      We are right smack in the middle of Philippine summer. It is so hot it's a task to even lift a finger. Last night I decided to make tacos. I bought some soft tortillas, taco shells and ground beef. I set about doing my cooking in my kitchen. Alas, my kitchen has no air conditioner.While browning the ground beef, I crushed some garlic cloves, diced onions and readied my chili powder.       This morning I fried up some potatoes and scrambled eggs. Yummy! Breakfast tacos. Well, in my sleepy stupor I managed to splatter some olive oil on my shirt. I'd piled my toppings on these babies and was headed out the door when the little quiet voice in my head said, "Take a picture, fool!!"... so I tried to push some of the lettuce and cilantro out of the way so you could see the actual filling...       My husband spent may years living in San Diego, and has been talking about the fish tacos for as long as I can remember. Never having had one, I wasn’t really sold on the idea, but since I’ve decided to introduce a weekly seafood meal into our diet, I decided to check it out. The first problem was that there are about 50 different ways to make them. Steamed fish, baked fish, pan-fried fish, deep-fried fish, different sauces, different veggies…so I asked Rob to spin me his most detailed description of the fish tacos from San Diego.       Oh no. Just when you thought tacos weren't "sexi" enough.This made me spit out my water when driving down Whittier Blvd. It was a hot day and we were on route for some refreshing raspados(mexican shaved ice) and it wasn't a taco day but who can say no to el guero sexi?So me and my lady friend walked up to the truck and peered in. Inside the truck were two mexican dudes, one at the grill and the other taking the orders."Where's the guero" she said"shh that's rude" I told her"I don't see a guero in there."I ordered two tacos, one asada, one al pastor. With still no guero in sight my tacos came through the small pick up window.       Grouper Tacos in Lettuce Wraps
      2 pounds grouper fish fillets Cooking spray Salt and pepper 1 lime Hot sauce Bib or green leaf lettuce leaves, for wrapping 1 jalapeno, seeded and chopped 1 cup cilantro leaves 3 sprigs fresh mint 3 tablespoons grainy mustard 2 tablespoons red wine vinegar 1/3 cup extra-virgin olive oil 1/2 red onion, finely chopped Heat grill pan or nonstick skillet over high heat. Spray the pan with cooking spray. Place fish on grill, season with salt and pepper and cook 5 minutes on each side, until opaque. Arrange lettuce leaves on a platter. Place jalapeno in a food processor with cilantro, mint, mustard and vinegar. Turn processor on and stream in oil. Season sauce with salt and pepper. Take the fish off grill and place on a serving plate. Break the fish into chunks and squeeze lime juice over fish. Add a few dashes hot sauce to the fish. Pile fish in lettuce leaves and top with sauce and chopped red onions.

      Shrimp Tacos with Mango Salsa
      1 large red onion, sliced (1/4 cup, minced) 2 or 3 ripe mangos, peeled and diced 1 jalapeno pepper, minced 1 or 2 teaspoons dried cilantro (or 2 tablespoons fresh cilantro), chopped Juice of 1 lime Combine 1/4 cup minced onion, mangos, pepper, 1 teaspoon dried cilantro and lime juice. Shrimp filling; 1 1/2 pounds medium shrimp, peeled and de-veined with tails removed juice of 1 lime rest of red onion, sliced 1 red pepper, sliced 1 green pepper, sliced salt and black pepper to taste 3 tablespoons olive oil 2 or 3 cloves garlic, minced dash of hot pepper sauce In a heavy skillet, heat olive oil. Saute onion and peppers about 3 minutes. Add shrimp, garlic, remaining cilantro, salt and pepper. Cook until shrimp turn pink (about 3 minutes). Stir in lime juice.

      Shrimp And Poblano Pepper Tacos
      2 poblano peppers 4 flour tortillas (6-inch) 2 teaspoons olive oil 1/2 cup chopped onion 2 ounces lean ham — cut into strips (about 1/2 cup) 3/4 pounds peeled and deveined shrimp 1 teaspoons lemon juice Salt and freshly ground pepper 2 tablespoons chopped cilantro 1 recipe Pinto Bean Salad Heat broiler. Place peppers on a foil-lined tray under the broiler for about 3 minutes per side, until skin is charred. Meanwhile, wrap tortillas in foil and place on bottom oven rack to warm. When peppers are cool enough to handle, discard charred skin and cut flesh into strips, removing seeds. (Turn off broiler but leave tortillas in oven.) Heat oil a nonstick skillet over medium-high heat. Cook onion and ham 2 minutes. Add shrimp and cook 3 minutes. Toss with lemon juice and salt and pepper to taste. Sprinkle with cilantro. Divide shrimp mixture and pepper strips among tortillas, folding in half in a taco shape. Makes 2 servings.

      Beer Battered Fish Tacos
      5 Tablespoons Flour 1/4 Teaspoon Cumin 1/4 Teaspoon Oregano 1/4 Teaspoon Salt/Pepper 1/4 Teaspoon Cayeene Pepper 1/2 Cup of Beer 1 Lb. of Grouper, Cut into 1-by-2-Inch Strips 4 Teaspoons Canola Oil, Divided 8 Soft Corn Tortillas, Warmed In a medium bowl, combine flour, cumin, oregano, salt, and cayenne. Whisk in beer to create a batter. Place half of the fish pieces in the batter and turn to coat. Heat 2 teaspoons of the oil in a large nonstick skillet over medium-high heat. One at a time, pick up each piece of fish and allow excess baatter to drip back into the bowl. Add the fish to the pan, placing each piece into a bit of the oil. Coat the remaining fish pieces with batter and fry in the remaining oil. Adjust heat if necessary for even browning. Serve immediately with warm corn tortillas. Dress up with lettuce, tomato, onion, or any other condiments you like.

      Summertime in LA.Tacos are good year round but they seem to have an extra bite in them when it's hot out and you have an ice cold beverage in hand.I was on my way home from Fry's Electronics in Manhattan beach when my stomach started to growl.       Ingredients: 1 can Tuna 1/2 jar Salsa Mexican Cheese Whole Wheat Tortillas Directions: Heat Non-stick grill. Mix can of Tuna with Salsa. Dip Tortilla in water to soften.       Greetings taco lovers! Contrary to rumors within the taco community I did not get food poisoning from a taco truck and die. This rumor was circulating within the underground taco scene and even I started to believe it. But my immune system is too strong from years of outlaw eating to worry about food poisoning. I’ll probably die one day from getting hit by a runaway taco truck though.So where have I been? I put myself on a self imposed 40 day taco exile. I checked into the gym to train and get in tip top shape for the summer taco season. Eight months of taco hunting and weekend binge drinking had slowed down your humble taco correspondent so I put myself on an extensive training regimen.
