Rice with Vegetables and Peanut Sauce

Cook rice following the pack instructions, drain and put it back in the pan. Cover the lid and let it stay for about 15 minutes. Heat some oil in a wok and roast 50g cashew nuts. Get it out of the wok. Fry in the remaining oil 1/2 chopped carrot, 1 finely chopped leek and 200g mushrooms. When the mushrooms are done, season it and add ginger powder to taste. Pour in 4 tablespoons soy sauce. Lower the heat and let it simmer, meanwhile make the peanut sauce. Add 4 tablespoons peanut butter and 1 tablespoon lemon juice and stir it well to combine. Then stir this into the vegetables in the wok together with the roasted cashew nuts. Just warm it a little more. Serve it with rice. (This recipe serves 2) Enjoy!

Oven Baked Pasta with Spinach and Chicken Breast

I had some left-overs in the cupboard and fridge and i really needed to do something with those ingredients. I made some oven baked pasta. Cook the pasta, for example Farfalle, following the pack instructions ‘al dente’. Fry in some hot oil 1 finely chopped onion with 1 finely chopped garlic clove. When the onion is soft add 1 chicken breast (chopped in dices) and fry this until it is a brown. Then add 1 chopped grilled red pepper and 200g spinach. Fry this on a lower heat until the spinach is done, add 1 dessert spoon pesto, drain the pasta and add to the spinach and chicken. Put this in a oven dish. Make cheese sauce by melting 25g butter. When the butter is beginning to bubble add 25g plain flour. The mixure becomes thick. Then gradually pour in about 300ml vegetable stock. Keep stirring! When the sauce has a good thickness get the pan from the heat and add 50g grated cheese in it, melt the cheese while you stir the sauce. Pour the cheese sauce over the pasta in the ove

Cheese Straws

Cut 4 puff pastry sheets each in 4 rectangles. Spread beaten eggs at both sides of the puff pastry and put some grated cheese on both sides. Make a twist in it and place on a greases baking sheet. Place the baking tin in a preheated oven at 180C (fan) for about 25 minutes. Enjoy!

Cherry Cream Pie

It isn’t a cake for baking in the oven, you just have to cool it in the fridge. For the bottom you place 1 1/2 pack (375g) Lu Bastognekoeken (Bastogne cookies are Dutch cookies, Bastogne cookies are hard to describe, they are made with brown sugar, are fairly hard, and delicious) or 375g digestive cookies. Add it in the food processor with 200g cold butter and turn the machine on to mix it well. Put this crumbly dough in a greased cake tin (with a loose bottom). Press it well on bottom and on the sides. Put 4 gelatine envelopes in cold water. Heat 300ml cream on medium heat with 80g sugar and cut a vanilla pod into two pieces and scrape the seeds out and put it with the cream. Also put the vanilla pod in the cream for more vanilla taste, after 15 minutes you get the vanilla pod out of the cream. Stir the cream until the sugar has dissolved. Birthday Cake

This year Britt and me make ouw own birthday cake for Britt’s 11th birthday. Mix 250g butter with 250g sugar until pale. Then gradually add 4 eggs and mix it to a pale mixture. Then add 250g plain flour and 8g vanilla sugar. Mix well until you have a good batter. Put the batter in a greased and floured round cake tin. Place the tin in a preheated oven at 160C (fan) for about 1 hour. Cool the cake well. Cut the cake into 2 halves, a bottom and a top. Whisk 500ml cream with 2 bags of Dr. Oetkers Whip it and 200g sugar until the cream is stiff. Spread it on the bottom of the cake and on the top of the cake (at the cutting sides). We had a 400 ml can of fruit and we drain it and put it on the bottom of the cake. Place the top of the cake back with the cream side down. Spread some cream on the side of the cake and put some chocolate sprinkles (we had a special one with coloured sprinkles). Sausage Rolls

Peel the skin off the sausage. Put the sausage meat in a bowl and add 1 finely chopped shallot in it. Knead it well. Put 3 puff pastry sheets in a rectangle form. Lay the 1/2 of the sausage meat on top of the puff pastry sheets and roll the puff pastry over the sausage meat. Cut this in little pieces and place on a greased baking sheet. Do it all over again with the left sausage meat and with 3 puff pastry sheets. Beat on 1 egg, and brush it over the puff pastry. Place the baking sheet in a preheated oven at 180C (fan0 for about 25 to 30 minutes. Enjoy!

