      2 carrots 1 onion 2 garlic cloves 3 cans cream of chicken soup 6 c. water 1 tsp. oregano 1 tsp. basil 1 pkg. boneless chicken breasts, cut into bite-size pieces 1 bag cheese tortellini 2 boxes frozen broccoli Cook chicken in small amount of oil. While meat cooks, chop vegetables and open cans. Add all of the above ingredients to large kettle except for the tortellini and frozen broccoli. These 2 ingredients you add the last 10 minutes or so before serving so that they are not over cooked. Simmer the other ingredients for an hour or however long you like. Soup tastes great with freshly grated Italian cheese and a loaf of Italian or French bread.

      We have had some unseasonably warm weather as Fall officially starts, and an awful lot of rain too; in fact, recent rains in the past week have all but wiped out our annual rainfall deficit and exceeded it by nearly two inches. September is quickly coming to an end and the trees are turning glorious shades of golden, amber and red. As hard as it is to see Summer end, Fall holds its own culinary treasures and wonderful eats too.       Tortellini with Rocket Lettuce Salad
      Cook 250g tortellini (choose a filling you want) following the pack instructions. Toast 30g pine nuts in a dry frying pan. Finely chop 6 sundried tomatoes. Add in a bowl 75g rocket lettuce, the sundried tomatoes, the toasted pine nuts and some grated cheese. Toss it a little. Serve the tortellini over the rocket lettuce salad and if you like it just scatter some grated cheese over it. Enjoy!

      Okay this recipe wouldn't by any standards be considered gourmet--I'm sure Martha would turn her nose up at it. But it's easy, it's healthy, it's tasty and everyone loves it.       Tortellini con salsa de espinacas y gorgonzola
      Os recomiendo este plato, esta muy rico.Ingredientes: tortellini frescos,1/4 de cebolla, hojas de espinaca( un puñado), 50 gr de gorgonzola, sal, pimienta, 300 ml nata liquida, mantequilla y aceite de oliva.Elaboracion: En una ollita, fundimos la mantequilla(una nuez) con la misma cantidad de aceite de oliva, rehogamos la cebolla bien troceadita, y las espinacas picadas, cuando veamos que esta sofrito, mas o menos en unos 4 minutos, le añadimos la nata liquida, y el queso gorgonzola removiendo bien para que se deshaga el queso,salpimentamos, y dejamos cocer unos cuantos minutos, retiramos del fuego.Hervimos la pasta, que en agua abundante con sal, hirviendo, estaran en unos 5 minutos.Emplatamos los tortellini y añadimos la salsa por encima, acompañar si se quiere con queso rallado, aunque en este caso yo no le pongo para apreciar bien los sabores.
