2 pounds cleaned squid
salt to taste
freshly ground black pepper
1 3/4 cups all-purpose white flour
1 egg
2 egg whites
3/4 cup very fine, white cornmeal
2 tablespoons extra virgin olive oil or spray oil
Cooking Instructions
1. Preheat the oven to 450°F. Cut the squid bodies widthwise into 1/4
inch rings. Blot dry with paper towels. Leave the tentacles whole.
Season the squid with salt and pepper.
2. Place 1 cup of the flour in a shallow bowl and season with salt and
pepper. Place the egg and whites in another bowl and beat well with a
fork. Combine the remaining 3/4 cup flour with the cornmeal in a third
shallow bowl. Add salt and pepper and whisk to mix.
3. Use 1/3 of the oil to oil a large nonstick frying pan. Dip each
piece of squid first in flour, shaking off the excess, then in egg
mixture, and finally in the cornmeal, again shaking off the excess.

Sooo, I just had to cook it again today but with squid, which was suppose to be for another dish.Squid taste nice with black pepper. I had cooked Grilled Squid with Black Pepper some time back. Grilled squid is tough with overcooked. The one is just nice - chewy but tender.For this dish, I cut down the black pepper to 2 tablespoons and chilli was not added too. Oh, I also reduced the water to just 2 tablespoons as this doesn't need too much cooking to get the flavours in it. We did another night trip last night. We're back to the slower season so we've been going out a hair less frequently. I've got intro divers tomorrow daytime and then almost a week off (assuming no phonecalls in the meanwhile) with charters on 7 of the last 9 days of the month.The water last night was quite sloppy, and it made for a bumpy trip, but the diving was still great. It was a great manta show, Bob lead the dives (they saw 3 mantas on the first dive) and said with 10 mantas on the second dive it was a great time. I think all the divers had their heads bumped several times by manta rays.There were 3 squid on the dive. I'm pushing 2000 dives here, with about a couple hundred of them being night dives, and I've yet to see a squid. We've had a pair of them showing up off and on for the last month, I missed them one night I was down, and apparently there were three on Monday and last night. I'm hoping they keep showing up. I cook this once in a blue moon when we are all sick of eating the usual vegetable and meat dishes. It's like a snack to go with beer…Ingredients: 2 pair of fried fritters, cubed ½ bowl of squid paste Salad Sauce: ½ bowl of salad cream 1 tablespoon sugar 1 tablespoon condensed milk 1 teaspoon lemon juiceHow to do it:Mix all the ingredients of the salad sauce and set aside. Spread some squid paste on 1 side of the fried fritters. Deep fry the fried fritters with the squid paste till golden brown. Pour the salad cream on the fried fritters and mix well. Serve. My hubby likes this but he compliant that the fried fritters are too big for him to chew properly. Man … why can't he finish in 2 bites instead on 1? Okay lah. I will take note.Note: If you can't get squid paste, you can make your own. Remove the skin, head and the soft bone from the squid. Leaving only the main part. Mince it and mix with some cornflour. There you have it. And it taste better then the ready made one.
