      Do's and Don'ts of Cooking with Raspberries
      The things I have learnt today, I am passing onto you so that you can learn from my mistakes. Do keep at the forefront of your mind that raspberries stain like a mofo. Do wipe EVERYTHING as soon as raspberry juice gets on it. This includes your hands. Do wear an apron, or dark clothes, ie: black clothes ie: NOT grey trackpants. Do make sure that the kitchen is semi tidy before you start.

      Looks like we have taught Matthew his first lesson - how to blow raspberries at people. It's all very funny ... for now. He currently thinks that sticking his tongue out at people is one of the greatest japes in the world. Are we naughty parents? Maybe, but its still fantastic to see him smile and laugh.       My sister-in-law accompanied me to a forest the other day, where there were loads of raspberries. In other words - "a raspberry forest". I would never go alone, because they are not easy to pick. There are brown bears in the forests, but I am not afraid of them. I am more concerned about my legs, my ancles, my wrists or so. You have to watch your steps to avoid falling.After five hours fighting in thorny thickets, I went home again with nearly 6 kg (ab. 13 pounds) sweet tasting raspberries.Into the freezer they went, packed and labeled, waiting for rebirth. The most beautiful raspberries were placed in one layer on a tray. They went into the freezer for a couple of hours.       The Raspberries cut through the epic pretensions and pomposity of '70s-era rock to proudly reclaim the spirit and simplicity of classic pop, recalling the heyday of the British Invasion with their exquisitely crafted melodies and achingly gorgeous harmonies. The group was formed in Mentor, OH, in early 1970 by singer/songwriter Eric Carmen and drummer Jim Bonfanti, local pop heroes thanks to the respective tenures in the hugely popular bands Cyrus Erie and the Choir; guitarist Wally Bryson and bassist John Aleksic (both Choir veterans as well) completed the original lineup, which made its live debut in mid-October. With their short hair, matching suits, and Beatlesque sound, the Raspberries ran in direct opposition to the prevailing hard rock mentality of the Cleveland scene, but after just a handful of gigs, the band was among the city's most popular live acts.       Ivy’s Raspberries
      Ivy, since you didn’t use your raspberries in your lemonade, I dug up another fun use. Italians love their limoncello. But limoncello isn’t the only fruit-based liqueur that will wow your guests and add some zing to your after-dinner imbibing… Try this easy recipe for Raspberry Cordial! Raspberry Cordial 2 cups granulated sugar 2 pints ripe raspberries, picked over (not molded! and avoid grit) 1 quart vodka 1. Place the sugar in a 3 quart glass jar with a lid. Add the raspberries and the vodka, and cover. (The sugar may not dissolve completely at first. It will eventually, however). 2. Place in a dark cool place. Each week for about 2 months open the jar and stir the cordial. 3. Strain the finished cordial through a very fine sieve into a decanter. (This is important! Otherwise, you’ll have seeds.       Surprise Success with Raspberries
      I know it’s hard for beginning cooks to feel confident enough in their skills to experiment in the kitchen, but sometimes very simple things yield fantastic results. This weekend, I was ready for some lemon bars. But I also had a carton of unused (and beginning to go bad) raspberries. I can’t stand to let good produce go bad, so I decided that lemons and raspberries sounded like a good combination. Success! Next time you try lemon bars, throw a handful of raspberries on top, before baking. (I bet blueberries would be yummy, too.) I made mine half-and-half, since my teenager isn’t a raspberry fan. It was fantastic! — an oh-so-easy!

      Spinach Salad with Raspberries
      yum.I could eat this salad everyday.Well, every other day.Odd days I would add fresh strawberries instead of raspberries.The dressing is light and goes very well with the spinach.The boys ate all of their raspberries.The spinach...... not so much!1 pint fresh raspberries20 0z washed and trimmed baby spinach leavesRaspberry Vinaigrette1/2 cup raspberry vinegar1/4 cup chopped fresh shallots2 crushed garlic cloves1/2 teaspoon Dijon mustard2 tablespoons minced fresh tarragonSaltFreshly ground black pepper3/4 cup olive oilIn a bowl whisk together the vinegar, shallots, garlic, mustard, tarragon, and salt and pepper to taste. Slowly whisk in the oil until it is well blended. Toss in a large bowl with the raspberries and spinach.Serve immediately.
