Coconut Paradise

My friend Tommy is currently vacationing in the tropics and in his honor ...a coconut cupcake!! What screams tropical other than fresh coconut? Not much. This cupcake started off as a yellow cupcake from Martha Stewart but, after a few modifications, a tender almond cake was achieved. The cupcakes were icied with a rich cream cheese icing, then fresh coconut was added. It's a decadent cupcake without being overly sweet.Coconut Cupcake with Cream Cheese Icing1/2 cup of butter, soft3/4 cup sugar2 large eggs1/2 teaspoon of vanilla extract1/2 teaspoon of almond extract1/2 cup & 2 tablespoons of milk3/4 cup of flour3/4 cup cake flour1 1/2 teaspoon baking powder1/4 teaspoon saltPreheat the oven to 350'F. Coconut-Ginger Cupcakes with Mango Buttercream

Hmm, I'm still feeling a little tropical. I don't see why, since I live in southern California and it's pretty much tropical all year round. Since I was still stuck on "tropical", I decided to make cupcakes reflecting that mood. I decided to use my favorite vanilla cake recipe (Billy Reese's), and just make a few changes. Instead of milk I used coconut milk (organic). For the vanilla, I used half the amount and added a 1/2 teaspoon of coconut extract. I also added a 1/2 teaspoon of ginger. Once the cupcakes are cooled, I filled them with mango jam in the center. I did go all out for the buttercream!! I used Martha Stewart's Swiss Meringue Buttercream . MMM! SO GOOD!! I added 12 ounces of pureed mango jam at the end and beat the buttercream smooth. The cupcakes looked beautiful and the taste was better, than expected. My friend Lucy loves mangoes and tomorrow I will hand deliver the cupcakes to her house. See ya next week!

I have a friend (we'll call him Jose Turner) whom I suspect is a brownie/cupcake addict. Whenever I ask Jose about baking suggestions, he always responds with "bake brownies with pecans!" If one were to shake Jose upside down cookies would fall from his pockets instead of coins. I bet he hides brownies where a normal person would hide valuables. I searched high and low for a good recipe that would meet Jose's "needs" (addiction). That is why these eight cupcakes are dedicated (and will be given) to Jose. My boyfriend Joe is a big fan of peanut butter and milk chocolate. So, much so, that every year I bake a peanut butter & chocolate cake! I bake these cupcakes whenever Joe needs a "fix"!! I should really rename this recipe "Joe's Delight". I Love Valentine 's Day! The flowers, chocolates, and all the expressions of love, oh my! If you are one of those Valentine's Day haters beware, because for next thirteen days it will be non- stop love on this blog. Now back to business, you should really bake the cupcakes with the best chocolate you can afford. When I started baking years ago, I would use ...Hershey's (please don't hate me) or Baker's (again don't hate) in my recipes. By no means, am I condoning overpriced chocolate, but there is certainly a vast difference between Hershey's, Nestle, Valrhona, Callebaut, Green & Black's and so, on. You should really try some of the new cocoas out there. Some of the cocoas have a coffee note to them, if this is the case and the recipe calls for warm water, I usually replace it with coffee. Coffee really enhances the taste of chocolate. So, go out there and experiment with your cocoa! That frame of mind led me to discover Pernigotti's Cocoa. Pernigotti's gives cakes

So, you thought you were getting cupcakes for Valentine's Day, huh? Nope, not a chance. These dark and rich, brownies are from a Williams Sonoma Book titled, "Cookies". My boyfriend (Joe) gave me the book as a birthday present and I have baked (almost) every recipe in it. This recipe is extremely versatile. The recipe calls for 3/4 cup of chocolate chips; I like to use 1/4 cup bittersweet, 1/4 cup semisweet, and 1/4 cup of milk chocolate. (I've even added dried cherries) I added also, a 1/2 cup of pecans. All you need now is tall glass of milk.P.S. To all my Valentine's: your brownies will be arriving shortly!Okay! okay! You know me too well. Of course, I baked cupcakes. The cupcakes are chocolate with the perfect pink marshmallow(fat-free) icing. Chai Latte Cupcakes

With Valentine's Day right around the corner, I wanted to bake something non-chocolate just to break up the monotony of chocolate everywhere (..Sigh). What to bake? That was the question, everyone I asked, screamed for chocolate. Finally, Lucy (my laundry partner) said "I've seen chai tea in everything lately, what about that?" (...Hmm?) I've never had chai tea. So, that's where I left it for 2 days. Then onTuesday, I went to the bank which is conveniently located next to a Starbucks, and ordered a tall chai latte. It was okay, nothing to get excited about. I was still left with the question of what to bake. Buttermilk Cupcakes with Lemon Curd

