A few days ago I made a gorgeous cheesecake and popped it into the freezer to take to my parents this weekend for Easter. Yep... it's a 'holiday' again and time to pack up the kidlets and the Boyfriend of Kat, and head up to the land of extended family for an Easter Egg Hunt (I have the eggs bought and stuffed already) and a big meal. This is third (and final) day of photo sharing for this week. (Day 1 was photos of my new tattoos, and yesterday was Halloween 2007). After being out of town for most of the past two weeks, I'm back at home for a bit, so I can catch up on my blogging.First, some pics from our Thanksgiving dinner. Since there was only two of us, we made a small-ish (12 lbs.) turkey. Instead of doing something overly complicated, we simply put some compound butter under the skin, stuffed some aromatics in the cavity, and roasted the bird, basting it periodically with butter using my mom's tried and true technique. We ended up with this:The sides (clockwise from the upper left): baked squash hotdish, bread stuffing, braised leeks, and cranberry compote.To go along with dinner, we had a bottle of 2006 Peju Sauvignon Blanc. She was lost and showed up in the road in front of our house near Athens, Georgia yesterday. I kept looking outside and hoping she would travel on down the road, but when she almost got hit, I had to do something! So into the house she came while my son Chris and his girlfriend Megan and her friend Amanada canvassed the neighborhood and put flyers up at the nearby stores - Is this your lost dog?
We have 5 dogs in our family and she was so small and quiet I knew she wouldn't be happy here. She seemed really dismayed by the hustle of bustle of living with 4 kids, 5 dogs, my loud husband, and who knows how many cats....but at least she was warm and safe. We posted her on facebook marketplace, checked online lost dog ads, searched the newspaper, to no avail. But this morning a call to the Clarke County Animal Control led to 1 lost dog inquiry that might be for her!

Yes, still....a week later! My body is feeling the effects of my 4 day weekend of complete decadence. I went for a run last night and thought I was gonna DIE. lol I haven't felt like THAT in a while! But then, it all boils down to what I put in my body....Your food is your fuel, remember? Apparently the body doesn't run quite as well on half a pan of baked macaroni and cheese, ham, dressing and heaping plates of rice, beans and potato salad. Hmph! Who knew? lol. I did, of course, but I still had my fun. Tonight I will take another run, and hopefully this one will be better than the last. Also, sometimes your body just has a bad exercise day. I was rocking some fierce aerobics on Tuesday, and was full of energy. After teaching two classes, I was still bouncing. But the next day....not so much!I'm looking forward to the challenge of an extra mile this evening. Well, not really. lol.
Well, it's been more than a month since I re-injured my knee and been off my weight loss, diet and exercise routine. Parties, get together with friends, and holidays didn't help. (Yes, I've gained back some of the weight I lost.) But I go under the knife - well, the orthoscope - tomorrow. Then it's recovery and probably physical therapy, which means finally being able to (slowly) work out again.
And I'm looking forward to it.
Exercise has helped me feel better physically, especially my back and hips. I slept better, too, when I was able to work out. Since I haven't been able to exercise - though hobbling around can be extremely exhausting - my insomnia is back. And gaining some weight back makes me uncomfortable in my skin. Here are my goals for the next few weeks: Get back on the Extreme Fat Smash/Celebrity Fit Club diet starting Monday. This should give me enough recuperation time so I'm able to cook up things for myself as well as make a grocery run. As soon as I get t

