This morning I wanted to share this recipe with you but I had to make a decision. I didn't take a picture of the finished product last night before I served them for dinner so I had to decide whether to post the recipe sans photo or do go to the refrigerator and dig out the leftover chicken and take a picture of it even though it won't be pretty like they were last night?

1/3 C pine nuts3 cloves garlic, minced1/3 C fresh cilantro, packed leaves, chopped1/3 C fresh basil, packed leaves, chopped1 T lemon juice1 C tomato, chopped2 T Braggs or to tastePut all ingredients into a food processor, except the tomatoes, and pulse chop several times. Stop to scrape down the sides and repeat. Add the tomatoes and continue to pulse chop until just blended. Keep a texture to apesto, it should not be a puree. Remove stems from mushrooms and stuff the filling into the cap of the mushroom. Place on a dehydrator sheet and dehydrate at 105 degrees for 2-4 hours.
What a treat I have for you today! This delightful stuffed vegetarian roast has a combination of flavours that don’t outplay each other. Although, I didn’t have this as a special occasion, I already think this would be ideal as a Christmas luncheon coming up or what about Easter Sunday or Thanksgiving for the Americans?
In Australia, Sanitarium make these Vegetarian Roast but I’m sure there would be an alternative in most countries! If not, I’ve thought of making stuffed tofu or stuffed gluten instead. It would certainly go well with those also!

EB and I spent Thursday morning in the bed watching the parades and then we went to my aunt's house for dinner.
