Lon's friend Justin gave us some lamb shoulder chops the other day and I thought hmm, interesting. I had never had lamb shoulder chops before. I made them for lunch today and I'm hooked. It's a great cut of meat!!I needed to make a quick lunch with the 1/2 inch thick lamb shoulder chops so I decided to rub them with a Moroccan Spice Blend. Use a generous amount and then throw them on a the grill for 4 minutes per side (for medium rare).I served it with an amazingly refreshing Mango Raita which was perfect with the strongly spiced lamb. While I can't take credit for the recipes, I can take credit for the pairing. It was a such a great meal, you won't believe you made it in less than 2o minutes!

Make a marinate with the following ingredients: 1 tablespoon oil, 2 tablespoons ketjap manis (sweet Indonesian soy sauce), 1 tablespoon curry powder, 1 finely chopped garlic clove, salt and pepper. Chop 200g pork chops in dices and marinate it. (Best is marinating it a night before, but an hour before cooking is also fine). Cook the rice following pack instructions. Cook in hot oil 1 finely chopped onion until soft. Add the marinated pork chops in and cook until it has a nice colour. Add 200g sliced mushrooms and 1 cored and diced apple (you don’t have to peel it). And stir fry until the mushrooms are soft. Serve with the rice. Enjoy!

This is my first attempt at this recipe. I still have more than half a bottle of plum sauce in my fridge and following from last Sunday’s shopping trip, I have 300 grammes of pork loin chops. So, what I did was to marinade the pork loin chops overnight so that on Monday, I could whip up a simple dish in less than 30 minutes when I get home from work.
This dish essentially relies heavily on the commercially available plum sauce, which you can get from supermarkets or asian groceries. Though it is widely used in duck cooking, personally I think it works well with pork too (especially loin cut or ribs). The taste is a mixture of sour and sweet, with a distinct aroma from plums used. The plum sauce I have uses a little bit of chilli in its ingredients and hence, it has a slight hint of spiciness to it, but which otherwise is unnoticeable. I would say that it is an appetising dish and is a worthy companion to steamed white rice.

2 to 4 slices bacon, diced, fried and browned, or salt pork(*)1/2 cup chopped celery1/2 cup chopped onion1 beaten egg3 apples, peeled, cored, and shredded or finely diced1/4 cup sugar (optional)4 cups dried bread crumbs or diced bread (1/2" dice)salt and pepper, to taste2 tsp Poultry seasoningWater if needed
PREPARATION:
Fry diced bacon or diced salt pork until crisp, then add celery and onion; cook until tender. In a large bowl, add all remaining ingredients, adding hot water only if needed. Mix well so that the bread has absorbed the moisture, but is not mushy. Refrigerate immediately if you are not going to use it right away.