Whew! What a week! I never thought Friday would get here. Tons of homework, papers due, and the thought of two of my classes being cancelled nearly gave me a heart attack! Alas, there was a light at the end of the tunnel; my "Food & Wine", "Martha Stewart", and "Perfect Cakes" by Nick Malgieri (cake guru) arrived. YEAH! It's also a three day weekend another, YEAH! I took my new book to my favorite chair and combed through the recipes. Buttermilk Cake? It was touted as being the perfect accompaniment to fruit. Hmm....lemon curd? Hmm....meringue? The result ...the cupcakes did have a slight tang, but they were really tender and moist. For the lemon curd, I have to admit I bought at Whole Foods. I know, I should have made it. Chocolate Chip Cookies

... Did I mention it's raining? Whenever it rains in my part of California, I get homesick for Chicago. I guess it's because I miss the seasons (the change in weather dictating the season to come). When I get home sick I bake a batch of chocolate chip cookies and feel a little a better. Nothing screams home like a plate of cookies and an ice cold glass of milk! The cookies are for all the "transplants" who are homesick, there just like mom's! Pumpkin Almond Cupcakes

In March and April I have a total of 8 family members & friends who be celebrating their birthday. Along with a gift, I like to bake the birthday boy/girl their favorite cake. A few of the friends live near by, so delivering their cake is a snap. The majority of the cake recipients live hundreds (and thousands) of miles away. What's a girl to do? Well, it's not easy that's for sure, I try to use "shaped pans" to give the cakes an extra special touch. I usually use a bundt pan, tube pan, loaf pan, ...I even have a pan in the shape of a rose! (Thank You Williams-Sonoma!) Along with cake, I include the glaze or buttercream and instructions on how to "ice" the cake. So, tonight I baked Pumpkin Almond Cupcakes and an experimental "loaf". Chocolate Covered Cherry Cupcakes

When I have a free moment from school or work, I like to spend time walking through the aisles of ethnic markets. The diversity of food is over whelming; which means I have to restrain myself from buying everything in sight. This week a beautiful jar of morrell cherries caught my eye. They were packaged in a large bell shaped jar with a beautiful piece of fabric as a "lid". I knew then I had to have them. Then "destiny" sent a package that contained tiny cherries made from royal icing! My fate was sealed, I was going to bake cupcakes with cherries! The cherries were the perfect combination of tart with hint of sweetness. The chocolate cupcakes were very dark, rich, and moist. I debated about what type of icing I would use, and in the end I decided on a bittersweet ganache. (Ganache=Truffles ...mmm!) As you have guessed, today is my friend Ericka's birthday. She is a wonderful, sweet, compassionate, and "do anything, anywhere for you friend"! Guinness Cupcakes!

Well, this is by far the best Guinness cake recipe I found. All week long, I baked cupcakes with Guinness and most of them were really gross. I'm not sure if this is a recipe I will bake again. The cupcakes were moist, chocolate-y, but right before you swallow, you can't help but to say"...eew, is that beer?" At first bite the Guinness is hardly noticeable, but it does leave a huge "I am Guinness Cupcake!" after taste. Is that good or bad? I'm not sure. I do love strong beers, (the darker the better is my preference) but I'm sure it works in a cupcake. Well, the cupcakes will be shipped off to work were my "taste testers" are. Oh, how I wish the computer came with some sort of scent transmitter. This coffee cake will make your whole kitchen smell like cinnamon, vanilla, and sugar. My Property and Creditor Rights professor is an alumnus of UCLA, and his basketball team is in the final four. In honor of UCLA winning I made him cupcakes. They are traditional "yellow cake" cupcakes. The buttercream is sour cream based and if that is not enough, there is a wedge of dark chocolate in the center of the cupcake! The cupcakes are rich and buttery and the sour cream icing is not too sweet. The best part is biting into the cupcake and discovering chocolate. mmm....decadent.The recipe is from "The Joy of Baking". When you fill the cupcake liners add a wedge of chocolate, and make sure to cover the chocolate with batter. The chocolate does not affect the baking time.The sour cream icing is a 16 ounce box of sifted confectioners sugar, 1/2 stick of butter (soft), 1/2 cup of sour cream, pinch of salt, and 1 teaspoon of vanilla. First cream the butter, then add sour cream, salt, and vanilla. Next add the sugar slowly and beat until well mixed. Make sure to store cup


America's Birthday!

This is just an F.Y.I. post. This week I will be very busy due to the holiday and various birthdays. Last night I made a 100 mini cupcakes for an adorable little girl named America . She's the daughter of my friend Lucy. Last year she had a princess party and I made 2 cakes in the form of princesses. This years theme is a tea party! How fun! The cupcakes above are (from left) chocolate with milk chocolate buttercream, chocolate almond with raspberry buttercream, chocolate with caramel and coconut icing, and banana with cream cheese icing. Bacardi and Coke

This cupcake actually started off as joke between my boyfriend and me. He said it couldn't be done. Ha!It's just a basic chocolate cake recipe that calls for coffee. The recipe I used called for 3/4 cup of warm coffee; I used 1/2 cup of warm coke and 6 tablespoons of rum. Those were the only two changes I made to the recipe. I replaced the milk in the buttercream with rum. I did search for a recipe and found a lot of inspiration; but the deciding factor was that Joe (BF) does not like lime. I opted instead for a faux lime instead of lime juice in the recipe. The cupcakes were tasty, and Joe was shocked when I presented his favorite drink in the form of a cupcake!

