      Not only am I still in Hong Kong, but I’m going to be here over Christmas. Macau is booked solid. At least all the cheap places are. My lack of planning around Christmas is really the proximate problem here. The place I’m staying in HK I had to check out today and I packed up and went to drop off the key. I had asked them earlier if I could stay a bit longer, but they said they were full. When I checked out and produced my receipts to get my key deposit, he realized I was a good customer, didn’t cause problems, and “suddenly” a room appeared. In fact, my very same room appeared. Cash does that I guess. So the plan now is on the 24 and 25 I’ll just take day trips into Macau on the jet boat. Macau is a small place so it shouldn’t be too big of a deal.       No More Free Money - Pulling The Plug On Credit Card Arbitrage
      After a year long run with 0% APR credit card arbitrages, it looks like it’s time to pull the plug. The sole reason for ending this free money run is the lack of *good* 0% APR offers to continue transferring the existing balances. Most credit card companies now impose balance transfer fees at about 3% of the amount of the balance transfered with no maximum limit and some have taken the “0% APR” terminology totally off their charts. All in all, the card companies seem to be making sure that people don’t milk them for the money with these offers.       A Short Weekend, or “Pulling a Six”
      Summer is upon us, and that means that staff members want to take vacations. This of course means that there are holes in the kitchen where there are supposed to be cooks. This is where the responsibility of being a sous chef rears its ugly head as it is the other sous chefs and I who are required to fill said holes. All my cooks get to experience this for the week while I get to fill in for them. I hope they enjoy it! And this week is an especially rough one, as two of my nighttime line cooks are away. I was able to cajole one of my line cooks to work an extra day this week, which was not too hard since it means extra hours and therefore extra money for her. But for those of us who are salaried, it just means more work to make sure everyone gets their break. Now let’s be fair here - chefs are not a group of people that get extensive amounts of vacation. Whether PBS pulled the documentary because of their political leanings or because of their fear to offend the terrorists, it really doesn’t matter. What does matter is that America has lost the will to fight and win a war. Lost the will to defend what we believe in. It’s a sad day when our ideals and beliefs are under attack and we just sit there and take it. Appeasement hasn’t worked in the past, and will never work. In this way the Iraq war is like Vietnam.
