I love cooking (and eating) fish for two reasons. I can catch my own so I know how fresh it is and cooking fish can be as quick and simple as you want to make it. So after having my Wahoo for over 6 months, I really like it. It is not for the casual rider. The bike geometry is very different from the Schwinn bike I used to ride. If a person purchases a Gary Fisher bike, they really have to want to ride. The bike has a very sharp front end and as I like to say, it is in attack mode or attack stance. The front tire and fork is very sharp compared to other bikes. The forks are adjustable and I like to keep them very loose to absorb impacts better. The gear changers are very responsive and tight. With just a little motion, the gears will change. The seat I bought (Bontranger) in conjunction with a good pair of padded shorts helps keep my butt from getting too sore on extended rides. I changed the pedals to a pair of Crank Brothers 5050 this weekend and I really love them. It was time to hit the corporate taco again. I drive past Wahoo's fish taco from time to time and I had yet to try their fish tacos.Wahoo's is a west coast chain that originated in Hawaii. They don't claim to be authentic mexican, more of a Hawaiian-mex hybrid I think. Packs of wahoo congregate along the Great Astrolabe Barrier Reef and year round, we find Spanish mackerel. The average size of wahoo here is about 50lbs with a really good fish weighing in at 90 to 100lbs. The mackerel are common to20lbs but can reach 70lbs. The trick here is to first find the wahoo packs by trolling a spread of lures. The wahoo packs are usually on one side of a reef point or the other, depending on the current direction. Normally the up-current side on the drop-off where the depth is about 250ft. Once a pack is found, we then usually switch to 2 outfits on light tackle, rigged with garfish (Ballyhoo). We troll one skip bait and one swimming bait. This prevents the expensive problem of getting mauled by a pack, having 5 rods go off with associated chaos on deck and loosing almost everything you have in the wat

The biggest problem we encounter is a mass attack, wahoo porpoising in at break-neck speed, every rod in the spread going off and then multiple bite-offs as other wahoo attack lines or swivels cutting through the water. We combat this by trolling a full spread until we find a pack and then switch to towing just two lures. Often, just a garfish (ballyhoo) on a two hook rig with a small pink skirt on the nose. Trolling speed is usually around 6-7kts. Most wahoo skippers around the world troll faster. Here, higher speeds do not increase strike rates. Last week on t
