      Reuben Casserole
      Serves 43/4 cup cubed rye bread2 (10 1/2 ounce) cans cream of mushroom soup1 1/2 cups milk1/2 cup finely chopped onions3/4 lb deli sliced corned beef, chopped or leftover corned beef brisket, sliced and chopped1 1/2 teaspoons dry mustard1 tablespoon granulated sugar32 ounces sauerkraut, drained2 medium baking potatoes, thinly sliced2 cups shredded swiss cheese2 tablespoons butter, meltedHeat oven to 250F. Arrange bread cubes in a single layer on a baking sheet. Toast in the oven until dry. Crush or process cubes in a food processor until you have medium crumbs; set aside. Increase oven temperature to 350F. In large bowl, mix together cream of mushroom soup, milk, onion, corned beef, dry mustard and sugar. Set aside. Spread sauerkraut evenly in bottom of a lightly greased 9x13" baking dish.

      This is the Reuben I wrote about here.  The same Reuben that prompted a lady to complain voice her opinion that there was too much meat and not enough cheese.  Trust me, the meat is delicious and anyone who wants less is nuts!       Meet the Guys Monday - Reuben
      Everyone, say hello to Reuben! About two or three Christmases ago, I didn't have a clue as to what to get as a present for my husband, N. If you know anything about N, it should be that he's very creative and doesn't like to 'waste time' and is constantly multi-tasking. I thought a stitch-your-own robin would be a great stocking filler for him, and he could create a new friend whilst watching TV or whatever. He turned out to quite like it, and so Reuben was born! Reuben got his name while N and I were watching 'Along Came Polly' - and loved Azaria's character ('are you for scuba?') and we sometimes pronounce 'Reuben' in a weird accent. On our last trip back from America (we went to New York when I was pregnant with Boy) we brought Reuben his bandana, which he wears proudly.
