Pistolet with 3 Cheeses

Cut a brown bake-off pistolet open and add 1 dessertspoon pesto, slices cheese, slices brie and some mozzarella on it. At last you add some sundried tomatoes on top. Place the pistolets in a preheated oven 200C (fan) for about 6 to 8 minutes. Enjoy!


Pita the Italian way

Open a bake-off pita pocket and add ham, cheese, a dessertspoon pesto and a bit finely chopped onion and some finely chopped sundried tomato. Bake the pita pockets in about 6 to 8 minutes in a preheated oven at 200C (fan). Enjoy!

Chocolate Mousse

Whisk (with a mixer) 3 eggwhites with a pinch of salt stiff in a very clean bowl. Melt 200g plain chocolate au-bain marie. Whisk 3 eggyolks and 60g caster sugar until it has a smooth mixture. Whisk 250ml whipcream fluffy. Add the eggyolksmixture to the melted chocolate. Mix this with the whipcream (just with the mixer it goes very fast). Then spoon this gently through the stiff eggwhites. Put this mixture into nice glasses or bowls, cover it with clingfilm and put it in the fridge for about 3 hours. Finally you van enjoy your chocolate mousse!

Banana Icecream

Puree 300g banana’s in a blender or food processor with 1 eggyolk and 130g caster sugar. Stir the bananapuree into 200ml milk and 200ml whipcream. Chill the mixture in the fridge. Turn the Icecream maker on and fill it with the bananamixture. Follow the instructions of the icecream maker and leave it on for about 30 minutes. If the mixture is still to soft put it in a well seald plastic container and put it in the freezer for another 30 minutes. Than you can really enjoy your selfmade icecream!


Ratatouille Cake

This is a cake for dinner. Fry in hot oil 1 chopped onion, 1/2 diced red pepper, 1/2 diced yellow pepper and 1 diced zucchini. Stirfry for about 2 minutes, lower the heat and add 1 bay leave and 2 twigs thyme. Cover the lid and let it simmer for about 10 minutes. Meanwhile make a batter with the following ingredients: 50 ml oil, 50 ml white wine, 100g selfraising flour, 3 eggs, salt, 1 tablespoon sweet paprika powder and 150g grated cheese. Make it a smooth batter. Then take the bay leave and thyme twigs out of the ratatouille and stir the ratatouille into the batter. Spoon the batter in a caketin and bake it in a preheated oven at 150C (fan) for about 45 minutes. Let it cool a little and make nice slices of the cake. Enjoy!

Pasta with Bacon, Mushrooms and Tomato

Cook the pasta following the pack instructions. Fry in a hot wok (or a in a non-stick fryingpan) 150g diced bacon until golden. Get them out of the pan and set aside. Fry in the remaining fat 1 finely chopped onion with 1 finely chopped garlic clove until the onion is soft. Then add 200g minced meat and fry it until brown. Add 250 sliced chesnut mushrooms and stirfry until the chesnutt mushroom are done. Add a cann chopped tomatoes (400ml) and some tomatoketchup. Bring it to the boil, lower the heat and let it simmer for half an hour. At last you add the diced bacon and a tablespoon thyme and season de sauce. Serve the dish with a fresh baselleaf on top. Enjoy!

Pollo Pizzaiola

Fry 2 chickenbreast until they are golden at the outside. Than grill the chickenbreast in the preheated oven (180C Fan) for about 20 minutes, the last 5 minutes you cover the chickenbreast with some mozzarella. While the chickenbreast are in the oven you fry a onion (sliced in rings) until they are soft and golden. Add a garlic clove (finely chopped), 1/2 red pepper, 1/2 yellow pepper (both chopped) and 150g sliced mushrooms. Stirfry this for about five minutes. Add 2 chopped tomatoes, 1 little can tomato puree, about 50ml white wine, 125ml vegetable stock and 1 tablespoon fresh chopped tomatoes. Bring it to the boil, lower the heat and simmer it for another five minutes. Serve the grilled chickenbreast with the sauce. Enjoy!


