So as of lately (because of a few small glitch's that won't be fixed anytime soon) I am not making the money I thought I would be and once again I am working to live and living to work. The whole cycle is rather monotonous…Things don't always go as I plan them in my head, but it is good to have a plan!!!My lease is up in June and I am not so sure I am going to renew it. I have a girlfriend now and that has been a silver lining to my meager existence. Me and the Lord have had quite a few talks about the mess I have put myself in, and gotten out of in the past 8 months…no, I won't be elaborating on it. Let me just say all is fine now, but now I am not so sure this was supposed to be the original plan (for life in general).But now schools are complete, fines are paid, furniture (for the apartment) is the first debt in 8 years that is driving me crazy trying to pay off (since I am not making the money I thought I would be) and I am learning how to use my money even more wis

In August I should be going to work as a Chef...Sometime sooner than that I should be engaged...I will NOT be working in Alabama...I will be attending Reuben's wedding soon (June)...(And probably cooking for it too!!!)There's a lot going on for me, and my girlfriend. Both of us have a lot of changes coming in the next three months and more.I would tell more, or maybe be more specific...but that would spoil all the suspense of making you wait to see what happens, all 2 of you out there that read my blog! hahahaWork is good. Church has been sketchy...sometimes I am working, traveling, or at my parents or sisters church. Sometimes I go for specials or things that my niece and nephews are in... this Sunday they will be getting baptized. So I definitely want to be there for that. That will make about the 3rd week I have missed sunday morning service at my church. No reason to feel bad or guilty...I thought Christians were the church? And I have definitely not been forsaking the fel


Frescata (sandwiches from Wendy's)

Once again I love the play on words to bring about a 'new' and exciting sandwich menu to a dying heavily calorie and fat laden menu, in my opinion that is.Just out of my own curiousity I could not get a translation from frescata from Italian, Spanish, French, or Portuguese. So I broke it down and tried again with Fresca (which literally means fresh in all these languages except French). Then I went with ta and got: your in French (which wouldn't work considering fresca meant nothing), ta meant nothing in Spanish (so that doesn't work), you in Italian, it to you in Portuguese.So now lets see what we get...if we compromise between Italian and Portuguese we can get a phrase that says, 'fresh to you'. Which would work with the rest of the statement, New Frescata Deli Sandwiches.Once again it is now up to you to investigate to see whether it is worth the 'hype' or the Italian/Portuguese interpretation.New food marketing techniques drive me nuts...can you tell!!!

I just don't see why we (as Christians) don't learn from our mistakes...IN MY OPINION - We helped drive Harry Potter to the craze it is today. Loads of people got on TV, Radio, Church, Newspapers, and said how it was not good for their children and such based upon Biblical principles etc, etc, BUT what we fail to realize each time this happens is we drive curiosity, free media attention, and sales of these things and subjects thru the roof because of our outright stance against it.The Da Vinci Code (which by the way is a FICTION book) has drove us to a vehement stance against it, all the while doing the same thing for its sales!!! Driving them thru the roof and creating more curiosity and free media to promote it!!!Do you suppose that if we left it alone people would enjoy it for what it is, FICTION. Not fact, not based on a true story, fiction...Stuff that is made up.How come we never attacked Lord Of The Rings or Narnia (and I don't think we should either, just for the record

Chaperone

Last weekend I enjoyed a great time hanging out and being a chaperone for a youth retreat held at a campground in Guntersville Alabama.My friend Rob (my roommate back in 2001 when I left for Mercy Ships and he got married) and I were talking on the phone one day and he asked me if I would like to attend a youth retreat with him and people from his church along with the youth group. I said sure...sounds like fun.Got to meet a great group of teenagers, leaders, pastors, and musicians.I hope some of these teenagers will get a chance to go out and experience 'missions' like I was able to...it really changes your outlook on life, Christianity, and the world.Rob and I also got a chance to 'catch up' on things and enjoy spending some time together...met a lot of excellent people, and made a few new friends.Ever play War-Ball? Its like the extreme dodgeball...guess you had to be there!!! Oh, did I tell you? No, I didn't cook (except for a very short period of time on the grill Saturda

Just a few news tidbits about former and present life.Mercy Ships has now decided that after the current outreach to Monrovia Liberia that the Anastasis will also (in addition to there other ship Caribbean Mercy) be in Layed-Up mode. What does this mean? It means that both ships are over 50 years old and laws, finances, and deterioration have decided these ships fate, even if temporary. Sad, but true.In a more positive note they will be able to concentrate all focus, funds, and manpower to getting the newly outfitted Africa Mercy launched in 2006. And be helpful in helping the Hurricane victims of Katrina and Rita.Presently I am working and searching for residency/housing. I like my job OK but the hours are a challenge when it comes to having a social life. Its like a combination of second and third shift. But when I am not working everybody else (that I know or hang out with) is working and/or sleeping. Ahhhh, SIGH.I still comb the papers for that 'Dream Job' hoping one day

Without going into a lot of detail (except where I want to explain) I had a little road trip with friends last week to Connecticut via Dayton Ohio, Philadelphia Pennsylvania, thru New York City (on the Bronx side) to Torrington.Along the way I managed to eat Cheesecake Factory (In Philly - fish tacos, and apps.), Anthony's (Authentic Italian - had antipasto, homemade sausage, & gnocchi with Alfredo sauce), and Shieks (sandwiches inc. - 'kitchen sink' grinder or something like a cross between Philly cheese steak and subway sandwich). My friend Pastor Will (Valley Fellowship - my home church), his mom cooked us Korean food for a midnight dinner on our way back (she's full/100% Korean). All of it EXCELLENT! Just wanted you to know that. Another great culinary expedition without even trying...I just went along for the 'ride' and to help out. Life doesn't stop...

