap and it took me about 15 minutes to bread and cook the chicken and put it all together.It baked for half an hour and dinner was on the table. All plates were cleaned. I figured all the boys like cheese,ham,chicken and Ritz crackers so it was bound to be liked by all.It was. Homemade Croutons

After making my own croutons I will never buy store bought again.I use them in soups,salads and as snacks for the kids.They are very versatile.The herbs and spices that you could use are endless. I usually use just garlic but have added cilantro for taco salads and italian seasoning for minestrone and wedding soup. And it is a great way to use up bread. 3-4 pieces day old italian or french bread,cubed3-6 tablespoons olive oil o1/2 tablespoon garlic powderCut bread into cubes.Place pieces in a bowl and drizzle oil over as you stir to coat.Sprinkle with garlic powder.Bake at 350°F for about 15 minutes, stirring once.

Penne with Vodka Cream Sauce

I love this sauce.I had it a few years ago for the first time and loved it. I made it tonight and it was very good.And fairly easy to prepare. I was rushed with 3 kids ,baths and a Boy Scout Meeting and I made it without any problems. And.....the kids ate it.No wimpers or rolling of the eyes.In fact when the sauce was simmering my 9 year old walked into the kitchen and asked if we were having Spaghettios!!!!!! for dinner. I don't think it smelled like spaghettios but he ate it,which is another yay for me.I served a spinach and raspberry salad with this. Always eaten in this house. I like to bake it in a bundt pan.Easier for me to handle and pretty to boot. I don't add nuts because generally the boys would prefer the bread without. My oldest eats this for breakfast.Great with butter and a cup a joe!1 loaf1¼ hours 10 min prep3/4 cup sugar1 1/2 cups of mashed bananas3/4 cup vegetable oil2 eggs2 cups all-purpose flour1 teaspoon baking soda2 teaspoons vanilla1/2 teaspoon baking powder1/2 teaspoon saltHeat the oven to 325 degrees.Grease a loaf pan, either 9x5x3 or 8 1/2x4 1/2x2 1/2 inches, with shortening, using a pastry brush.Mix sugar, bananas, oil and eggs in a large bowl with a wooden spoon.Stir in remaining ingredients.Pour into pan.Bake until a wooden pick inserted in center of the bread comes out clean, 60 to 70 minutes.Let cool 10 minutes, then loosen sides of loaf from pan.Let cool completely before slicing.

Vanilla Cupcakes with Cinnamon Buttercream Frosting

My oldest son loves anything with cinnamon so I decided to make him these cupcakes as a snack when he got home from school. They turned out really well. Not an overly sweet frosting and it goes great with a big glass of milk. I added an extra 1/8 tsp of cinnamon and it still came out well. I just added the cinnamon to my buttercream frosting recipe.Cinnamon Buttercream Frosting 1 c. butter, room temperature3 3/4 c. confectioners' sugar (powdered sugar), sifted3 to 4 TBSP milk1 tsp vanilla extract1 tsp ground cinnamon- Blend butter in a large bowl, on low speed until fluffy, approx 30 seconds.- Add sugar, 3 TBSP milk, and vanilla.- Blend lightly.- Add cinnamon.- Continue mixing until sugar is well incorporated.Increase speed and beat until fluffy.If the frosting is stiff, add the remaining 1 TBSP of milk.

My fellow food blogger Katie over at http://www.littlespatula.blogspot.com posted an overnight waffle recipe a few weeks back that I got around to trying this morning. I have a waffle maker and the kids love waffles, so last night before bed I prepared the batter and popped it in the fridge. Easy .Got up this morning,stirred the batter and oila.....it made 4 large waffles.Katie, my children thank you. This picture shows the last waffle that is underdone on the edges.I have a baby that still needs soft food so he got the soft outside and my 3 year old got the crispier inner piece.I will definitely be making these again.The taste was great and the recipe couldn't have been easier. This is a very simple after dinner snack that I make often for the boys.I add apples and bananas as well if I have them,but the oranges are great by themselves.And so easy to do.The cinnamon and oranges pair nicely together.I try to dust the cinnamon on as lightly as I can,but my son prefersmore of a cinnamon taste.Adjust the cinnamon to taste.A different take on oranges that works!Cinnamon Oranges 2 oranges, the sweetest you can find1 tablespoon cinnamonPeel oranges, then slice crossways into rounds and arrange on a pretty plate.Lightly dust with cinnamon and serve immediately.
