My son goes through stages. At one point, he loved broccoli. He would eat an entire plate of steamed broccoli for dinner. Now he won’t touch it. His new thing is tomatoes, which he hated a few weeks ago. Instead of arguing with him about this, I just keep offering different vegetables and he can choose whether or not he wants to eat them. However, I don’t want him to go without eating any , so I have to disguise them. One of the ways I do this is by making a vegetable quiche.

We have all been accustomed towards eating meat which is really good for our body. But considering the fact that the world is slowly shifting towards a green and healthy outlook, it may be high time we start eating vegetables more over the meat from livestock and mammals that need to sacrifice themselves for our sake.
Meat will be meat, but green vegetables still hold the necessary nutrients we all look for today. We have a choice, sacrifice in the way that animals have sacrificed for our cause. It is not such a hard thing if we are truly inclined for our health.

The USDA recently increased its recommendations for fruit and vegetable consumption to 2 to 6.5 cups daily, offering greater specifics for people according to age and gender. Unfortunately, Americans do not seem to be keeping pace with the government’s recommendations: the National Health and Nutrition Examination Survey from 1999-2000 shows that only 40% of Americans eat five servings of fruits and vegetables daily.

Did you know that kids, toddler’s especially, are more likely to actual eat more veggies if they are home grown in their own backyard? Apparently being involved in the growing process, helping mom weed, or helping water, etc., can lead to healthier veggie eater along the way.
Personally, Alex is just going to have to learn to deal with the store bought variety, since I can, quite quickly and proficiently, kill any living plant that comes within a ten mile radius. What can I say? It’s a talent I’ve had all my life. You should have seen MY terrariums in school. They were easy to pick out, they were usually solid brown and mushy.
But if you’re not blessed with the oh so desirable black thumb that I have, you may want to consider starting your own little backyard garden. It just might get your toddler eating veggies, and can always make for fun upkeep along the way!

Wal Mart’s back at it with the freebies, this time with some free Knorr Sides Plus Veggies. I’ve never actually heard of this brand before, but giving away free samples of your product is one heck of a way to start building up loyal customers! Plus, I think the last vegetable I’ve eaten was a carrot back in 2004, so this can only be a good thing for my diet and health!

The other day I was reading about someone who was tired of their winter vegetables. She was saying something about San Diego’s winter vegetables being tired and pale. I can’t think of anything that is further from the truth. Just last week I got crisp cauliflower, yukon gold potatoes, and the greenest sugar snap peas I’ve seen all winter.
With all these delicious winter vegetables, I thought I’d put together my version of the Indian classic, Aloo Gobi. This recipe is pretty straight-forward, no fancy techniques, no fancy ingredients. You may even have all these boring ingredients in your pantry already.

1 head cauliflower cut into small florets

In theory it sounds pretty easy. You eat more fruits and vegetables by "sneaking" them into your daily diet without being obvious. But it takes work. One idea is to buy more veggies than usual and leave them out on the kitchen counter so you'll be more likely to include them in your cooking (or snacking).A better idea is to combine them with other foods. Cauliflower can be pureed in a blender and mixed into your mashed potatoes without a noticeable change in texture or taste. Grated carrots and/or chopped spinach can also be added to your spaghetti sauce (in the skillet) with much the same effect. A registered dietician wrote a book last year called, Stealth Health to guide people in this process. It should still be available on amazon.com.

In our house we love eating fresh fruits and vegetables, but I am also lazy because I don’t like to run to the store every other day to buy fresh produce. Not only does doing this take up too much time and energy and create the arena for more potential battles to be fought with two year olds, but it also ends up costing more money. It’s part of the Law of Saving Money. If you can decrease the amount of times you have to frequent a store, you will find there is more money left in your budget. Therefore I tend to buy a lot of fresh produce in bulk
I was on the phone the other day with a friend, and she could hear my son Alex babbling in the background.
“What’s Alex up to?” she asked.
“Eating lunch. He’s talking to his carrots at the moment.”
My response was met with a stunned silence before she squeaked out … “He eats CARROTS???” On the disbelief register it ranked right up there with me saying, “I just won the swimsuit competition for the Miss America pageant.”
Well of course Alex eats carrots. Why wouldn’t he? He also eats peas, ham, turkey, pasta, fruits, and occasionally a bite of dog food if I’m not quick enough, but what’s so shocking about that?
“My son won’t eat anything except yogurt and mac and cheese.”
She confessed this is a stage style whisper, as if we were two CIA agents passing on the street and vital information on the TFO (Toddler Food Operation) needed to be exchanged in a hurry.

The distrubing story appeared in Svenska Dagbladet (Swedish only), my daily morning read. It was about the fruit and the vegetables we buy in the belief they are good for us, and about how these fruits and veggies, colorful as they may be, are so diluted and abused they are hardly worth the effort of chewing and eating them anymore. Many are so low in nutrients and vitamins they would not pass international norms, like the FAO requirements. The paper used a refractometer (Wiki) to measure the sucrose level, Brix, (Wiki) in different fruits and vegetables. A high Brix level means, among other things, that the fruit or vegetables tastes sweeter, contain more vitamins and minerals, won't be as suceptible to spoiling, and will be hardier and thus require less pesticides. A low Brix level may be caused by harvesting the fruit or vegetables before they have ripened, that they have not had enough sunshine, been grown in bad soil, and been reared too quickly. I work nights. I’m working while the rest of the normal world is having fun, going out, or just sleeping. These late hours aren’t very conducive to gourmet foods or even take-out, so sometimes I’m guilty of bringing something frozen to work (gasp! The horror!). Yes, even the foodie will partake in frozen, microwaved dinner.
Thursday night I brought a pot pie to work. I didn’t completely sell out, it was an Amy’s Kitchen country veggie pot pie. They’re pretty good, organic, and they keep me from the fast food evils of working nights. While I was eating this, I realized I could easily make my own, better version. Friday night, I concocted my own organic veggie pot pie. It only took a few things: fresh, local veggies from the CSA, some leftover homemade quick puff pastry, and a bechamel sauce. The eater ranked it as ‘yumyumyum’.
