When we moved into our new house last November, we liked everything in the house except electrical outlets in the kitchen.The kitchen counter had only two outlets but we needed more. We have a coffee maker, microwave oven, food processor and a toaster. This is a very quick snack that I made over the weekend, perfect with a Saturday morning (hangover!) coffee. It reminds me of that cinnamon toast crunch cereal as well, but has a decidedly high class almost French pastry taste and feel about it. Our first year here, Ray took it upon himself to find the best tasting recipe. We tried many recipes, and tweaked and tasted (it’s a tough job, but someone has to do it!) until he came up with one he considers to be the best. He labels it "Gringo" Coquito. When we bring it to parties, there’s always a comparison of the different homemade Coquitos, and ours is usually judged a winner.

12 fresh uncooked large shrimp1 egg2 1/2 tablespoons cornstarch1/4 teaspoon saltPinch pepper3 slices sandwich bread1 hard−cooked egg yolk1 slice cooked ham (about 1 ounce)1 green onion2 cups vegetable oil1. Remove shells from shrimp, leaving tails intact. Remove back veinsfrom shrimp. Cut down back of shrimp with sharp knife. Gently pressshrimp with fingers to flatten.2. Now this used to be my another favorite Omlette types. This one being directly on the bread! As a kid, I used to love the aroma of roasting bread with egg on it, it used to be heavenly! Amma used to make this so often, still we never got bored. We always had the sweet ones of course, but I made the spicy ones for hubby dear, which he said tasted very good too. I made this version of French Toast using the remaining ripe red plum tomatoes from my garden and picked the remainder of my neighbour Larry's ripe yellow plum tomatoes (we alternate!)on the weekend before we called it a season. Last weekend, I attended a corporate dinner party with a few of my colleagues. Having successfully implemented a new service offering from MGL, we decided to celebrate with a few drinks and a whole lot of exotic culinary dishes! Being the designated teetotaler, I was halfway through with my glass of brightly coloured fruit punch when one of my colleagues hinted that I needed to raise a toast.
Ten seconds later, there I stood with yellow stains on my shirt and a silly expression on my face. I am not too much into physical humour, so this was purely unintentional. But gathering from the laughter that resounded in the restaurant, I got the feeling that the humour wasn’t lost. What happened was that I tripped on the chair and spilled the drink on myself while making the toast. I didn’t know whether to stand or sit, but I certainly knew that ending up licking the carpet is not the way to go!
This embarrassing incident urged me to fine tune myself on how to raise a toast. So back I went
I was really tired yesterday, and couldn't think of anything to cook. But I didn't even have enough energy to go out and eat. So here's what we had for dinner. Yes, Bread again, but colourful and tasty, and so very healthy! Ingredients:Bread slices, shredded carrots, shredded lettuce or cabbage, chopped spring onions, 2 green chillies finely chopped, tomato ketchup, shredded white and yellow cheese, butter, green chutney(optional), salt and black pepper to taste, 1 small tsp garlic paste (optional)Method:Add the garlic paste to the tomato ketchup. Arrange the bread slices on a baking dish (pizza dish for oven) and apply butter and a layer of green chutney and/or tomato ketchup on them. I nearly tore a rotator cuff patting myself on the back here a while back for calling SYNL toast right before it dropped an additional 50% (and counting) in around 6 weeks. I watched it fall and fall and fall! Behold my idiocy: HOC had been a regular on the IBD 100 for a while when it finally closed below its 50 day moving average on 7/24. Looking back on the chart now it's pretty obvious that the uptrend was likely over for a while when HOC closed below that significant moving average on such big volume. 12 fresh uncooked large shrimp
1 egg
2 1/2 tablespoons cornstarch
1/4 teaspoon salt
Pinch pepper
3 slices sandwich bread
1 hard cooked egg yolk
1 slice cooked ham (about 1 ounce)
1 green onion
2 cups vegetable oil
Remove shells from shrimp, leaving tails intact. Remove back veins from
shrimp. Cut down back of shrimp with sharp knife. Gently press shrimp with
fingers to flatten. Beat 1 egg, cornstarch, salt and pepper in a small
bowl until blended. Add shrimp to egg mixture and toss until shrimp are
completely coated. Remove crusts from bread. Cut each slice into quarter.
Place one shrimp, cut side down, on each bread piece. Gently press shrimp
to adhere to bread. Brush or rub small amount of egg mixture over each
shrimp. Cut egg yolk and ham into 1/2 inch pieces. Finely chop onion.