Lasagne

Fry in a hot frying pan 150g diced bacon, add 250g ground beef and fry this untuil brown. Fry in another frying pan 1 chopped onion, 1 finely chopped garlic clove and 1 chopped red pepper. Fry until the onion is ready. Add 250g sliced chesnut mushrooms. Stir fry until the chesnut mushrooms are soft. Add 1 can chopped tomatoes and 1 tablespoonthyme leaves and 1 tablespoon basil. Stir the ground beaf and bacon into the vegetables and just heat it a little more. Spoon some over in a oven dish, put lasagne sheets on it, then again a layer with the meat tomato sauce add some grated cheese, again a layer with lasagne sheets and again a layer with the meat tomato sauce. On top grated cheese. Place the oven dish in a preheated oven at 175C (fan) for about 30 minutes. Enjoy!


Macaroni dell Funghi

Cook macaroni (or another short pasta) following the pack instructions. Fry in hot oil one finely chopped leek, when it’s soft add 1 finely chopped garlic clove and 100g mushrooms and 150g mushroom mixture (it is a mixture with shiitake, chesnut mushrooms and oyster mushroom). Stirfry until the mushrooms are soft. Add 1 little can tomato puree and 1 teaspoon finely chopped rosemary and 1 tablespoon finely chopped basil. Let it simmer for a little while. Drain the macaroni and stir this into to the mushroom mixture. Season it and for more tomato taste just add some tomato ketchup. You can also serve some grated cheese with it. Enjoy!

Tarte a la Flamme

Heat some oil and fry 150g diced bacon until golden. Add 3 onions, sliced in rings and fry this until the onion rings are soft and golden. Then add 1 finely chopped garlic clove and 1 teaspoon fresh thyme leaves. Just heat it a little. Meanwhile season 250 ml creme fraiche to taste. Put 6 puff pastry sheets on a baking sheet coverd with baking paper. Spread 1/2 the creme fraiche over the puff pastry sheets, leaving a border of 1 cm. Put the bacon onion mixture on top of it and spoon the other half of the creme fraiche on top of it. Put the baking sheet in the preheated oven 200C (fan) for about 20 minutes. Enjoy!


Buono with Potatoes in a Pan and a Fruity Chicken salad

Sometimes you haven’t any time to even think about what to eat this week, but there are people who know what you can eat, you only have to choose. Well I choose something at the local butcher. He had a Buono, it is a pork scallop filled with spinach, ricotta and dices bacon, and a little parmesan cheese on top. The local Fruit and Vegetable store had a potato dish in mind, with potatoes offcourse and red and yellow peppers, leek, red onions and herbs. He also had a salad with smoked chicken and different kinds of fruit. We enjoyed it! You can try to make the Buono or potatoes yourself, unfortunatly I can’t give the exact amount of ingredients.

Spaghetti with Kabanossi and Tomatoes

Cook the spaghetti according pack instructions. Fry in hot oil 200g sliced kabanossi sausages. When the kabanossi sausages are a bit brown get them out of the wok. Fry in the left over oil 1 sliced onion and 1 finely chopped garlic clove until the onion is soft. Add 3 beefsteak tomatoes (about 800g), some thyme and oregano (both to taste). Lower the heat and let it simmer for 15 minutes. After 15 minutes put the kabanossi sausages back in and add 1 mozzarella cheese in little pieces. Serve directly. Enjoy!

Tortilla Wraps with Chicken, Red Pepper and Tomato

Marinate 2 diced chicken breast about 2 hours ahead wit 2 tablespoons oil, 1 1/2 tablespoons lime juice, 1 teasppon ground koriander and 1 teaspoon cumin. Fry in a hot wok (without oil) the marinated chicken breasts with 1 chopped onion, 1 chopped red pepper and 3 chopped tomatoes for about 10 minutes. Meanwhile heat the tortilla wraps following the pack instructions. Scatter some fresh koriander leaves over the chicken breast. Put some of the chicken tomato mixture over the tortilla wraps and roll them and your ready to serve! Enjoy!

Spinach Ricotta Pie

Cook in hot oil at medium heat 1 chopped onion and 1 finely chopped garlic clove. Cook until the onion is soft. Gradually add 600g spinach and cook until the leaves are wilted completely but still bright green. Add 2 tablespoons finely chopped basil. Then turn out the heat and add 250g ricotta, 50g grated cheese, 1 beaten egg and season it with nutmeg, salt & pepper. Line in a greased tin with puff pastry. Fill the tin with the spinach ricotta mixture. Scatter some grated cheese over it and place the tin in a preheated oven (200C fan) for about 25 minutes. Enjoy!

