Samurai Sushi - Tøyen, Oslo 2007-09-26 03:00:25 A new sushi bar opened in Tøyen about a month ago (August 2007). I have been a bit reluctant to go there, because I really wanted it to be good, hoped it at least would be ok, but expected it to be mediocre or plain out bad. It was mediocre.
Restaurants have been opening and closing in this venue with all kinds of different food as long as we have lived here. This time sushi was going on the menu. Not because the ones who run the restaurant are trained sushi chefs from Japan looking to open their perfect sushi bar and serve you a both visually and palatable meal, but more because they are in the “opening another restaurant business” and sushi is the type of food you can charge more for than any other asian type (fast) food.

Sushi roll competition 2007-09-25 10:00:46
They are competing about who is first to finish eating a sushi roll that is 6m (20 feet) long? It is filled with tuna, mystery fish and a stretch has only pure wasabi. Wow! Impressive. And kind of disgusting too. I feel like they won’t be having more sushi rolls in a while. I would not want to cure my sushi hang-up that way.

I am in the sushi cake mood these days. Gotten to be a visual sweet tooth. The guys at the Evil Mad Scientist Lab made their dessert to look like sushi and a lot of it too! Impressive!
To make this dessert sushi they used a simple white cake in the bottom, sliced to look like little cakes of rice. For wasabi, they used hard icing with a little bit of green food color added, and the the seaweed (nori) wrapper is made of something called “Fruit by the foot,”. The toppings include thin sliced twizzlers, miniature jawbreakers (as roe), and Swedish Fish (gummy fish?). From their description of the process:

Now this is some of the most inventive use of photography I have seen in a long time. This girl (not sure, but the style tells me it is a girl…) adds texts and graphics on top of the photographs and tells the story that way. Here is the sad story of the korean maki sushi killing itself. The desperate pleads of it’s sushi friend is not helping… You don’t really need a translation. We understand what the Korean is saying without really reading it. Very funny!
So sad when young food goes to waste…

Test of (sushi) knives 2007-10-01 14:10:06
The sushi chef Masayoshi “Masa” Takayama was asked by the magazine New York Magazine last year (2006) to evaluate the best of the Santoku knives. Well, as a sushi chef, we expect him to be into good knives - and what the test shows is that price and quality is not necessary linked.
He tested ten knives straight from the box (no additional sharpening allowed) to chop onions, slicing boneless chicken and mincing parsley. He also tried slicing parchment paper, which is apparently his way of testing his favorite single-bevel Yanagi knife (a knife for everyday slicing, the blade is perfect for slicing long pieces of fish) after its daily session on the grindstone. He judged each of the knives for their balance, sharpness, cutting ability, and how long it kept its edge. They are ranked below in order of preference. Here is the list:

This game was quite fun! You are a sushi chef again, and you are of course suppose to please your guests. They are demanding and you need to do a good job and not produce sushi “crap”. Like I kept on doing… So look in the recipe book if you are uncertain, and go be the Itamae of the evening!

Wasabi Pea Review 2007-10-04 08:40:15
Are you a wasabi pea addict? Can’t stop eating them? Can’t stop thinking about them? Me too! At least before this test… I wanted to find out which brand that had the best wasabi peas out there. I did not even know that there so many before I went to LA and visited a proper Japanese supermarket I found lots of different ones. Then I just knew I had to “sacrifice myself” in the name of science and do a test run of them all. It would be a dirty job, but somebody’s gotta to do it, right? (lucky this was not in Japan I guess…)
So - here is my verdict. As with the food from some sushi bars too; not all of them are worth eating! If someone bites into one of the bad ones the first time and generalizes based on that, then they are missing out on the good wasabi pea experience. Here are some pointers. I have put them in my preferred order.

Catch your own sushi 2007-10-17 15:40:26
At the restaurant Zauo in Kagawa-ken, Shikoku Japan, you actually have to first catch your sushi before getting to eat it! Parts of the restaurant is shaped like a boat from where you stand and try to to catch your dinner. In the water there are 10 different kinds of fish - from lobsters to mackerel.
