      Microwave Granola To The Rescue...The Fastest Gift From The Kitchen
      At 9 am one day last week, I realized that I needed some baked goods... FAST. No time for cookies, banana breads or even muffins. So I turned to my world famous Granola. Regis and Kelly were on in the background and I had 4 batches made before host chat was over. Well, not exactly, but I WAS able to leave the kitchen well before RR came on at 10. Plan to make multiple batches, because this is so good. Don't scoff because this is a microwave recipe. I'd put it against the finest baked granola. AND there is no extra fat (other than the considerable amount in the nuts and the tiny amount in the wheatgerm).The microwave part is both good and bad. It's good because it's so fast. The bad part is that it's tricky to cook more than one recipe at a time. So for maximum efficiency, I PREPARE 4 batches at once, but COOK them one right after the other.       ConAgra, which manufactures more than half of America’s microwave popcorn, has removed the controversial chemical diacetyl from its ingredients list. Diacetyl gives popcorn a buttery, creamy taste, but workers exposed to the airborne chemical came down with a rare lung disease called bronchiolitis obliterans. ConAgra began removing diacetyl from production lines in November, and is currently in the final stages of taking it out of all of its products. There are no specific safety regulations regarding diacetyl. The nation's second-largest producer, General Mills, removed diacetyl from its products in October. The third-largest producer, American Pop Corn Company is in the process of reformulating its flavorings to remove diacetyl, a procedure they say is now “all but done”.

      Food Blogging in general makes you think about food, recipes ideas, writing and presentation in ways not thought of before.  Food Blogging Event in particular makes you put on your thinking cap and takes thought process to a whole new level especially when a new food ingredient is involved.   I was stumped when it was announced that the key ingredient for the AFAM event this time was DATES. Dates adorn our pantry as a garnishing ingredient for our cereal or oatmeal and occasionally to be eaten as is. Other than that I have very limited or in fact, almost no experience using it in our everyday or special cooking.  I really loved the idea and wanted to come up with something for the event.  I had the idea of making a Date Burfi by adapting this lovely recipe here.  When I thought of this idea I was expecting to find the taste of dates blend with that of milk, to create a unique taste with a sticky texture. But when I actually tried this I found that dates are mellow and subdued

      CRISPY ORIENTAL CHICKEN WINGS (MICROWAVE)
      1 1/2 lbs. chicken wings, disjointed 1 med. egg 1/2 c. soy sauce 2 tbsp. garlic powder 1/4 tsp. ginger powder 1 med. onion, finely diced 2 c. finely crushed corn flakes Mix together egg, soy sauce, garlic powder and ginger powder. Set aside. On wax paper, mix together crushed corn flakes and diced onion. Dip each wing in soy sauce mixture, then roll in corn flakes and onion. In glass baking dish, cover and cook wings on high (9) for 20 minutes, or until cooked. Remove covering halfway through cooking. Use 13″x9″ baking dish. Yield: 24 appetizers.

      Making Cake Or Cobbler In Your Microwave
      by Donna Rivera-LoudonJust because it is summer doesn't mean you don't want to be able to make nice desserts for your family. The problem is: who wants to turn on their oven to bake a cake or make a cherry cobbler? Here are some recipes I have made often in my microwave. I tested them on my family and they were very satisfied.Blueberry or Cherry CobblerIngredients2 (21 oz) can blueberry or cherry pie filling 1 tsp. grated orange peel 1/4 tsp ground nutmeg 1/2 cup milk 3 Tbls marg. softened 2 Tbs sugar 1/4 tsp cinnamon 2 cups Bisquick Mix Vanilla ice creamCombine filling, orange peel, and nutmeg in deep rectangle shaped microwave container. (I use Tupperware's Large Deep Rock N Serve container) Microwave uncovered at 70% power for 8 minutes or until hot, stirring twice.Combine remaining ingredients in a separate bowl and beat vigorously 20 strokes. Drop 12 dumplings onto the hot filling. Microwave uncovered at 70% power for 10 to 14 minutes or until dumplings are no longer doughy.Ser

My family appreciates the nice meals and I appreciate not having to spend so much time in a hot kitchen. With this recipe you won't even have to turn your stove or oven on. Give it a try.I use a Tupperware Rock N Serve large deep container for this recipe. If you can find a similar container give it a try. Just remember that you only want to use microwave safe containers for the microwave. Containers that are not microwave safe can release unwanted chemicals into your food.       Glad Simply Cooking Microwave Steaming Bags
      I had the opportunity to try these Glad Microwave Steaming Bags and what a time saver! My kids eat all of two cooked vegetables, broccoli and string beans. The old way I prepared them was to fill a pot with 1/2 inch of water, put in a metal or bamboo steamer, cut up the veggies and then cook them for exactly 12 minutes (any deviation would prevent them from eating them). My trick to get my kids to eat their veggies is to give them each a special dipping bowl with light soy sauce (green sauce as we call it because it comes in a green bottle). They still hem and haw, but eat them most of the time. Afterwards we would have to clean up the pot, steamer and the tongs I used to fish the hot veggies out.The new way is to just stick the cut up veggies in the steaming bag, microwave for exactly 3 (broccoli) or 4 (string beans) minutes and dump them into a bowl. Cleanup is all of rinsing the bag out (for us frugal types). I have used them a few times and they've held up pretty well so f
