"Eat your fruits and vegetables." We've heard it all of our lives. If only it were so simple. Our bodies crave fruits and vegetables more than just about any other food because we tend to get far fewer of them than we need. We often think we'd survive just fine on 2-3 servings a day – or less. But the Centers for Disease Control and Prevention and the USDA both recommend at least 5 servings per d

They have enough of their own flavor. I was looking for a simple, yet tasty and healthy dinner the other night, and I think I found the perfect meal! Brett and I raved about this and were also happy with how good s

In the book, Jessica describes how to puree veggies and hide them in your kid's food. While many people criticized the book saying that she copied someone else's idea, and she gave Oprah 21 pairs of Manolos Blahniks for promoting it, I say "Who gives a shit!" It works. I found it to be brilliant and implemented her, or whoever's strategies. The only difference was that I went purely organic. Now this was at a time when my daughter was NOT consuming many (or any I should say) veggies at all. She was in and out of school almost ever other week with one ailment or another, and she would take a tremendously long time to recover. After several

If you're one of those people with the best of intentions, but you just don't eat what you should, you can use these tips for sneaking servings into your meals: Wake up to fruit. Make a habit of drinking juice or complementing cereal, yogurt or pancakes with sliced or dried fruit. Try these "grate" ideas. Add grated, shredded or chopped vegetables, such as zucchini, spinach and carrots, to lasagna, meatloaf, mashed potatoes or pasta dishes. "Sandwich" in fruits and vegetables. TIP and IN THE NEWS - Sneaking pureed veggies into my kids' food
I saw Jerry Seinfeld's wife Jessica on Oprah show talking about her book Deceptively Delicious. The premise of the book is that you can hide pureed veggies in your kid's favorite meals. Then the kids get the veggies they need and you feel better about what your kids are eating. I have to admit this got me thinking about my own kids and how much vegetables they eat or I should say how much vegetable they don't eat. Aside from potatoes and corn, they really don't eat too many vegetables. This has been weighing somewhat heavy on my mind. When I give them vegetables, they pick them off the plate. Contrary to many people's opinion, you really can't make kids eat anything nor would I want to. So the concept of pureeing vegetables and putting them in the kids' meal made perfect sense! It made sense. My kids eat garlic, onion and other vegetables but only if they are cooked into their food like tomato pasta sauce where they don't really notice all the vegetables. They e

      Eat Your Veggies, Dammit
For many, a daily Oprah episode signals the beginning of a session of pleasure, a desperate excitement that lasts for an hour and then melts into a lathered puddle of women lazily lounging around on the steps outside of her studio, grabbing cigarettes and moaning about how the sparks flew and lit up their eyes for the better part of an afternoon. To some it’s a satisfying event; for others, she leaves us ridden hard and hung up without a vigorous towelling-off. Not even the “O” word in magazine format can possibly wrench us from the idea that whatever just happened on that TV probably cost us a few tenths of our soul. A couple of days ago, I managed to gather that Jessica Seinfeld, wife of famed and funny Jerry, was on Her Majesty’s program to promote her new cookbook about how to hide vegetables within foods that children have naturally found easy to stuff down their maws in large quantities, thus avoiding a task that most parents have found to be unpleasant

Eat your Veggies! Simple Cooking Methods
Vegetables add colour, taste, texture and bulk to our daily diet. There are dozens of different vegetables that can be prepared in literally hundreds of ways. So what's best? There is no best. The thing to do is to eat your vegetables, lots of them, everyday in a wide variety of ways and stop worrying about the preparation methods. Variety is the key... Raw Many vegetables taste fabulous just the way they are straight out of the garden. Lettuce, tomato, celery, cabbage, onion, radish, carrot are obvious choices here. But they are just as likely to find themselves next to chopped up broccoli, cauliflower, peas, beans and zucchini on a starter platter with dips. Wash 'em, chop 'em and eat 'em. Oh, yeah, you could also make a salad! Steamed Steaming heats the vegetable and softens it's texture. It's gentler than boiling and allows the vegetable to maintain it's colour if not o

How to get your kids to eat their veggies
If you are like most moms, at some point you have been faced with the problem of your child not liking or wanting to eat vegetables. My son goes through stages. At one point, he loved broccoli. He would eat an entire plate of steamed broccoli for dinner. Now he won’t touch it. His new thing is tomatoes, which he hated a few weeks ago. Instead of arguing with him about this, I just keep offering different vegetables and he can choose whether or not he wants to eat them. However, I don’t want him to go without eating any , so I have to disguise them. One of the ways I do this is by making a vegetable quiche. Americans not eating enough fruits, veggies
The USDA recently increased its recommendations for fruit and vegetable consumption to 2 to 6.5 cups daily, offering greater specifics for people according to age and gender. Unfortunately, Americans do not seem to be keeping pace with the government’s recommendations: the National Health and Nutrition Examination Survey from 1999-2000 shows that only 40% of Americans eat five servings of fruits and vegetables daily. Garden Veggies
Did you know that kids, toddler’s especially, are more likely to actual eat more veggies if they are home grown in their own backyard? Apparently being involved in the growing process, helping mom weed, or helping water, etc., can lead to healthier veggie eater along the way. Personally, Alex is just going to have to learn to deal with the store bought variety, since I can, quite quickly and proficiently, kill any living plant that comes within a ten mile radius. What can I say? It’s a talent I’ve had all my life. You should have seen MY terrariums in school. They were easy to pick out, they were usually solid brown and mushy. But if you’re not blessed with the oh so desirable black thumb that I have, you may want to consider starting your own little backyard garden. It just might get your toddler eating veggies, and can always make for fun upkeep along the way!

