Of course, I had to choose to do these in the time span of just a few weeks and using an entirely new medium, Chroma Interactive Acrylics!! Eli is going shape crazy. He wants nothing more than to hold a triangle, square, circle and star in his hands at all times. Everything he looks at is just another shape. He loves it and now everything is shape centric. Before bed we were playing and he was asking me to draw shapes. Diamonds are his favorite followed by stars and circles.
Using is Magna Doodle he tries so hard to make shapes and has successfully made a diamond, triangle, circle and many other shapes. I draw one, he erases and tries to draw the same shape. He even asks me to draw him, mommy and the dog. Give him some crayons and he can color for hours at a time and he is getting really good and staying on a single page and coloring all the pages. The other day he pulled out a crayon and said it was grey, like the color of the clouds (we had a bit of rain that day and the clouds were menacing).

Today is day four of the Reject Pantry Project, and I went for the can of whole cranberry sauce. I found a recipe for Oatmeal Cranberry Squares on Cooks.com. They are very easy to make, and while I found them right on the edge of cloyingly sweet, everyone else liked them. Bottom line: I used up a WHOLE Reject Pantry Item, and I made something that tasted pretty good. I might be inclined to leave out the pineapple and/or add some orange zest to the filling mixture next time, for a little more complexity.
OATMEAL CRANBERRY SQUARES

FILLING:
1 (#1) can whole cranberry sauce
1/2 c. crushed pineapple, drained
1/4 tsp. salt
Combine all ingredients for filling.
TOPPING:
1 1/2 c. quick oatmeal
1 1/2 c. flour
1 c. brown sugar, packed
3/4 c. butter
1/4 tsp. soda
1/8 tsp. salt
Crumble remaining ingredients. Place half of crumbs in an 8 x 10 (or similar size) greased pan. Spread with filling and pat on remaining crumbs. Bake 25 minutes at 400 degrees. Cool and cut into bars.

Don't ask me why these guys are called Congo Squares, it's a recipe my mother made while I was growing up and was never questioned. Why are cookies called cookies?I have made batches with butterscotch chips in place of chocolate and found the results to be highly satisfying.Oh, and they're best eaten fresh from the oven--but of course you knew that.2 ¾ c flour2 ½ t baking powder½ t salt2 ¼ brown sugar2/3 c shortening3 eggs2 t vanilla1 package chocolate chipsMix the flour, baking powder, salt and brown sugar in a large bowl. In a small pan on the stove or in a glass bowl in the microwave, carefully melt the shortening and add it to the dry ingredients. Stir the mix well and let it cool slightly. Add the eggs one at a time, beating well after each addition. Stir in the vanilla then add chocolate chips.
