      Chicken, Bacon and Vegetable Soup
      This recipe came about because I had bought 10 very cheap chicken drumsticks, plus had promised I'd bring Rich some soup into the office once I had a flask to bring it in. It possibly wasn't the best soup to take to work in a flask, but it did go down well.I had simply roasted the Drumsticks in my new combination oven for 30 minutes or so, then stripped the best of the meat off them, and put the remains and bones into a large pan of water with some celery leaves, onion, carrot and bay leaves and simmered for a few hours to make a stock. Half the chicken I used a Pasta Bake, saving the other half for this soup.I pretty much did exactly what I did with my Leek and Potato Soup Recipe, only adding Celery and more Carrot than I would normally use, plus the Home-Made Stock, Chicken and Bacon.

      Spicy mixed vegetable soup with prawns Recipe (Gaeng liang goong)
      This is a simple and healthy dish to make. The sauce is a mix of water and vegetables which makes it taste completely different from all the coconut milk curries. Ingredient 1 cup (4 oz) prawns - washed peeled and deveined 2 cups (16 fl oz) chicken stock or water 1 cup (31/2 oz) pumpkin- cut into bite pieces 6 baby corn - each cut into 3 1/2 cup (2 oz) straw mushrooms - cut in 1/2 2 courgettes Paste 2 tablespoons coriander root - chopped 3 tablespoons shallots- chopped 3 tablespoons garlic - chopped 1 big, red chilli - chopped 1/2 oz young green peppercorns 3 tablespoons ground driedshrimps 1 tablespoon white peppercorn 1 cup (3 fl oz) water PreparationPut all the ingredients for the paste into a blender and blend until smooth. Once it is smooth put the paste into a pan along with the chicken stock and bring to the boil. Add the pumpkin and babycorn and cook for 2 minute. Then add the mushrooms and courgettes and cook for a further 2 minutes.Add the lemon basil and fish

      I love this soup. It's rich in flavours. It's like a one pot meal. I think my mother would have love this. Some much food in there. Only thing missing is meat. Cook this and save the hassle of cooking another dish. Yeah, that my mother favourite way of cooking*wink*Ingredients:5 Chinese Mushrooms, soak to soften, sliced or whole10 Button Mushrooms8 Babycorn, sliced100g Winter Melon, diced1/2 Carrot, sliced3 pieces Fish Maw, soak to soften, cut into small size8 Medium Prawns, shelled and devein1 Squid, cleaned and slicedSeasoning:500ml Bone Broth 1 tablespoon Fish Sauce1 tablespoon Chinese Cooking Wine1/2 tablespoon Oyster SauceSalt to tasteCornflour mixture (thickener)How to do it:Blanch squid and prawn and set aside.Bring broth to a boil.Add in fish maw and mushroom.Cook for 10 minutes before other vegetables.Cook till the vegetables soft according to your preferenceAdd in prawns and squids 3 minutes before then end of the cooking process.Add in the seasonings.       Macaroni with Vegetable Soup
      I didn't cook for the adults (me & hubby) yesterday. Kitchen is closed for cleaning. hehehe. But the kids still have to eat. Not cooking rice, soup and all the side dishes. Too much work for just 2 kids.The kids' meal yesterday consist of Macaroni cooked with pork big bone broth and Broccoli and Carrot. Side Dishes are Deep Fried Chicken Drumlets and Seaweed Fish Paste Roll. Not too bad. At least they enjoy it.
