      Truffles by the Sea
Remember the Bug Bunny cartoon Wabbit Season? Elmer Fudd wants to shoot Bugs, but Bugs tricks him into shooting Daffy Duck (repeatedly) by making Daffy mix up his words. A couple of scenes end with Daffy shouting, "So shoot me now, shoot me now!" That's a little bit how I'm feeling today. Yesterday I was able to take it easy, because Mia was home from school with a high fever (again). She's better today, so I took her to school and went into work. The pain was already unbearable before eight am. I don't know if it's the cold weather, or a flare up, or if I caught Mia's virus. I could use a few prayers today. I'm putting on a conference at work tomorrow, and I need to feel much better than I do today.Truffles by the Sea by Julie Carobini is the sequel to the book Chocolate Beach. This story

      Spicy Pistachio Truffles
If you're a chocolate lover, you know there's chocolate and then there's truffles. Chocolate is something you enjoy and share with others. And truffles? Well, lets just say, that truffles turn the best of us into greedy chocolate addicts that hide their stash behind law encyclopedias. If you know of a person who fits that description, then this is your Christmas gift to them.Earlier this week I received my Christmas gift from my friend K. In this wonderful box of sugar delights was a bar of Montezuma's dark chili chocolate. I wanted to use it in a way that would highlight the dark and spiciness of the chocolate. At first, I thought a buttercream for a cupcake would be great. Hmm? No, something better. Then I remembered what K. said, "...the heat slowly builds up as you eat the chocolate". That's when it hit me ...truffles.These truffles are easy peasy. In no time, you'll have a couple of boxes of truffles for the chocolate lovers in your life. The truffle base is a mixture of dar

      Chocolate Cheese Truffles
This is what we made for Teachers' Day. It's Chocolate Cheese Truffles, something easy that can be managed by kids themselves. However, I changed the procedure of my original recipe a bit. Instead of melting the chocolate in a pot over a pot of boiling water, I have the bowl of chopped chocolate in another (heavy) bowl of hot water. I don't want my son to get himself scalded by boiling water as it will be still bubbling. And to keep the chocolate ganache soft for rolling, I have a bowl of hot water at the bottom to act as a 'steamer'.I put the chocolates in a bag and pack them in gift box or attached a tag with it.My son had fun, making the Chocolate Cheese Truffles for his teachers. We have to make another batch again because there weren't any left for us.

Strawberry, honey, truffles, you name it, they’ve got a festival for it!
With start of April starts the onslaught of the festivals for just about every fruit, vegetable or drink you could name. The one problem with them is that you’ve really no idea in advance whether or not a given festival will be a popular one or just a few stalls trying to sell some obscure vegetable. One of the best we’ve been to lately was the strawberry festival at Bellesta which is a village quite close to us but one we’d not been to before. They were lucky enough to hold the festival on a particularly sunny day following some of the last of the Winter rain. Combine that with the Vide Grenier (car boot sale or flea market) and the village was seriously struggling under the weight of traffic and people looking for parking spots on the day. In fact, there were only two small stalls selling strawberries but the other stalls gave a very good representation of the local produce ranging from excellent honey as you can see, through the spicy sausages that you find everywh

Candy Review: Bija Omega White Chocolate Truffles
While in my local health food store I recently spied some new chocolate in the refrigerated section. There, next to the soy salami (that makes perfect sense, right?) sat three types of organic truffles. Bija are organic chocolate truffles proudly boasting that each package (containing 4 truffles) has 6g Omega3 and 3g Omega6 fatty acids. Ahhh, I see a “health” chocolate here! There’s three flavors in all: Milk Chocolate with hazelnut filling, 70% Dark Chocolate and White Chocolate with maple filling. Being a dedicated chocoholic I decided to go for the most non conventional of the three: the White Chocolate. I figured if Bija does their white chocolate well, the others should be delicious too. The truffles are large, each about 16g and 1 1/2 inches long and 1 inch wide and feel quite heavy in your hand. The back of the package claims the ratio of the two omega fat types (2:1) to be “ideal”. The chocolate is made from Peruvian cocoa butter and Madagascar va
