      This is one of a few dishes we will always see on in law's dining table during Chinese New Year. I have known my husband for 17 years and I see this dish every year during Chinese New Year's Reunion dinner. There are other regular dishes too and they are all cooked the same way every year. Even if we are having steamboat, this dish will still appear on the dining table. *giggle*Perhaps its the reason that they are Cantonese and the ingredients used for this dish sounds very auspicious. Dried oyster sounded like 好事 (good deeds; returns) and the moss sounded like 发财 (get rich) in Mandarin.       Recipe: Vegie Chicken & Oyster Mushrooms with Rice Noodles
      There’s a Vietnamese restaurant in Footscray that cooks pure vegetarian food. They have some real delicious meals such as wonton soup and rice noodles. Although this recipe is not the same, it’s got a nice flavour to it, similar to a chow mein feel for vegetarians. If you like a bit of warmth, some freshly cut chilli would go down nice with this as a garnish! Ingredients: 1/4 cabbage, roughly chopped salt white pepper 1 tsp ginger minced 1 tsp garlic minced 2 tbs dry sherry 4 button mushroom, sliced 125 grams oyster mushrooms 1 cup vegetarian chicken 2 tbs sesame oil 2 tbs soy sauce 0.5 cup water 1 packet rice noodles, cooked in microwave sesame seeds for garnish Instructions: Heat the cabbage in wok with the pinch salt, pepper, ginger and garlic. Once the cabbage has softened, pour half the water in and simmer the cabbage. Place the mushrooms in the wok and stir in the dry sherry.       It's another mushroom dish. Told you we love mushrooms! What I like about this King Oyster Mushroom is how it looks like and the texture when it's cooked. I always pass it off as braised sliced abalone. My husband got tricked the first time I did this. *giggle*I prefer to add an additional green with the mushroom.       This recipe has been closely adapted from the Buddhist Vegetarian Cooking class I’ve been going to. I was amazed at how this batter was created. I never thought of doing this and I’m sure you’ll find this quite interesting as well. Not only is this quite different, but very crunchy and delicious!       ngredients: Fresh asparagus - allow 6 or 7 spears/person (not too thin, not too old) Fresh or frozen oysters - allow 3 per person 2 T dry white wine 2 only egg yolks 20 g butter (unsalted?) Salt, pepper, cayenne (if you must for seasoning Method: Trim bottom 1″ of the asparagus spears and peel the lower part if necessary (shouldn’t be required if you’ve selected the bunches correctly and trimmed off the bottoms) then poach them gently - get about 1″ of water boiling in a flat pan and lay the spears in it to cook for about 7 minutes (or use a European-style tall asparagus boiler if you must). Cut the oysters into thin strips rather than serving them as lumps. Reserve the juice from the oyster shells - should get about 2 T from 6 oysters. Mix this with the dry white wine and reduce over heat by about 2/3rds (i.e. you’ll have about 1 1/2 T left).       1 pt. shucked oyster 1/4 cup flour 1/4 cup corn meal 1 Tbsp. Blackening spices of your choice vegetable oil for frying 1/4 cup mayonnaise 1 chipotle pepper, minced 1/4 cup butter 1/4 cup Tabasco sauce 1/2 cup shredded lettuce 4 6″ Hoagie buns, sliced Drain the oysters. Mix the flour, corn meal and spices in a bowl, adding salt and pepper to taste. Dredge the oysters in the flour mixture to coat well.       1 cup (2 sticks) unsalted butter 1 cup celery, chopped 1 cup onion, chopped 1/2 teaspoon white pepper 1/2 teaspoon cayenne pepper 1/2 cup all-purpose flour 1 pound brie cheese, cut into small wedges, skin off 6 cups cold water 2 cups heavy cream 36 shucked oysters, with liquor 1/2 cup champagne 1/4 cup dry sherry In a large soup pot, melt one stick of butter. Add the celery, onions, white pepper and cayenne. Stir and cook over low heat until vegetables begin to soften. Over low heat in another pan, make a roux by combining 8 tablespoons melted butter and the flour to make a base for thickening the soup. Cook at least 2 minutes, stirring constantly, so the floury taste is eliminated. Add the roux and the cheese to the soup pot. Add the water, cream, oysters and their liquid.
