      This came from Taste of Home Quick Cooking Collectors Edition.Ingredients2 cups whipping cream1/2 cup caramel ice cream topping or butterscotch sundae sauce1/2 teaspoon vanilla extract 16 ounces angel food cake mix (prepared)12 5/8 ounces Heath candy bars , choppedDirections1In a mixing bowl, beat cream just until it begins to thicken. Gradually add the ice cream topping and vanilla; beating until soft peaks form. Cut cake horizontally into 3 layers.2Place the bottom layer on a serving plate; spread with 1 cups cream mixture and sprinkle with 1/2 cup candy bar. Repeat.       The sweet-sour flavor of this pie makes it a favorite. I have a couple of redcurrant bushes in my garden - cultivated mainly for jams and jelly. However, I find freezing a great way to save some packages of fresh berries and have them for a pie in winter. You can substitute the redcurrants with some other sourish fruits available.       English Toffee Brownie - 6 servings10 tbsp egg substitute1.5 cup Splenda3 tbs butter substitute (Brummel and Brown is good)1 tbs corn meal1/3 cup evaporated fat free milk1 tsp vinegar1.5 tsp vanilla extract2 pckge vanilla protein pudding/shake1/2 crushed 'Nilla WafersCrush 7 Nilla wafers.       There’s nothing like having a food blog to motivate you to make something new. Add to that my promise to make my own mocha roca two weeks ago and I had to deliver. Originally inspired by leftover ingredients from my 2006 candymaking marathon and Brown & Haley’s Mocha Roca, I searched for a coffee toffee recipe online without much luck. Other candies I make with coffee flavor utilize espresso powder, so I figured it made sense to use some here, too. I noticed some coffee flavored candies also use real coffee or espresso, so after a trip to Starbucks for a couple shots, I was ready. On my web search, I did come across Shaymee’s Dark Chocolate Espresso Toffee, which had no almond coating but was covered in milk chocolate stripes, similar to decorations I do for dipped caramels and truffles. Given that part of the reason I was making toffee was that I had leftover chopped almonds from the holidays, I compromised and only coated one side of the toffee with almonds. I t

      Toffee Pudding Cake
      An excellent, tasty dessert for the holidays.Quick and easy. 1 ¾ cups dates, pitted and chopped1 teaspoon baking soda1/3 cup butter¾ cup white sugar2 eggs1 1/8 cups self-rising flour¾ cup packed brown sugar1/3 cup butter2/3 cup evaporated milk1 teaspoon vanilla extract1/4 tsp almond extract1 ½ cups boiling water to cover Preheat oven to 350° F. In a small bowl combine the dates and baking soda. Pour enough boiling water over the dates to just cover them. Cream ¼ cup plus 1 tablespoon of the butter with the white sugar until light. Beat in the eggs and mix well to combine. Add the flour and date mixture (including water) to the egg mixture and fold to combine. Pour the batter into one 8 inch round baking pan.Bake at 350° F for 30 to 40 minutes. Let cool, slice and serve with warm caramel sauce.