Wrap Snacks

With 2 leftover tortilla wraps we made this for lunch (ingredients are enough for filling 2 tortilla wraps). Fry in hot oil 1 finely chopped onion with 1 teaspoon sambal (hot indonesian sauce) and 1/2 a tablespoon ginger powder. Fry until the onion is soft. Add 125g sliced mushrooms and fry this until soft. Add 2 tablespoons peanut butter, 1 tablespoon soy sauce and a pinch of sugar. Just heat it a little more. Meanwhile heat the tortilla wraps following the pack instructions. Top the wraps with thin slices cold (left over) pork meat (we had dutch roulade). Top this with the mushroom mixture and roll the tortilla wraps firmey. Cut the tortilla wraps in little snack pieces. Enjoy!

Quiche with White Cabbage and Cashew Nuts

Fry in a wok, 1 finely chopped onion togheter with 1 finely chopped garlic clove. Add 300g ground beef and fry until brown. Season it with cajun spices. When the ground beef is brown, add 125g sliced mushrooms and 1/2 white cabbage, chopped. Stir fry until the cabbage is done. Season it and add some parsley and oregano. Stir about 75g cashew nuts in. Beat in a bowl 2 eggs with 50g MonChou (a softcheese). Stir this into the white cabbage mixture. Put in a greased and floured tin croissant pastry. Fill it with the white cabbage mixture and place it in a preheated oven at 180C (fan) for about 15 to 20 minutes. Or until the croissant pastry is ready. Carefully get it out of the tin. Enjoy!

Duo Brownies

Melt au bain marie 200g white chocolate with 125g butter, in another bowl melt au bain marie 200g plain chocolate with 125g butter. When it is ready stir into both bowls 2 beaten eggs and 150g golden caster sugar (in total you need 4 eggs and 300g golden caster sugar). Stir 90g plain flour into the white chocolate mixture, and stir 50g plain flour into the plain chocolate mixture. Pour the plain chocolate mixture in a brownie tin, pour over the plain chocolate mixture the white chocolate mixture. Place the brownie tin in a preheated ovan at 160C (fan) for about 35 minutes. The mixture has to set. Cool the brownie down before getting it out of the tin. Enjoy!


Shoarma Noodles Dish

Cook the noodles according pack instructions. Fry in a hot wok, without oil, 300g shoarma, until the shoarma is ready. Add 1 chopped onion and 1 yellow and 1 green pepper (sliced). Stir fry for about 5 minutes. Meanwhile make a sauce with 250ml cream and 250ml creme fraiche, season it and add paprika powder to taste. Drain the noodles and add it with the shoarma. Put it in an oven dish and pour over the creme fraiche mixture. Place the oven dish in a preheated oven at 175C (fan) for about 15 minutes. Enjoy!


Apple Nut Pie

This pie is in the a Dutch cookery magazine Elle Eten! I just mailed it and they choose my recipe to publish in their 50th edition. Well I’m proud! Hereby the recipe from the cake I made on my Dutch blog in april. Make a pastry with following ingredients: 225 plain flour, 1 egg, 100 butter (in pieces) and a pinch of salt. Knead all ingredients well, until it forms a good dough. (you can do it by foodprocessor). Shap into a ball, wrap in clingfilm and put it in the fridge for at least 1 hour. For the filling you need 4 peeled and cored apples (I used the Jonagold). Cut the apple in dices and mix the apple pieces with 100g golden caster sugar, 175g mixed nuts (e.g. cashew nuts, hazelnuts, almonds, pecan nuts), 50g raisins and 1 tablespoon cookie spices (In dutch we have speculaaskruiden - a special mix of cinnamon, nutmeg, koriander, ginger and kardemom) if you don’t have try a tablespoon cinnamon. Bacon Vegetable Roll

Cut a carrot and 250g green beans in the same size. Cook it shortly in boiling water for about 4 minutes. Drain and pour cold water over it. Make a sauce. Add into a pan 200ml honey with 50ml soy sauce and 50ml water. Place it on low heat and let it simmer for about 5 minutes. Lay a slice of bacon on your surface and place about 6 pieces of green beans and 4 pieces of carrot on it. Roll it into the bacon and cover it with second slice of bacon. Place this in a greased oven dish. Make more bacon vegetable packages, until you haven’t any ingredients left. (I needed about 200g bacon). Pour over the honey sauce. Place the oven dish in a preheated oven at 200C (fan) for about 20 minutes.Serve the rolls with fried potatoes and sweet chili sauce. Enjoy!

Chocolate Vanilla Cookies

Mix 200g butter with 125g caster sugar, a pinch of salt and 16g vanilla sugar. Knead 250g plain flour into the butter. Knead until it is mixed well. Make 2 portions of the dough, a small and a big one. Knead 5g cocoa powder into the small dough. Let the dough rest for about an hour in the fridge. Roll both dough into a rectangle. Place the chocolate dough onto the light dough and roll the dough. Now make slices of the dough. Put this on a greased baking sheet and place this in a preheated oven at 170C for about 20 minutes. Cool down well! Enjoy!

