A few weeks ago at the local farmer’s market I picked up a butternut squash, just because. I really had no idea what I was going to do with it, but I knew it would keep for at least a month while I decided its fate. My vegetable garden this past year was full of volunteer plants. Without one iota of work on my part other than covering the soil a year ago with leaves, grass and other mulch-y items, in the spring I had well over a dozen tomato plants come up from last years fallen comrades. (To make peeling easier, prick the squash with a fork and microwave on high for 5 to 10 minutes.)Heat the oil in a large nonstick frying pan over medium-low heat, and add the onions and mushrooms.Saute for about 5 minutes or until the onion softens.Add the squash and nonfat chicken stock.Cover tightly and cook until the squash is tender, approximately 20 minutes. (If you are using dried chervil and/or tarragon, add these after 15 minutes of cooking.)Remove the cover, and cook a minute or two longer to evaporate most of the remaining liquid. Sprinkle on the parsley and chives, and also the fresh chervil and/or tarragon, if used.

Things have been a little crazy on the work/study front this week as I am trying to come to terms with my schedule for the fall semester. It looks like I might get more obsessed with saving minutes instead of saving dollars for the next few weeks.

At almost 3 feet, this is probably the longest squash I have ever seen. It weighed about 5 pounds and cost us about $6. The moment I saw it, I named it as “Barry Bonds Squash” because:

it also looked pretty juiced up.
I was later relieved to find out that this variety of long squash can indeed grow naturally up to three feet. Sorry Barry Bonds, no stimulants involved.

Okay, so my cooking skills perhaps outshine my facility for making up names for recipes. All the good names have been taken, though - how could I hope to top, say, “Ouefs a la Neige,” or “Spanikopita?”
Anyway, I am having some sort of summer crud involving a sore throat and a stuffy nose, and so I convinced myself that some healthy food would help me get better faster. Never mind the fact that I had several zucchini, summer squash, and sweet onions on the edge of death from last week’s trip to the Farmer’s Market.
My original plan was to use up the instant barley in my cupboard and combine it with a vaguely Italian combination of the squashes, onions, garlic and some fresh Basil and Parmesan. I still plan to try this some day, but making it today would have meant dipping into the Parmesan I need to make Carbonara for dinner, so I changed continents and found a can of black beans and some cumin seeds. Thaw frozen squash in the microwave oven while cooking the onion and spices for this all-but-instant creamy soup. 1 1/2 tsp canola or vegetable oil 1/4 cup finely chopped onion 1-2 tsp curry powder 1/2 tsp ground ginger 2 12-ounce packages frozen cooked winter squash, thawed 1 cup reduced-sodium chicken broth 1 cup apple juice or apple cider 1/8 tsp salt 1/2 cup plain nonfat yogurt or nonfat dairy sour cream 1-2 Tbs finely chopped pistachio nuts (optional) 1 In a medium saucepan heat oil over medium heat. Add onion, curry powder, and ground ginger. Cook and stir for 2 minutes. Add squash, chicken broth, apple juice, and salt. Heat through. 2 Ladle into soup bowls. Top each serving with a swirl of yogurt or sour cream. If desired, sprinkle with pistachio nuts. Makes 4 side-dish servings. Servings: 4 Preparation time: 5 minutes Cooking time: 10 minutes

Butternut squash, how I love thee! This recipe came from Chef Rossi at Bust magazine. I've made it twice and it's fantastic. And according to Weight Watchers, it only has 2 Points per cup.
Butternut Squash Soup
Ingredients:
four onions - either white or yellow
three med/large butternut squash
seasonings: salt, pepper, cumin, corriander, curry, ginger, etc. to taste
veggie or chicken broth - enough to cover
Directions:
Chop up onions and sautee in olive oil until soft over medium high heat. This recipe makes a lot of soup, so use a large stock pot.
Peel butternut squash (a carrot peeler works best).
Cut in half and remove seeds. Cut into 1/2 to 1 inch pieces
Add squash to onions.
Add seasonings to taste. I really liked using 1 teaspoon curry, 1 teaspoon corriander, 1 teaspoon cumin, and fresh ginger slices. (I removed the ginger slices before adding the broth.)
Sautee until soft over medium high heat. Putting the lid on the stock pot helps cook the squash more quickly. B

One of the neatest aspects of squash is the use of portable courts allowing tournaments to be held in such exotic locales as the Pyramids in Giza or on beaches in the Caribbean.
Social Media holds a ton of promise for niche sports like squash. Notoriously difficult to film, squash is rarely featured on television. However, thanks to sites like Youtube.com squash videos are finding their way to the audiences who crave them. Sweet!
