Defrost 100g spinach. Flatten 3 chicken breast/ Place on each chicken breast 3 slices bacon, some tablespoons spinach. Then to taste add some herbs: sage, rosemary, thyme and basil. Scatter some mozzarella over it and fold the chicken breast over the filling. Place the chicken breast in a lightly greased baking dish. Scatter some mozzarella over it and place the baking dish in a preheated oven at 200c (fan) for about 25 to 30 minutes. Serve with potatoes and a salad. Enjoy!

Because we didn’t like the apple tarte tatin, the caramel was bitter, we baked a birthday cake. Make a batter by mixing 250g sugar with 250g butter. Mix well and gradually add 4 eggs to the batter. Add 250g plain flour. Mix to a nice batter and then fold in 2 sliced bananas. Put the batter in a greased and floured cake tin. Place the cake tin in a preheated oven at 160c (Fan) for about 75 minutes. Enjoy!

A birthday cake for myself. Melt 100g butter in a frying pan. Add 100g caster sugar, 2 cinnamon sticks and 1 tablespoon ground cardemom. Let it bubble and let the sugar caramalize. When the sugar has a nice toffe colour add 3 or 4 peeled, cored and sliced apples (thick slices!), the bottom of the pan should be covered. Let the apple caramalize. It takes about 10 minutes. Get the frying pan of the heat and cover the apples with puff pastry. Place the frying pan in a preheated oven at 180C (fan) for about 20 to 30 minutes. Let the Tarte Tatin cool down in the pan for about 10 minutes. And then get it out by placing a big dish over the pan and turn the pan over. Because we used the wrong apples, it became a sort of applesauce, that why we placed some slices apple over it. Before you eat get the cinnamon sticks out of the tarte tartin. Enjoy!

Make a sauce with 200ml creme fraiche, 1 egg and 30g grated mature cheese. Stir well. Dress a baking sheet with pizza dough. Spread 1/2 of the sauce over the pizza dough. Spread the spinach and red onions over the pizza and the pour the other halve of the sauce over the spinach pizza. Scatter some grated mature cheese over it. Place the baking sheet in a preheated oven at 200c (fan) for about 15 minutes. Enjoy!

Put 300g plain flour and 100g caster sugar in a bowl. Add 200g diced butter, 3 tablespoons beaten egg and a pinch of salt. Knead until you have a good dough. Dress a springform with a part of the dough (you need a little dough for the raster). Place the springform and the rest of the dough in a cool place. Peel, core and dice 1000g apples. Mix the diced apples with 100g raisins, 50g almonds, 1 tablespoon lemon juice and 75g sugar. Transfer the apple mixture into the springform. Make a raster over the apple filling. Spread some beaten egg over the dough raster. Place the springform in a preheated oven at 175C for about 1 1/2 hour so the dough is golden brown and the apple filling done. Cool down the apple pie in the springform. Nice with whipped cream! Enjoy!

Cook in hot butter 2 chopped onions until soft. Add 600g diced braised beef and cook until the beef is brown. Add 1 tin diced tomatoes and 2 finely chopped garlic cloves. Add 3 beef stock cubes and pour in a splash of water. Bring shortly to boil, lower the heat and cover the lid. Let it simmer for about 2 hours. Then get the lid of the pan and cook on middle heat for about 15 minutes so the sauce thickens a bit. Done! Enjoy!

Add 1 finely chopped garlic clove and thyme to taste. Cook shortly. Add 1 can diced tomatoes (400ml), 1 tablespoon tomato puree and 100 ml cream. Bring shortly to boil. Season it. Lower the heat and let it simmer for a while. At the end add some chives to taste to the tomato sauce. Drain the tagliatelle and also drain the broccoli and cauliflower florets. Dress the tagliatelle on your plate, then the broccoli and cauliflowers florets and then the tomato sauce. If you like it scatter some grated cheese over it. Enjoy!

Stir fry for about 5 minutes. Roast the sesame seeds golden brown. Add with the chicken mixture 3 tablespoons balsamic vinegar and 4 tablespoon soy sauce. Just heat a bit more and add at the very last moment the roasted sesame seeds and finely chopped coriander. Serve with the rice! Enjoy!

Maybe really Dutch, I don’t know… But I really like it with this kind of weather. Cook about 750g peeled potatoes for about 20 minutes or until done in boiling water with a pinch of salt. After 5 minutes of cooking place the smoked sausage on top of the potatoes to heat the sausage. Melt in a pan a knob of butter and slowly heat the 450g deep frosted curly cabbage on medium heat. Drain the potatoes and add the curly cabbage. Combine the potatoes and curly cabbage with a masher. Cut the smoked sausage and serve! To make it even more Dutch make some gravy with it! Enjoy!

Mix 175g diced butter with 250g selfraising flour, 125g brown sugar and 2 tablespoons mixed spices. Knead it with cold hands until you have a nice dough. Wrap the dough in cling film and let it rest in the fridge for at least an hour, prefarbely more. Place the dough on a dusted surface and flatten it with a rolling pin until you have a thickness of 1 cm. Place the dough on a lined in baking sheet. Press some almonds in the dough (the amount is what you prefer). Place the baking sheet in a preheated oven at 165C (fan) for about 30 minutes. Let the spice biscuit cool down on the baking sheet (when it is still it will easily break). When it is cold enough just break a little piece of the spiced biscuit and enjoy!

Cook the pasta according pack instructions. Squeeze out the meat of 3 small sausages en make little balls of the meat. Cook the meatballs in hot oil until brown. Add 1 chopped onion and 1 finely chopped garlic clove. Cook until the onion is soft. Add 250g sliced chesnut mushrooms and to taste some thyme. Cook until the chesnut mushrooms are soft. Add 250ml tomato passata, season it and just heat a bit more. At your plate you can add some grated cheese. Enjoy!

Then stir 200g spinach into it and stir until the spinach is done. Put back the scallops and chorizo in the wok. Heat a few minutes and serve with the rice! Enjoy!

There isn’t a good translation for this, It taste almost like a spiced cookie. We eat it in Holland with “Sinterklaas”. Mix in a bowl 100g selfraising flour with 50g brown sugar, 40g diced butter, 1 big teaspoon mixed spices (cookie spices) and 2 tablespoons milk. Knead with cold hand until you have a good dough. Wrap the dough in cling film and let it rest in the fridge for at least an hour, prefarbly longer. Preheat the oven at 170c (fan). Line in a baking sheet with parchment paper. Make little balls from the dough, place it on the baking sheet and flatten them a bit. Place the baking sheet in the oven and after 20 minutes you have “kruidnootjes”. Cool down the “kruidnootjes” on a big plate. Enjoy!
