What a treat I have for you today! This delightful stuffed vegetarian roast has a combination of flavours that don’t outplay each other. Although, I didn’t have this as a special occasion, I already think this would be ideal as a Christmas luncheon coming up or what about Easter Sunday or Thanksgiving for the Americans?
In Australia, Sanitarium make these Vegetarian Roast but I’m sure there would be an alternative in most countries! If not, I’ve thought of making stuffed tofu or stuffed gluten instead. It would certainly go well with those also!

The sitting time (mentioned below) is not necessary but ideal to allow the flavour to intensify!
Use the middle sections by slicing into smaller parts and encrusting with some of the stuffing - these are delicious too!

Ingredients :1 and 1/2 to 2 cups flour1 egg1 tsp. vanilla1/2 cup white granulated sugar1/2 cup light brown sugar1/4 pound butter, softened8 oz. white chocolate bark, melted1/2 cup macadamia nuts, choppedIn large bowl combine flour, egg, vanilla, sugars and butter; mix well with an electric mixer. Melt chocolate in a glass bowl in the microwave or double boiler according to package directions, be careful not to scorch. Add melted chocolate and nuts to mixture. Drop tablespoons full onto greased baking sheet and bake for 15 - 20 minutes at 325 degrees.Tips : Bwwaahahaha...your kidding, right? Being from Australia, one thing I would like to do with this blog is create some Aussie dishes. The following recipe includes an Australian Native ingredient, the Macadamia. The macadamia is a nut that was eaten by the Aborigines before the settlers arrived. It’s high in protein and supposedly one of the healthiest nuts. You can find more information here.
This recipe can be eaten on it’s own or is quite delicious with a little orange sauce created with marmalade. The sauce I created is just marmalade reduced down with water and boiled to thicken up. Serve with mash potatoes, salad or fries - it goes well with everything. And, if you don’t have tempeh, use firm tofu! I’ve cooked with both and works just as well with tofu!

After doing a breakfast at Carriage works as part of Saturday Indesign Expo last weekend in Sydney, I took a look around the expo. It was here that I was lucky enough to meet the Brisbane designer Marc Harrison.
Marc has created a wide range of products under the brand of “Husque” using recycled macadamia nut shell composite. After the macadamia kernels are removed, the discarded shells are milled into fine particles, melded with a polymer, and the final product is formed into beautiful and useful objects.
The extremely innovative and recycled Husque range includes small bowls, trays, platters and vases all made from shells of macadamia nuts. Each piece strikingly represents in someway or another the characteristic of a macadamia nut.