...So, here's the rest of my Thanksgiving meal wrap-up...The turkey was fine. But I went against my ironclad rule of No Turkey Over 20 Pounds, because my young man picked it up for me at Whole Foods. I told him as close to 20 pounds as possible and when he found a 20.98 pound turkey, I didn't argue. I was just glad that he didn't come home with a ham or chicken fingers. I don't care what anyone says that extra bit of weight DOES make a difference. It makes the turkey heavier and hotter and more difficult to maneuver. It also took a bit longer to cook than I wanted, so before it was done, I scooped out all the drippings and veggies from the bottom of the pan (not that easy) and strained them to start on the gravy. The good thing about THAT was that, when it was done, H could turn over the turkey in the roasting pan and let it sit THERE, covered, instead of having to moving it onto a board.I wasn't loving my gravy at first, but after massive whisking and tons of boiling and the addi
Several days of dreary rain, fog and chilly weather drained me of the energy to perform all the household duties, start shopping for Christmas and participate in Thanksgiving. Good news is that the turkey and dressing were both moist and delicious. It's never a good thing to turn out a feast that's dry and unappetizing because the lack of quality is remembered until the next time that you do turkey with all the fixings. I think I found the answer to a beautiful bird worthy of a Martha Stewart photo shoot: basting. Yes, indeed there are multiple benefits to pulling that heavy roaster in and out of the hot oven for three hours every thirty minutes or so. Other than burning my knuckles on the rack during the process, I believe that to baste is indeed best. I had read that the food that is in magazine photographs is virtually inedible because it is not actually cooked to eat. The recipes are created to look sharp, not taste good. All 22 of us had a wonderful meal, good company, lots of football watching and Wii-playing.Clif is not too happy as his Yellow Jackets didn't sting the Dawgs this weekend for the 7th year in a row. Now that Thanksgiving has come and gone, hopefully leaving all my readers full of good food and appreciation for all they have, the season moves toward Christmas. My holiday months are always a matter of time management. Finding time for work and play becomes increasingly difficult when all the extraneous holiday details need to fit into my schedule. There are hours of shopping, parties, baking, dinners, in addition to all the other everyday responsibilities that do not go on hold just because of the holidays. One of the most important responsibilities I have is caring for my doggies!
Since the weather has dropped to right above frigid and daylight is limited to early evening, my crew’s activities have changed slightly. My Aussie, Bear, doesn’t mind the cold weather and will walk or play for as long as she can. Wednesday (Nov. 21) - I attended Hope Chapel's Thanksgiving Eve Service. Hubby was sick so he stayed home and the kids stayed home with him. Part of this Thanksgiving service is an open mic session when the congregation is encouraged to share to express their thankfulness in front of the congregation. Every year I go up the stage to give thanks and praise God. I t's interesting that as shy as I am, I love doing this. I look forward to going on the stage to express my thankfulness to God. I was not microphone shy at all. Towards the end of my sharing I told the congregation "now, I want to close this sharing by singing a song...." Everyone got quite ... very quite...waiting... and then I giggled and said "I'm just kidding...". I heard laughter! Did they really think I was going to sing? hah! My five day vacation from work is quickly dwindling away and within hours I'll be in bed awaiting sleep only to find myself filled with dread at the upcoming workweek. I suppose I could call in sick tomorrow, but that would only be prolonging the inevitable.Instead, I'll finish cooking my Thanksgiving meal and while waiting to watch my Sunday night shows I'll do a little bit of homework - just to give me a sense of accomplishment. We’ve had a wonderful Thanksgiving. It has been delightful to have a full weekend in which to savor these times, fleeting though they may be. I only wish we had a houseful of cousins, aunts and uncles and far away friends to make the day truly complete.
Our internet connection is slow and sludgy out in the country and I’ve been having trouble loading my pictures. By the time I grab my email and read a few notes, the evening is half over and I’m exhausted. I’m beginning to suspect I’m not a real person without my high speed internet and the blog. With investors hopeful that retailers fared better than expected on Black Friday, one of the most important days of the year for store sales.
Expectations for this holiday season have been lowered following drops in consumer-confidence surveys.
“The consumer-confidence readings, they’re just numbers from surveys,” said Paul Mendelsohn, chief investment strategist at Windham Financial Services. “But now we’re finding out what consumer spending is really like, so the weekend numbers will be very important for the market.”
“I think the market is deeply oversold,” said Al Goldman, chief market strategist at A.G. Edwards in St. Louis. “The averages are all down a little over 10% since October [and] gloom is so thick, you can cut it with a knife. This is just the environment that you see at a short-term bottom.”

As I drove home from the second of our family’s Thanksgiving meals, I was struck by the fact that I hadn’t given thanks for much of anything. WOW, on a day that the US is supposed to collectively express gratitude for everything in our lives, I hadn’t let the spirit of the Thanksgiving change me. I was so wrapped up in the business of the day that even the prayers of Thanksgiving before meals went in one ear and out of the other.
I would love to blame the whole thing on allowing myself to be too busy, but if I am honest with myself, I am not a grateful person. Not ungrateful to the point that I abuse the blessings I have been given, but ungrateful in a “I just don’t think about it” way. I can try to justify it with soft words, but ungrateful is ungrateful.

Thanksgiving Day has come and gone, and I hope that everyone had a wonderful holiday. My wife and I had a great time visiting family. We spend Black Friday on the road coming home from our visit with family - but we wouldn’t have gone shopping anyway.

Thanksgiving is a great food holiday. It's a wonderful feast that brings family together but then everyone stresses out about what to do with leftovers afterwards. The Dallas defense made a statement Thursday about all of the recent criticism it has been receiving by absolutely shutting down Kellen Clemens and Jets offense allowing the Cowboys to cruise to an easy 34-3 win. I have to say that it appears both Terrence Newman and Greg Ellis are completely healthy after Ellis’ two sacks and many tackles and hurries and Newman’s 50-yard interception return for a touchdown.
Dallas came out of the gates strong agains, scoring a touchdown on their opening series, a 67-yard drive capped by a 7-yard Marion Barber touchdown run. They then caused and recovered a fumble on the subsequent kickoff, but on the next play, Romo underthrew Terrell Owens in the end zone and got intercepted. That's right. This week (a whole week) was Thanksgiving Break at school. The problem with that is, I had lots of homework and an invitation to work every day this week. Across the street, we watch a couple of weekend warriors work to rehabilitate a house. The house is of a rather pedestrian design (to borrow a phrase from Val) meaning it is simple, a working-man’s house. Two rooms upstairs, two rooms down with a shotgun hall on the left hand side. Our former neighbor, Jasper, lived there his entire life and had inherited the house from the aunt who raised him when his parents were killed in a tragic train wreck in Kentucky in 1932. Jasper married a few years ago, moved into his new wife’s house. He decided to sell the house about six months ago, put a price of $93,000 on it and sold it in two days.
