After 5 minutes of cooking place the smoked sausage on top of the potatoes to heat the sausage. Melt in a pan a knob of butter and slowly heat the 450g deep frosted curly cabbage on medium heat.       Smoked Pork Loin, Leek and Gorgonzola Pasta
      It's been quite a while since I posted a video but now I am back, this time cooking a Swedish inspired pasta dish with smoked pork loin which is a common ingredient in the Scandinavian Cuisine.Episode 10: Cooking Smoked Pork Loin, Leek and Gorgonzola Pasta. Smoked Pork Loin, Leek and Gorgonzola Pasta Recipe4 smoked pork loin slices, 1" thick1 leek 10 baby bella mushrooms1 cup peas1 1/4 cup Creme Fraiche (substitute with sour cream if not available)3 oz crumbled Gorgonzola1 lb Penne pasta (or any other shape you might want to use)Start by boiling up plenty of water in a large pot to cook the pasta. Cook the pasta according to directions. In the meanwhile cut the pork loin across in thin strips and then cut in half, to half the length. Slices mushrooms and cut leek in 1/2" slices across. Saute the leek and mushrooms in butter in a frying pan on medium high heat for about 5 minutes until they soften and start to brown. Add pork loin and peas and saute for 1 minute.       Earlier this week while shopping with our Foreign Exchange Student, we were in an electronics store and at the check out counter, on a clip-strip there were thin packages of beef sticks for sale. I heard our exchange student laugh so I turned around and he was pointing at the beef stick with a confused look on his face and a grin. Apparently they don't sell those in France. I sure am glad we sell them here!Because of America's history, beef jerky has been around as long as the American Indians have. Cowboys, trappers, hunters and families travelling to new homesteads found it was a great way to preserve their meat and it was light to carry. Growing up, my family always ate it because it tasted so good! When my mother was going through chemo and radiation treatments for Breast Cancer a few years ago, beef jerky was one of the few foods she really liked to eat. We were happy to find something she could keep down that also gave her some protein. At the time she didn't want any

      Smoked Southwest Chicken Marinade ©
      This marinade is not overpowering and provides a nice Southwest flavor. Tequila Marinade 1/3 Cup Oil1/2 Cup Lime or Lemon juice1-2 Diced jalapeno or habanero peppers1/4 Cup tequilla2-3 TBS chopped cilantro4 Cloves chopped garlic1/2 tsp salt1 TBS cumin1 tsp rubbed sage1/4 tsp fresh ground pepper Place chicken in a sealable bag and add marinade. Seal, shake around a few times during the refrigeration period of 2-4 hours. Prepare the charcoal, and pre-soaked mesquite chips. Place chicken pieces on grill half way up the BBQ'er. Then thoroughly cook, slice in strips and arrange attractively on a plate with a cilantro garnish.       My son placed the weirdest order on Tuesday for yesterday's dinner. He wanted Smoked Salmon and Wakame. Huh?! *Scratch head* What a combination! Is it a test for me or what?
