I'm posting 3 kinds of cuchinta, (1) simple cuchinta, (2) atchuete cuchinta, (3)brown sugar cuchinta. All recipes came from my mom which she got from my grandmother. :)SIMPLE CUCHINTAIngredients:1 1/2 cups water3/4 cup sugar1 cup rice flour1 tsp lye solution (check procedure for homemade lye solution at the bottom of this post..)Procedure:Combine sugar, lye and water and bring to boil;Cool. Ingredients: (makes 3 dozens large cookies) 1 cup soft butter (250 ml) 3 cups brown sugar, packed (750 ml) 2 eggs 1 tsp vanilla (5 ml) 2 cups sifted all-purpose flour (500 ml) 1 tsp baking powder (5 ml) 1/2 tsp baking soda (2 ml) 1/2 tsp salt (2 ml) 1 cup flaked coconut (250 ml) 2 cups quick cooking rolled oats (500 ml) Procedure: Heat oven to 375 F (190 C). Ingredients:1 sponge cake, 9 inches in diameter ( homemade or storebought)2 large egg whites1/4 cup sugarpinch of salt8 oz. (250g) cream cheese at room temperature1/3 cup strong espresso coffee5 oz. (150g) dark chocolate, coarsely gratedProcedure:Slice the sponge cake horizontally to make 3 layersPut the egg whites in a medium bowl with 1 1/2 tablespoon of sugar and the salt.Place the bowl in a pan filled with hot water.Beat the egg whites until very stiff. Remove from the pan.Beat the cream cheese in a large bowl with the remaining sugar.Fold in the egg whites.Brush each layer of sponge cake with coffee.Put a layer of cake on a serving dish. I just got back from Bicol and managed to "coerce" hehe my cousin, Emee to share her recipe for taldis (molido). Taldis is a Bicol special made from pilinuts..Ingredients:4 cups ground pilinuts (boil it first, peel and grind..)1 cup mashed camote (sweet potato)5 cups white or washed sugar1 can condensed milk1 tbsp lemon or calamansi rindYou'll need:* banana leaves* rolling pinProcedure:Mix all ingredients together in a wide pan and cook over low fire.Stir continuously so it doesn't stick to the pan;Check once in a while with a banana leaf. If mixture doesn't stick anymore and is heavy already.Once its not sticking anymore, remove immediately from fire.Pour into wooden surface, roll with rolling pin to desired thickness.Cut in desired sizes.