      Boring winter veggies
The other day I was reading about someone who was tired of their winter vegetables. She was saying something about San Diego’s winter vegetables being tired and pale. I can’t think of anything that is further from the truth. Just last week I got crisp cauliflower, yukon gold potatoes, and the greenest sugar snap peas I’ve seen all winter. With all these delicious winter vegetables, I thought I’d put together my version of the Indian classic, Aloo Gobi. This recipe is pretty straight-forward, no fancy techniques, no fancy ingredients. You may even have all these boring ingredients in your pantry already. Maia, thanks for the inspiration Aloo Gobi 1 head cauliflower cut into small florets 2 cups sugar snap peas cut in half 5 potatoes 1 onion chopped 1/2 cup curry powder 1/2 cup oil 2 tablespoons butter red pepper salt and pepper Boil potatoes, skin on, until fork-tender. Remove potatoes and rinse under cold water while peeling the skin off. Chop potatoes and r

The Low-Down On Organic Veggies for Yer Family
Feeding Your Family: Organic Veggies on a Budget"Anybody who's shopped for organically-grown produce has probably experienced the sticker-shock that goes along with it. It's a fact that in most cases organically-grown supermarket produce is more expensive than its non-organic counterpart, but I think a larger number of parents would likely grab the organic stuff if the two were closer in price..."Read More...I'm really lucky to live in the Pacific Northwest, where we have superb access to organic, locally grown foods without expending much effort. But, with the current trend of 'going green' being set by places of such ill-repute as Fred Myer and Wal_Mart hopefully everyone will soon be informed as to the benefits, politics, pitfalls and corporate scams revolving around the food we eat.I would add to this nice little snippet from Strollerderby a few things: Food Co-Ops are a great way to save money, support local agriculture and dine on organic foods without signing on to a year

Sneak More Fruits and Veggies Into Your Diet
In theory it sounds pretty easy. You eat more fruits and vegetables by "sneaking" them into your daily diet without being obvious. But it takes work. One idea is to buy more veggies than usual and leave them out on the kitchen counter so you'll be more likely to include them in your cooking (or snacking).A better idea is to combine them with other foods. Cauliflower can be pureed in a blender and mixed into your mashed potatoes without a noticeable change in texture or taste. Grated carrots and/or chopped spinach can also be added to your spaghetti sauce (in the skillet) with much the same effect. A registered dietician wrote a book last year called, Stealth Health to guide people in this process. It should still be available on amazon.com.

Works-For-Me: Keeping Fruits and Veggies Fresh
Shannon of Rocks In My Dryer, our gracious hostess, has deemed the theme for this week’s Works-For-Me-Wednesday “The Kitchen Edition.” She wants us to share any tip we might have pertaining to the room of the house in which I feel like I spend half of my day . Do we have a clever way to store recipes? An organized way to plan meals? A shortcut on prepping food? Without further ado, here is my contribution. In our house we love eating fresh fruits and vegetables, but I am also lazy because I don’t like to run to the store every other day to buy fresh produce. Not only does doing this take up too much time and energy and create the arena for more potential battles to be fought with two year olds, but it also ends up costing more money. It’s part of the Law of Saving Money. If you can decrease the amount of times you have to frequent a store, you will find there is more money left in your budget. Therefore I tend to buy a lot of fresh produce in bulk

Getting Your Toddler to Eat Veggies
I was on the phone the other day with a friend, and she could hear my son Alex babbling in the background. “What’s Alex up to?” she asked. “Eating lunch. He’s talking to his carrots at the moment.” My response was met with a stunned silence before she squeaked out … “He eats CARROTS???” On the disbelief register it ranked right up there with me saying, “I just won the swimsuit competition for the Miss America pageant.” Well of course Alex eats carrots. Why wouldn’t he? He also eats peas, ham, turkey, pasta, fruits, and occasionally a bite of dog food if I’m not quick enough, but what’s so shocking about that? “My son won’t eat anything except yogurt and mac and cheese.” She confessed this is a stage style whisper, as if we were two CIA agents passing on the street and vital information on the TFO (Toddler Food Operation) needed to be exchanged in a hurry. As a mother to a child

Are your fruit and veggies worth while eating?
The distrubing story appeared in Svenska Dagbladet (Swedish only), my daily morning read. It was about the fruit and the vegetables we buy in the belief they are good for us, and about how these fruits and veggies, colorful as they may be, are so diluted and abused they are hardly worth the effort of chewing and eating them anymore. Many are so low in nutrients and vitamins they would not pass international norms, like the FAO requirements. The paper used a refractometer (Wiki) to measure the sucrose level, Brix, (Wiki) in different fruits and vegetables. A high Brix level means, among other things, that the fruit or vegetables tastes sweeter, contain more vitamins and minerals, won't be as suceptible to spoiling, and will be hardier and thus require less pesticides. A low Brix level may be caused by harvesting the fruit or vegetables before they have ripened, that they have not had enough sunshine, been grown in bad soil, and been reared too quickly. Check the Brix standards and FAO

      veggies and pot pies
I work nights. I’m working while the rest of the normal world is having fun, going out, or just sleeping. These late hours aren’t very conducive to gourmet foods or even take-out, so sometimes I’m guilty of bringing something frozen to work (gasp! The horror!). Yes, even the foodie will partake in frozen, microwaved dinner. Thursday night I brought a pot pie to work. I didn’t completely sell out, it was an Amy’s Kitchen country veggie pot pie. They’re pretty good, organic, and they keep me from the fast food evils of working nights. While I was eating this, I realized I could easily make my own, better version. Friday night, I concocted my own organic veggie pot pie. It only took a few things: fresh, local veggies from the CSA, some leftover homemade quick puff pastry, and a bechamel sauce. The eater ranked it as ‘yumyumyum’. Jef’s Kitchen SD County Vegetable Pie This is my take on Amy’s Kitchen Country Veggie Pie. I used up
