Well, Our weather here in Southern Cali is changing, (thank goodness) so I had the Urge to make a Fall Favorite here in our house... I call it "PASTA BAKE" It is so Yummy too. On a Cool Evening it is Perfect. You can even make this ahead and keep it in the Frig. then throw it into the Oven when you get home from work or the Kids Practice.Here is the Receipe:
1-pound any Pasta cooked (I used Elbow, kids fav.)
Ground Turkey or Beef (cooked)
Sweet Onion (chopped fine)
Pasta Sauce (jar type, I used Classico Tamt. Basil)
Shredded Mozzerela Cheese (I used Low fat,could also use fat free)
Parmasean Cheese
Cook the Pasta, I like it Al-Dente, cook up the Meat, we use Ground Turkey. I use a Baking pan and Layer the Pasta then add the cooked meat.Add chopped onion and then Pasta Sauce. I Mix it all together and add Some of the Mozz. cheese. Add a layer of Parmasean Cheese and then a thin Layer of Mozzerella Cheese.
Bake it at 350 degrees for about 20 min. If the cheese starts to get to brow

Enjoy this delicious recipe for a comfort-the-soul slow cooker / crock pot lasagna. Ingredients: 1 lb. ground beef1 onion, chopped3 cloves garlic, minced1 large jar spaghetti sauce8 oz no-boil lasagna noodles16 ounces mozzarella cheese, shredded1 lb. ricotta cheese1/4 cup milk1 egg1/4 cup Parmesan cheese, shredded1/4 cup Romano cheese, shreddedS & P, to taste In a large skillet- brown beef, onion & garlic. Drain. Add spaghetti sauce into meat mixture & mix together. In a medium bowl- mix together ricotta cheese, milk & egg. Beat until smooth & mix in the mozzarella, Parmesan & Romano cheeses. Get out your slow cooker or crock pot & spray down bottom & sides with non-stick spray. Place 1/4 of the meat & sauce mix at bottom of crock pot. Put a layer of noodles on top. I am still campaigning for Comfort Food in all of its unsophisticated loveliness, but I don’t have time to write a proper recipe. My friend Lisa, from time to time, brings me a H-E-B grocery store bag heavy with food. Carefully packaged inside are plates of rice and beans, pork and plantains, a fork, and a soda.This is my comfort food. Last night we watched the season finale of the L word, which was recheduled due to my party. (What an amazing group, huh?) We usually viewed it the night it airs–Sunday–which meant I always rushed from the tasting room into the city. Deciding to forego fancy and a chance at making a great wine pairing, I opted to go for some down-home cooking. Fried chicken. A combo of collards and mustard greens cooked in what we back home call ‘pot likker.’ Skillet cornbread, which I insisted everyone dip into the pot liquor. And my mama’s potato salad, which because I use a touch of Blue Plate (the best mayonnaise in the world, which sadly is not sold here) is a little better than hers. Today we woke up to snow on the ground and no school for the kids.So I decided to make comfort food for dinner.Hopefully this is the last snow of the season and spring is just around the corner.Anyway, I really wanted to make meatloaf but have never had success using ground beef.I recently bought a meatloaf pan to catch the fat drippings and wanted to test it out.So I googled meatloaf and I found this one on recipezaar http://www.recipezaar.com/54257 that had a huge amount of 5 star ratings so I decided to try it.Glad I did. The meatloaf was moist and the sauce was so good.The sweetness of the sugar and the tartness of the vinegar was perfect. It was so easy to put together.And the meatloaf pan worked perfecty.I have found my regular meatloaf recipe.I didn't use all the sauce on the top of the meatloaf,I drizzled sauce on the loaf when I served it.Perfect.Comfort.Food. Cheesy Broccoli Chicken and Rice Casserole
3 chicken skinless chicken breast cooked and cubed
2 cups of cooked rice
1 bag of frozen chopped broccoli (steamed)
1 can of Campbell’s cream of chicken soup with herbs
1 can of Campbell’s cheddar cheese soup
1 bag of shredded Cheddar Jack cheese
pepper to taste
Tony Cacheres Creole Seasoning
Preheat oven to 350 and mix the chicken, rice, broccoli, soups, 1 cup of the cheese and seasonings in a big bowl. Then just plop it into a baking dish, top with the rest of the cheese and bake for about 30-40 minutes until the cheese is browned on the edges and bubbly. You can also add sauteed onions and garlic but my kids throw a fit so I just leave it out. You can substitue the cream of chicken soup for cream of mushroom but, again, my kids hate it and pick out the mushrooms

When I think of comfort food, I think of a submarine sandwich. Buffalo has many places with many different styles of subs available. My quintessential Buffalo sub has a roll that is toasted with a medium crispy exterior and a slightly chewy interior. The bun, or roll, can not over power the stuff inside, it must enhance the sub without being the star. Good quality meats are a must and skimpy amounts of lettuce and tomato are a no-no. A capacollo sub from La Pizza Club, on Hertel Avenue, fits the bill perfectly. Banana peppers are a must.