Things are moving right along for me...After asking for prayer to get a better job I was offered one the VERY next day.I am going back to work for a beverage company that I was employed with 5 years before coming to Mercy Ships...Yes, you guessed it. I am a BUD man again.I only work about 4 days a week, BC/BS full medical and dental (company pays 60percent). Weekly paycheck...hmmm what else? We get all major holidays off and there is plenty of room for advancement.Now I have time off to get involved with some local ministries and food drives. Not to mention entertaining for friends (nice way of using them for culinary test subjects), church projects, and a few things of my own!Because of all the developments lately I have not renewed my website (so it will be dissappearing in November sometime) also I do not have personal access to internet (that works good) all the time so I will be posting all new developments here. I am now shopping for an apartment for the beginning of next year. Its kind of hard doing that when you don't have a (paying) job reference or lease history for the past 4 1/2 years!My new (old) job is working wonderfully for me and I am expecting a pay raise by December or January.No news in the relationship department, but then of course I am not spending any time worrying about that. I got goals, focus, vision, things that need to be accomplished in the next few months...and even further down the road.Lately I have been reading the book, 'The Bible That Jesus Read' which has been very good for me and understanding Old Testament 'things'. I am about halfway thru with it...it came about that I chose this book after reading another book by the same author that I really enjoyed, 'The Jesus I Never Knew' by Phillip Yancy.At work it has been like dusting off an old bicycle and riding it again only to discover there are a few new additions to it...but thats ok, because it doesn'


Da Vinci Code (part 2)

I was not impressed.The hype was more action than the movie...I fell asleep during part of it (a few head nods here and there). It starts to pick up some, but ends so-so.Of course as always, the book is betterAnd to me, it was not believable/plausible in any form of the truth...at least it did not come across 'strong' in the movie.I don't think anyones current beliefs are in danger of being changed, and that was from a survey from my non-Christian friends.Don't waste your time on Da Vinci Code, SPEND YOUR MOVIE MONEY ON X-MEN III and get way more BANG for the buck!!!! (did I tell you it was based on a true story? NOT!) But it is based on the comic books I used to read.


Another Blah...(at Hardee's)

So I bought this sandwich, phillycheesesteak thickburger...Or something of that nature from Hardee's, another vast disappointment!If you research a press release on it the sandwich was supposed to be 3.99 and the small combo 5.79 but at our participating Hardee's the sandwich itself was 4 something (maybe 4.79) can't remember exactly at this point. It was a nice try but the philly part tasted like stew meat, and the onions and green peppers were extremely overcooked...so my soggy bun sandwich tasted like burger with stew on it and was just as messy.AND at almost 5 dollars for just the sandwich (tax included) I could almost get 2 6-inch subway sandwich specials. Almost. Or a really good Quizno sandwich.Nice try on creativity...but add the 'topping' to your soup menu.

Work, life, Christmas...

[ 2 new additions to the family this year, wife Stephanie & nephew VJ - early Christmas presents are the best! ]It has been a fast forward moment since being married last month...Time seems to be slipping away quite quickly.It has been a good thing though. I have been working several venues...We keep things running here at The Oasis dining room at Mercy Ships IOC and have several catering jobs as Exclusively Yours Catering. Also being employed as contract work/consulting Chefs. I recently completed my food safety manager training course to once again be updated and certified in food safety.Stephanie recently had a birthday and I believe I did a good job as new husband helping her enjoy and celebrate her first year being married! We both have a lot to talk about and discuss when it comes to relaxing a bit after work. We are both very different people, but at the same time we both have a lot of the same food and decorative tastes. (such as sushi and the colors and materials we like o