Vegetarian Stroganoff

This dish needs some vodka, unfortunately I haven’t got any vodka in my cupboard, but if you have vodka you add about 2 tablespoons into this dish at almost the same time as you add in the tomato puree. Fry in hot oil 2 finely chopped sjalots until they are soft. Add 400g sliced mushrooms in it and fry it until is slightly brown. Add 1 tablespoon sweet paprika powder and 1 finely chopped garlic clove, fry this a short time. Than add about 200ml vegetable stock and 2 tablespoons tomato puree. Bring it to boiling point and then lower the heat and let it simmer for about 10 minutes. Add 100ml double cream and 1 teaspoon tabasco. Let it simmer for another 5 minutes. Add some chopped parsley to the dish and serve it with fried potatoes or rice. Enjoy!

Egg-Noodles with Mushrooms and Sugar Snaps

Cook the egg-noodles following the packinstructions, drain and set aside. Heat oil and 1 tablespoon sesame oil and fry 3 chopped spring onions  and a chopped garlic clove. When the spring onion is soft add 200g sliced mushrooms, 200g sugarsnaps and 1 tablespoon gingerpowder. Stirfry it for about 4 minutes. Meanwhile make the sauce by mixing the following ingredients: 300ml vegetable stock, 3 tablespoons soy sauce, 2 tablespoons rice vinegar, 1 tablespoon honey and 1 tablespoon tomato puree, stir it well and add it to the vegetables. Bring it to the boil and then lower the heat and let it simmer for about 4 minutes. Add the egg-noodles, just heat it a little more and add some sesameseed and the dish is ready. Enjoy!

Chicken Breast in Puff Pastry

Make a marinade with 2 tablespoons olive oil, 1 tablespoons lemon juice and leaves of 2 twigs of thyme. Cut open the chicken breast and fill it with 1/2 a grilled red pepper. Fry the chicken breast brown on both sides. Roll out 2 puff pastry sheets for each chicken breast. Place the chicken breast on the puff pastry sheets. Fill the chicken breast with some slices brie. Wrap the puff pastry over the chicken breast. Lightly coat the puff pastry with a whisked egg. Scatter some grated cheese over it. Place the chicken breast on a baking tray and put it in the preheated oven at 200C (fan) for about 20 minutes. Serve with a salad and fried potatoes. Enjoy!

Mini Peach Pie’s

Line in 6 mini flan pans with a sheet puff pastry each. Peel, core and slice some peaches. Add the peaches in the flan pans. Scatter some pine nuts over it and pour a dessert spoon honey over each. Place the flan pans in the preheated oven at 180C (fan) for about 25 minutes. Cool the mini peach pie’s befor getting it out of the flan pans. Enjoy!

Stuffed Portobello and Oven Baked Chicken breast

Cut a chicken breast open so you can fill it. Add some pesto, some slices tomato, some mozzarella and some grated cheese. Season the chicken breast and cover it with slices bacon. Grill them in a preheated oven at 200C for at least 20 minutes. Cook the portobello’s for about 3 minutes in boiling water, so they soften a little. Put on every portobello a slice tomato and sparkle some balsamic vinegar over it. Add some slices chorizo and mozzarella on top. Season it with some pepper and place the portobello’s in a preheated oven (200C Fan) for about 10 minutes. Serve for example potatoes or a salad with it. Enjoy!

Macaroni al Forno

Cook the macaroni (or another short pasta) following the pack instructions. Chop 1 onion, 400g tomatoes, 3 sundried tomatoes, a handful basil and finely chop 1 garlic clove. Transfer to a a food processor, add some salt and pepper and turn the food processor it on for about 30 seconds. Then add 50g grated cheese, 1 table spoon red wine vinegar, 100ml cream and 1 tablespoon grated nutmeg. Again turn the food processor on, now for about 1 minute. Spoon the tomato mixture into a baking dish. Drain the macaroni (or othe short pasta) and stir it into the tomato mixture. Scatter some grated cheese, bread crumbles and some thyme leaves on top. To make it crispy pour a little olive oul over it. Place the ovenproof dish into a preheated oven (170C - fan) for about 20 minutes. Enjoy!

