      Roasted Potatoes with Garlic and Rosemary
      The other day, I did BBQ Ribs for dinner and I made potatoes to go with it. The ribs were flavourful and it goes really well with these potatoes.Seriously, I could eat the potatoes alone. It's really nice and quite filling too.Ingredients:4 fist-sized Potatoes, scrubbed cleaned and cut in chunks.5 glove Garlic, lightly crushed2 tablespoon Olive Oil2 teaspoon Dried Rosemary1/2 teaspoon Garlic Powder (optional)A pinch of SaltA dash of Ground Black PepperHow to do it:Mix everything well in a oven proof dish or alternatively, put everything in a ziploc bag and shake to mix well before pouring out to the dish.Roast in 200C oven for 1 hour or till potatoes are tender.Remove every15 minutes to give it a stir so potatoes at the bottom of the dish are roasted too.Sprinkle additional salt and pepper

      Rosemary and roasted garlic mashed potatoes
      I love to make things with my home grown herbs. This is one recipe I am very very fond of and I wanted to share is with everyone who reads this blog. Its also low calorie by the way so you don’t have to worry about it ruining your diet and because it uses instant mashed potatoes its very quick also. 1 head roasted garlic (recipe included) 1 instant potatoes to serve 8 1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary 1 tsp olive oil Heat your oven to 350 degrees. Cut the top off of your head of garlic and drizzle lightly with olive oil. Wrap in tinfoil and bake in your oven for 45 minutes. While this is baking mix up your potatoes and chop your rosemary so that its very fine. If its dried you won’t be able to chop it, just grind it up in a spice grinder to a powder. When the garlic is done take it out of the oven and squeeze the roasted cloves out (don’t burn yourself) and mash them into a paste with a fork (that parts really easy).

      Pasta with Ham, Pine Nuts and Rosemary Sauce
      I'm not sure what happened. The clock ticked Autumn, and all we've had to eat since is pasta. Pasta pasta pasta.       Rosemary Roasted Leg of Lamb
      Ingredients2 tsp. fresh ground pepper1 Tbsp. kosher saltOne quarter cup fresh rosemary, chopped2 cloves garlic, mincedOne quarter cup olive oil1 5-pound leg of lambOne quarter cup red wine2 Tbsp. shallots, chopped2 cups chicken brothCombine pepper, salt, rosemary, garlic and olive oil and stir. Coat leg of lamb with mixture and marinate in the refrigerator for several hours or overnight. Preheat oven to 425 degrees. Place lamb on a wire rack with roasting pan underneath. Roast lamb for 15 minutes. Add wine to pan and roast another 15 minutes. Reduce heat to 350, add shallots to roasting pan and continue roasting, basting every 15 - 20 minutes until lamb is done to your liking. The lamb will take an hour or more to cook but should read at least 130 degrees on a meat thermometer for rare meat. Remove lamb from oven. Skim off fat from roasting pan, add chicken broth and stir.       Rosemary Lamb on Grilled Polenta
      This week I decided to experiment a little with one of my Aussie favourites - BBQ Lamb on Grilled Polenta with Fresh Spinach Leaves. Grilled polenta is one of my favourite dishes. You can use it in place of bread, as a pizza base, in place of potato or just by itself. One of the key things I have learnt since making this dish is that you should use butter and parmesan to help bind it together and give it more flavour. Polenta by itself can be a little plain, so the added flavour of butter and parmesan really helps. You can also add salt, pepper and herbs to the mix, for added taste. BBQ Lamb, Chicken, Beef or Chorizo? I have tried this dish with all of them and my favourite combination would have to be lamb and chorizo. It has a lovely flavour and the contrasting colour of the red chorizo against the yellow polenta and green leaves really adds to the presentation.       Grilled Lamb and Onions on Rosemary Skewers
      Lamb, garlic, and rosemary are a perfect blend. I'm not sure how easy it is to find the rosemary skewers in the U.S.,but they can be ordered over the internet primarily from Australia where rosemary is grown in huge amounts for both domestic use and exporting. 3 Lbs lamb, trimmed, cut into 1" Cubes1/4 cup olive oil 1/3 cup red wine 1 large shallot, chopped Juice of 1/2 lemon 2 cloves garlic, minced 4 tbls chopped fresh rosemary 24-30 pearl onions, trimmed and peeled Salt and black pepper, freshly ground 12 rosemary skewers, fresh or driedCombine all ingredients (except rosemary skewers) in a bowl and toss. Marinate in refrigerator for 2-3 hours, mixing occasionally. Remove lamb cubes and discard marinade. Thread lamb and onions alternately on to the skewers. You may need to make the hole for the rosemary skewers with a metal skewer. Grill on barbeque for 6-8 minutes on each side, or until cooked as desired. Serves 6

      Lamb Tenderloin with rosemary Au Jus
      Many of my friends and acquaintences in the Rocky Mountain and Midwest parts of the country don't care much for lamb.