Supposedly I am on a 'new version' of my same blogger...new and improved. Ha, we'll see. I wonder if you readers will notice at all?Exclusively Yours Catering is getting a slow start in January, but that's to be expected...everyone is partied out from Christmas and New Years! On the other hand we have events scheduled as far out as June, with a bid in for a 2 day event in April for an Engineers Conference of sorts.In March we will once again probably cater the food for the Tyler AIDS 'Matisse March Madness' fund raiser. We have done several things with Tyler AIDS Service (for free of course) we get food donations from our purveyors and then volunteer our time. Last October we did 'Dancing With The Tyler Stars' to help Tyler AIDS Service to raise funds. Missing in Action,One small but friendly lizard, some scaring (scar - ing not scare - ing)on his rib cage...Last seen in the kitchen office at the IOC dining room hanging out on one of the blades of the blinds by the airconditioner window unit.I don't really have a good digital camera and about the time I started thinking about getting a picture to show you of our office mascot (purely by coincidence) he has not been seen. A tragedy really...I feel he may not be coming back, or do they hibernate or something?Before Billy left the kitchen this little guy (lizard) started hanging out on the blinds clinging to a blade or blind (singular). We just left him alone, he came and went (thru a crack beside the window unit AC). So I know its been awhile...Let me just sum up and review. Eating places in downtown Dallas are plenty...And the Green Papaya (Vietnamese) is very good. Maybe if I have time I will come back to that with more info, maybe not?Helping Gary run the kitchen here at the Mercy Ships International Operations Center has been good and they keep us busy with everyday meals, events, functions, and really anything else they can think of to incorporate food!Catering has been good and we have reinvested a lot of the money in tweaking/fixing problems that occur or getting prepared for them in the future. So I suppose I missed a whole month of not blogging at all...hmmm. Ok, I guess I could blog a little somethin' to get you by on. (for all 5 or more who check and read my blog religiously, HA!)Last month I wrapped up my job in Alabama, and I am now living and working in Texas. But before I made it here I met Stephanie in Florida for a few days with the future in-laws. Went pretty good I think. Also snuck in a day at Disney World and made a simple dinner for us all one night. Made homemade focaccia bread (but with cranberries/craisins and almonds), roasted cumin and celery seed chicken salad, and another 'salad' with jicama, pear, apple, scallions, basil and lime juice in it. I originally wanted to use fresh mint, but it looked horrible at the store! But Stephanies mom grew fresh Basil close to the house.In the two weeks I have been in the kitchen I have already carved a couple of watermelons and cooked quite a few meals and worked on a few function events.Stephanie seems to be

Stephanie and I got a chance to go home (or should I say, my home) and visit. We had a great time catching up with my mom & dad, a few friends, sisters family (Raf and of course niece and nephews...VJ being the 'newest' addition as I stated in an earlier blog) and go to church on Sunday to see all the home folks 'kickin' as usual.We are really think ing a lot about working another year and praying about doing 'missions' again on a full-time basis (so get your wallet and purse ready, pencil us in the budget...hahaha, no seriously).Africa or Central America sounds good...we have both spent time working in these areas (mostly Central America, Caribbean, & West Africa for me). Stephanie really has a desire to use her medical skills going out to the villages with different kinds of programs and services...and of course I am always available for even the most basic of meals to be cooked, not to mention that I have a few skills in doing/making concrete the shovel&bucket method, diggi


Cheap Canned Biscuit Desserts

Now you don't have to use this brand, actually you probably have a comparable generic brand at your favorite grocery store...but these are the type canned biscuits I am using, jumbo flaky. But regular will do as well.After opening the biscuits just smoosh one flat and fill it with a chunk of chocolate, some kind of jam, marshmallows w/graham crackers and chocolate, junks of your favorite candy bar, etc. I think you get the picture, then fold over filling and use a fork the crimp the ends down making the pregnant folded over biscuit look like a small empanada.Bake at 350F till it looks golden brown and I am pretty sure the 'filling' will be good and melted/heated. YUM! Let it cool down a little...or follow the package instructions for the biscuits.Yeah baby! MMmm, but lets think about savory for awhile...how about a few peperoni's, mozzarella cheese, lil' oregano...now that would be delicious too!This concludes your cheap canned biscuit dessert. Perspective

Tonight as I watch people eat the Pizza Buffet that we put out (all fresh/scratch made) and listen to the different comments about what they (the eaters) like, what they don't like, it just reminds me of the situation we had when I first started traveling and doing missions. Not that tonight was anything like the story I am going to tell you, just that it brings my perspective of 'more than enough to satisfy' back to a reality of the 'We always getting what we want, and fast!' mentality here in present day society.In 2001 while I was working on a ship (in the Galley/Kitchen) docked in Honduras we (the food service department) wanted to contribute to the local community. We found a Pastor that wanted to take all our leftover food and distribute it to the local homes for senior citizens (that lived in church supported group homes because they had no famliy or money), homeless, and orphanages...and we thought this was a great opportunity to make a difference in our own little way.Now

From time to time as Gary and I have time to do some experimentation in the kitchen of 'up-n-coming' things it suddenly hit us today that maybe we should get small clippets of it done...you know like mini cooking shows with a level of comedy to them...not that we have any great jokes to tell, but we do have a lot of neet and funny tricks we do when cooking.We could actually do probably 5 or more small episodes alone on different ways to make appetizers & desserts using refrigerated biscuits with an electric frying pan and a small toaster oven.And of course it would probably be funny just seeing us doing a small 'home movie' of anything.Then we thought we might move on to sunny-side up eggs & omellettes microwave style. Hot dogs on an Iron (laundry iron).Yeah we got a bunch of crazy stuff...can't give all our tricks away. We could probably market it to the college kid crowd on YouTube or ipodcasts, of course it would be free...but you can get famous almost anywhere now-a-days!Drop