On Saturday mornings, I take Tort Law with a great professor and wonderful friends. Last Saturday two of them celebrated their birthday.I asked them separately what type of birthday cake they wanted, and both asked for white, pineapple, and fresh coconut! What are the odds that two people will want the same thing? Maybe it has to do with being born on the same day.The cake was white vanilla with fresh pineapple filling, frosted with an italian buttercream, and covered with fresh coconut. Snickerdoodle Muffins: Satisfaction Guaranteed!

Last week Peabody had a "reader" who sent her an e-mail requesting a refund for muffins he/she had baked from her site. The muffins in question were snickerdoodle muffins, the "reader" stated that the recipe was flawed. Do the above muffins look flawed? I think they look scrumptious! The recipe on Peabody's site is not flawed, I believe the baker is. Many times when recipes do not work it is the baker and not the recipe. Baking is a science, following instructions is crucial for a successful recipe.Now back to muffins, they are by far the BEST muffins I have had in long time. They are moist, buttery, and cinnamon-y. If you like snickerdoodle cookies these muffins will make your knees buckle! I'm looking forward to tomorrow morning when I can have another muffin with coffee for breakfast.

Classic Peanut Butter Cookie

Peanut butter cookies are the ultimate classic cookies. They are easy to make, comforting, and delicious. What more do you need from a cookie?The Other day I really wanted a cookie, I even went to the market, but I just couldn't bring myself to buy "manufactured" cookies. Also, I was going to limit myself to one cookie, so I was kind of hoping to find a cookie as big as my head!During the holidays I give away cookie boxes to family & friends and remembered that everyone had raved about the peanut butter cookies. To the holiday "cookie files" I went!The giant cookie above is result. Even though they are not as big as my head they were still very delicious and comforting.The recipe is from Martha Stewart and of course I changed a couple of things. I used creamy peanut butter instead of chunky and I made the cookies large enough so that only 6 fit on a standard cookie sheet. The recipe makes 48 but, I only 16 giant cookies. Classic !

A while back I found this cupcake recipe and agreed with author that it was darn cute! Then a couple of days later, Cheryl made her own version of this cupcake. That was it. I decided that I had to make this cupcake!The recipe from "Sew Darn Cute" is delicious. I have not had the chance to make Cheryl's version, which I'm sure is divine! This week I organized all the recipes I ever ripped out of magazines or have collected from various websites. As I flipped through binders of recipes, looking for a Mother's Day type of dessert, I came across"Hummingbird Cupcakes". Okay, I know when to ask for help. ....I need help. Will any one out there send me any tips or a fool proof recipe for french almond macaroons (vanilla or chocolate). The last 5 days I have been trying to conquer Martha Stewart's recipe, and have failed miserably. I have baked DOZENS of these ****** cookies to no success. The cookies are cracking on top. "There's More Than Corn In Indiana"

If anyone was born and raised in Illinois, Indiana or Ohio has heard the saying, "...there's more than corn in Indiana". Growing up in Illinois it seemed that corn was Indiana's only claim to fame. My boyfriend who was born and raised in Indiana is a real life "Hoosier". He has always graciously laughed & smiled at all the Indiana jokes my friends have told. He's a real sweet heart! Why? Why...do I always think I will like meringue icings? I never do.May be it's the fluffy marshmallow-y goodness that seduces me.The cake part of the cupcake was incredible.It was tender and moist with mini chocolate chips through out the cake. The cake is a definite keeper, but the meringue icing will never be made again. ( I hope)The taste testers at work loved the cupcake including the icing. The "tasters" felt that the meringue icing complimented the dark rich cupcake.The cake part is too rich for a traditional american buttercream, maybe an italian buttercream?I am definitely going to tinker with Dorie Greenspan's "Devils Food White-Out Cake" for awhile longer.

I know you're thinking ...another flag cake? Well, ...there's just something homey and comforting when a flag cake makes an appearance on Memorial Day or Fourth of July. One of the greatest things about living in California is the abundance of beautiful produce. Sorry for the delay. Vacation was great, but I came home with pneumonia. Yikes! Not a fun time. I am feeling much better than I look (so, I keep telling myself). Listen girls, if you need to drop 10-15 pounds in a week the pneumonia diet is the way to go (just kidding!). Since I was feeling much better and had dropped a couple of pounds, I was thinking it was time for an indulgent cupcake. I had wanted to make banana muffins or bread but, it just didn't satisfy the indulgence factor I was looking for. Banana chocolate chip cupcakes? ....mmm? No. Banana cupcakes with a dark bittersweet ganache topped with a rich cream cheese peanut butter icing? YES! The banana cupcake recipe and the ganache is from Kara's cupcake. Kara's recipe calls for a cream cheese icing but I wanted to make it even richer, so I added peanut butter (1/2 cup).
