      2 eggs, separated1/3 cup granulated sugar1 1/4 cup light cream2 avocadosFinely-grated zest and juice of 1 large orange1 1/4 cups heavy cream, whipped Put egg yolks with the sugar in a bowl and beat until thick. Put the light cream in a heavy-based saucepan, and heat to just below simmering point then beat into the egg yolks.       Shrimp Salad with Mango, Pineapple and Avocado
      1/2 avocado 1/4 cup fresh lemon juice 2 tablespoons orange juice 1 tablespoon minced shallots 1 tablespoon chopped fresh tarragon leaves 1/2 teaspoon lemon zest 2 tablespoons extra virgin olive oil salt to taste freshly ground black pepper 1 pound large shrimp, steamed, peeled and deveined 1 mango, peeled, pitted and sliced 1/2 fresh pineapple, peeled, cored and sliced 8 cups mixed baby greens Cook:25 minutes Cut the avocado in half, remove the pit and peel and slice it. Sprinkle the slices with 2 tablespoons of lemon juice and set aside. In a large mixing bowl, whisk the remaining lemon juice, orange juice, shallots, tarragon, lemon zest, olive oil, salt and pepper together. Add the shrimp and refrigerate until ready to serve.       Avocado, Tomato, & Corn Salsa
      2 ears of corn, shucked 2 green onions, trimmed 1 Tbsp Oil 1 ripe avocado, peeled, pitted, 1/2-inch dice 3 medium tomatoes (about 1 lb total), 1/4-inch dice Juice and zest of 1 fresh lime (about 1 Tbsp each) 1/4 cup Extra-Virgin Olive Oil 1 Tbsp fresh chopped cilantro Salt and pepper to taste Preheat grill on MEDIUM 10 min. It was a great hangout for guys my age as we could park our vehicles and to watch the St. Joseph's girls. Apparently, that was an extremely popular pastime. The University fountain (for those old enough to remember it) was the place to hangout for some cheap eats and fresh air. It was also a great place for love birds returning from their rendezvous behind the tall grass patches at Pashan Lake to stop for a quick bite. The mist from the 3 story tall fountain kept the area cool and fresh and the many stalls provided the good, cheap eats to good, cheap kids.       The two crabs we shared on Open That Bottle Night had me wanting more… So last week I picked up a small container of lump crabmeat along with other items for my new favorite salad. For the dressing, squeeze 1/8 of a grapefruit into a bowl. Add a splash of white vinegar and a splash of white wine (sparkling if you have it): this time I used the Clos LaChance Rose’. Whisk with salt and pepper–I also chose to add a bit of minced garlic–then stream in olive oil until the dressing is emulsified. Then mix the greens and add sliced avocado, small pieces of grapefruit, and the lump crabmeat, with crumbles of goat cheese on the periphery. I drank the same wine with the salad that was in the dressing, but secretly I was wishing for Sauvignon Blanc. Therefore, the next night I had the same salad.