Pasta with Mushrooms in Creamy mustard sauce

Cook the pasta according pack instructions. Squeeze out the meat of 3 sausages. Make little balls from the meat and brown them in a frying pan. Add 250g halved cherry tomatoes, 250g sliced chesnut mushrooms and some finely chopped rosemary. Cook this until the mushrooms are done. Add 100ml creme fraiche and 1/2 a tablespoon mustard . Stir well and let it simmer for about 5 minutes. At last scatter some finely chopped parsley over it. Enjoy!

Beef and Ale stew

This is just food heaven! A easy to make meal, tried after a recipe from Kitchen Criminals. Melt butter in a frying pan. Flour and season 2 beef filets and brown it at both sides, transfer it to a plate. Cook in the remaining butter 2 onion (sliced) for about 5 minutes. Also transfer this to a plate. Pour 330ml ale (I justed Jupiler beer) into the frying pan en bring to boil, let it boil for about 3 minutes. Lower the heat. Add the onions to the beer with a bay leave, season it and let it simmer for about 10 minutes. Put back the beef filets and heat it for 5 more minutes. At last add 1/2 a tablespoon sugar and worchester sauce to taste. Get the bay leave out! Serve it on a clean plate. Add some chopped parsley with it. You can serve this dish with fried potatoes. Enjoy!


Witch bite

I didn’t make it myself this time, Britt made this herself with her Donald Duck Cookbook. Cook 1 sliced leek for about 2 minutes, add 200g mixed mushrooms (shiitake, chestnut mushrooms and oyster mushrooms) and 1 tablespoon finely chopped chives. Cook this for about 5 minutes until the mushrooms are done. Add 100g diced ham and season it. whisk in a bowl 3 eggs with 125ml cream. Line in the puff pastry into 6 greased and floured muffin forms. Fill it with the mushroom mixture and pour over with the beaten eggs. Place it in a preheated oven for about 20 to 25 minutes. Enjoy!

Cordon Bleu

Today I made Cordon Bleu’s myself. Flatten 4 pork scallops. (Place the pork scallops between clingfilm before you flatten them). Spread a slice of ham and a slice of cheese on it. Flip over half of the pork scallop and put a pin in it (to secure it not flipping open when you cook it). Season the pork scallops. Get the pork scallops through the plain flour, beaten egg and bread crumbs. Cook the coron bleu’s at both sides, until it is golden brown. Then put the frying pan in a preheated oven at 150C for about 15 minutes. (The cordon bleu’s are cooked well within). Serve it with a salad and potatoes. Enjoy!


Chocolate Strawberries

It’s a very simple snack or dessert. Wash 250g strawberries. Melt 100g plain chocolate au-bain marie. Dip the strawberries into the chocolate and place them on a dish en let the chocolate cool down. But if you cant resist, you can eat the chocolate strawberries just after dipping them into the warm chocolate.

Add 1 sliced carrot and stir fry this for about 5 minutes until the carrot is soft. Add about 100ml tomato ketchup and some thyme leaves. Spoon a layer of this mixture in a oven dish. Spread out 1/2 a sliced courgette and make a layer with lasagne sheets. And again make a layer with the ground beef mixture, 1/2 a sliced courgette, lasagne sheets. And once again make a layer with the ground beef mixture. Scatter some grated cheese over it and some bread crumbs. Place the oven dish in a preheated oven at 200C for about 30 minutes. Enjoy!


Bok Choy with Noodles

Cook in a hot wok with oil 100g sliced mushrooms with half a chili pepper (you can take a whole one but maybe it’s to much, but if you like it…). Cook this for about 5 minutes, or until the mushrooms are done. Add 3 finely chopped spring onions and 6 chopped baby bok choy. Stir fry this for about 2 minutes. Add 100g cashew nuts and add soy sauce to taste. Serve it with noodles. Enjoy!


Croissant with warm filling

Cook in a frying pan wit hot oil 1 finely chopped onion until it is soft, add the meat of 2 sausages (squeeze out the meat). When the meat is brown add 250g chesnut mushrooms. When the mushrooms are done add 3 chopped sundried tomatoes, 100ml creme fraiche, 2 tablespoon tomato puree and 1 tablespoon chopped basil. Just warm it a little more. Cut open 4 bake off croissants and fill it with the mushroom mixture. Scatter some grated cheese over it and some finely chopped parsley and place the bakin tin with the croissants in a preheated oven at 180C for about 10 minutes. Enjoy!