Chocolate Chip Cookies

Cream 125g sugar with 175g brown sugar. Beat until fluffy. Add 1 teaspoon vanilla extract, 1 tablespoon milk and 1 egg and beat it well. Add 175g plain flour and 1 teaspoon baking powder and beat to combine. Break 200g plain chocolate in little chunks and spoon it into the batter. Line a tray with baking paper and drop 1 tablespoon batter on the tray. Leave about 3 cm space between the cookies. Place the tray into a preheated oven 160C (fan) for about 20 minutes. Get the cookies out of the oven and place the cookies on a wire rack to cool. Enjoy!

Chocolate Pear Cake

Cream 4 eggs, 250g butter, 150g brown sugar and 100g caster sugar until smooth. Add 250g selfraising flour and 50g cocoa powder and mix it until you have a smooth batter. Break 75g plain chocolate in little pieces and peel, core and chop 2 pears. Spoon it through the batter. Spoon the batter in a greased and floured baking tin. Place the baking tin in a preheated oven at 160C (Fan) for about 55 minutes. Cool the cake a bit and get it out of the baking tin. Enjoy!

Lemon Cake

Cream 250g butter with 200g sugar and the zest of 1 lemon until it’s smooth. Gradually add 3 eggs and beat to combine. Add 90g plain flour and 210 selfraising flour. Make it a smooth batter and at last mix the juice of 1 lemon into the batter. Pour the batter in a greased and floured cake tin and place the cake tin in a preheatet oven at 160C (fan) for about 50 minutes. Then cool down the cake a bit before getting it out of the cake tin. Creamy Pasta Pepperonata

Heat oil in a frying pan and fry 2 chopped green peppers with seasoning shortly. Lower the heat, cover the lid and simmer for 15 minutes. Add 1 chopped onion, cover the lid again and simmer for about 20 minutes. Add 1 finely chopped garlic clove, 2 teaspoon balsamic vinegar, 125 ml creme fraiche and 50g grated cheese. Melt the creme fraiche and grated cheese. Meanwhile cook pasta following the pack instructions. Drain the pasta and serve it with the pepperonata. Enjoy!

Onion Soup

Fry in a large pan with hot oil 150g diced bacon until brown. Add 3 chopped onions and 1/2 a teaspoon sambal (hot Indonesian sauce). Fry the onions until golden and soft. Add 1 liter vegetable stock. Bring it to boil, lower the heat and cover the lid. Let it simmer for about 1 hour.


Tomato Onion Soup

Fry in a big frying pan with some oil 4 chopped onions with 1 finely chopped garlic clove until the onions are soft. Add 250ml tomato passata, 125g cherrytomatoes (halved) and some thyme. Heat it shortly. Add 1 1/2 liter vegetable stock and bring it all to boil. Lower the heat and cover the lid. Let it simmer for about 30 minutes. Scatter some grated cheese over the soup. Enjoy!

Gnocchi with Mushrooms

Cook ready-made gnocchi according to packet instructions, drain it and keep it warm. Fry in hot oil 250g chesnut mushrooms (chopped in halves) for about 5 minutes. Add the gnocchi and 5 chopped sundried tomatoes. Stirfry it for a minute or 2. Pour some cream into it and bring it to boiling point. Season it, and just heat it a little more. Little Tomato Pies

For 4 tomato pies, you need 4 sheets puff pastry. Put the puff pastry sheets into little greased and floured oven bowls. Wash 250g cherry tomatoes and detach the stem. Cut a shallow x at the bottom of each cherry tomato. Put the cherry tomatoes into the little oven bowls bottom up. Pour 1 dessertspoon honey over each oven bowl filled with the cherry tomatoes. Scatter some pine nuts and fresh thyme leaves over it and place the oven bowls into a preheated oven at 180C. Leave it in the oven for about 20 minutes. Serve it with a salade. Enjoy!

