imakesushi.com is a website that has some nice images, general sushi information together with the typical how to make sushi at home. How to prepare sashimi

Making sashimi too is something I think is quite scary to do, because it is so important that the fish is fresh from the store, properly prepared and also properly presented! This video was quite educational in that context. Great initial tutorial to making sashimi at home! Remember not to get bluefin tuna, though!

Guest Writer: Phil Haack Do you remember that episode of the Simpsons (number 24 to be exact) where Homer takes his family to a Japanese restaurant and orders the blowfish (fugu)? Yeah, me too. My father-in-law took us out to a very traditional Japanese dinner as a celebration of a friends impending wedding. Here’s a picture of our room and Akumi listening attentively as our server tells her the menu (or something like that. I couldn’t understand as it sounded like a bunch of jibberish to me. I know - these are old pictures, but I still find them cute. He needed to go on here. But when I started looking around, Nemo is a popular figure to poka at. Not only is he put into makis, he also have lots of videos on YouTube where they renamed the movie into “Finding Sushi ”. I did not really think they were that funny though. (more…)

Hear, hear! “Tuna are now like floating goldmines out in the ocean,” says Brian MacKenzie of the Technical University of Denmark. This article tells the interesting story of the Bluefin Tuna. The way it has been perceived and praised have completely changed over the years. The Bluefin tuna used to teem in the summers in the North Sea and the Norwegian Sea a century ago as part of migrations that could take them 16 000km a year. Sushi chef - Masatoshi “Gari” Sugio

Chef Masatoshi Sugio has developed a sort of cult around the preciously presented, unusually sauced sushi at his tiny, out-of-the-way Sushi of Gari on far East 78th Street, NY. He opened a bigger place at Columbus and 78th Street, to make the commute easier for such devotees as Yoko Ono and Kevin Kline… (ah - more sushi celebrities!). He said the main barrier to expansion was not real estate, but finding someone to make sushi his way. “I had to train the new chef for many, many years to understand my style”. The Nobu chain was a result of De Niro meeting Nobuyuki Matsuhisa at the chef’s first U.S. restaurant in Los Angeles. “I thought the place was great. I told him, ‘If you ever want to open a restaurant in New York, let me know,”‘ De Niro said. “A year or two later, he called me, said ‘I’m interested.”‘ Nobu started as a business partnership in 1994 between De Niro, Matsuhisa, Richie Notar and Hollywood producer Meir Teper. The first restaurant opened in New York. The chain now has locations across the world, from Italy to the Bahamas. They just opened a restaurant in Melbourne, Australia (August 2007). No - they are not your next lunch. They’re USB memory sticks. Some of them have up to 1 GB of memory and costs around $100 on eBay and other similar websites. There are probably for sale on some Japanese but I could not find it. They are cool, though. I would want the futomaki one. More pictures: (more…)

Sushi Chef - Sotohiro Kosugi

Sotohiro Kosugi won Food & Wine Magazine’s annual Best New Chef award back in 1997, when he was working at Soto Japanese Restaurant, Atlanta (now closed). For 11 years, Kosugi, a third-generation sushi chef, made sushi in the South, developing such an impressive reputation in Atlanta that he decided to try his hand up in New York. Kosugi left Atlanta to open Soto in Manhattan’s West Village in May 2007. He serves as sushi chef, serving dishes like Japanese bream with ginger-scallion oil and Long Island fluke with lime, sea salt and yuzu zest from the 12-seat sushi bar, while his wife, Maho, oversees the kitchen. Kosugi is famous for his “expansive, haute-Japanese cuisine”. Whatever that means..? Sounds interesting. Will have to go there once to try him (them) out. I set a goal of trying out all the sushi bars we had in my city. We are talking Oslo here, a small city of half a million people. It means you have to go to about 30-40 places, and I thought that was quite a lot. Then I read about this guy. I don’t know if you have tried this feature yet, Google Maps. You probably have - it’s nothing new - but I still think it is a really nice feature! In Google Maps you can search for whatever you are looking for and the search result is then linked to a map. What I did was search for sushi, oslo, norway - and then I get all the sushi restaurants that are registered in their systems tagged with sushi.