Marinated Pork Loins with Olives

Make a marinade by putting following ingredients into a bowl: 3 tablespoons olive oil, 3 tablespoons balsamico vinegar, 1 teaspoon mustard and 2 finely chopped garlic cloves. Stir well. Season the pork loins and marinate them for at least 5 minutes. Chop green olives (as much as you want) in halves. Heat a grill pan and grill the marinated pork loins at both sides. Curry with Peas and Tomatoes

Cook the basmati rice following the pack instructions, Heat some oil in a wok and fry 1 tablespoon mustard seeds in it. When the mustard seeds are beginning to pop add 1 onion (chopped) together with different kinds of spices: 1 tablespoon ginger powder, 1 tablespoon turmaric, 1 tablespoon cumin and 1/2 teaspoon sambal (hot indonisian sauce). Tortellini with Rocket Lettuce Salad

Cook 250g tortellini (choose a filling you want) following the pack instructions. Toast 30g pine nuts in a dry frying pan. Finely chop 6 sundried tomatoes. Zeeuwse Bolussen (Sticky Cinnamon Buns)

There’s not a good translation for the Zeeuwse Bolus, only sticky cinnamon bun comes close. Pour some warm water in a little bowl and solve 50g butter in it. It becomes a smooth mixture. Add in a big bowl 500g white bread mix and knead the butter and 300ml warm water into it. Make it a silky, smooth and elastic dough. Let the dough rise in a warm place. Meanwhile make the sugarmixture. Mix 250g brown sugar with 1 teaspoon cinnamon and 1 teaspoon lemon juice. After the dough has risen, divide the dough in 12 pieces and let it rise for another 30 minutes in a warm place in a bowl covered with cling film. Then roll the dough out to rectangle about 1 cm thick. Dip the rectangle rolls through the sugar cinnamon mixture. Arrange the rectangle rolls into a ‘bolus’. Crispy Chicken Salad

Just a easy salad today. Fry 2 crispy chicken breast brown in some hot butter. You can make crispy chicken breast yourself by dipping the chicken breast in 1 beaten egg, and then dipping in cornflakes. But I did it the easy way and bought them in the supermarket. Cool down the crispy chicken breast and chop the crispy chicken breast in little pieces. Finely slice 1 grilled red pepper. Add 300g mixed lettuce into a bowl and add the crispy chicken breast pieces and the red pepper. Toss it well. Serve with a saladdressing and oven chips. Enjoy!

Creamy Fennel with Pasta

Cook pasta according to pack instructions. Fry in a frying pan 75g sliced pancetta until crispy. Add 1 finely chopped onion, 1 chopped fennel and 1 finely chopped garlic clove. Stirfry this a few minutes on high heat. Add 100 ml vegetable stock, about 50 ml white wine and 250ml cream. Season it. Cold Wraps

Sometimes you have to combine some ingredients to make something delicious. In the fridge I had some left-over sundried tomatoes, pesto and floured tortillas, and with some ham and iceberg lettuce (also known as crisphead lettuce) it became a delicious lunchmeal. Warm the floured tortillas following the pack instructions, for example in the microwave. Then spread pesto over the floured tortillas. Add a slice ham on it and then add the iceberg lettuce and the finely chopped sundried tomatoes on top. Roll up the floured tortilla and serve. If you cut this cold wraps in pieces you can serve them as a little snack. Enjoy!


Chinese Roasted Pork Tenderloin with Nasi Goreng

For 2 Pork tenderloins you make the following marinade. Add 60ml honey, 60 ml hoisin sauce, 1 tablespoon rice wine and 1/2 teaspoon Chinese five-spice powder in a bowl. Stir well and put the pork tenderloins in the marinade. Cover the bowl before you put it in the fridge. You have to marinate it at least 3 hours, or prefarably let it in the fridge for a night. Preheat the oven at 200C (fan) and roast the pork tenderloins for about 40 minutes. Slice the roasted pork tenderloins. With it we had a nasi goreng, different then before, but it just what you have in the fridge. Prefarably you make nasi goreng with left-over rice. Fry 1 onion until soft, add 200g diced ham and 1/2 carrot sliced. Stirfry about 5 minutes. Then add the left-over rice and just heat it a little more. Serve the Chinese roasted pork tenderloins with the nasi goreng. Enjoy!
