As a child, my family pretty much vacationed at the same two places in Southwest Florida. From the time I was four until even today, there was always Maderia Beach and Lido Beach. The comfort in these types of vacations was that every year we could relax, explore the surrounding areas without the rush that we'd never return again. We developed a game for finding those hidden gems about these places. Now that I am older and practically exploring completely new territory as an expat everyday, this last trip was a bit of reprieve from the total submersion into the unfamiliar. Once again, we revisited Southern France - this time equipped with our mountain bikes, this time with more French under our belts and this time to awaiting happy and healthy friends and family.

Provence, France, probably isn't the first place you'd think of for a family vacation, but the Four Seasons Resort Provence at Terre Blanche caters successfully to both kids and adults. Its roomy villas (the smallest is 675 square feet) give families plenty of space to spread out. While a hotel counselor engages your children in these activities or a hotel baby sitter watches them, you can enjoy more adult forms of whoopee in the nearby towns of Cannes, St. Tropez and Monaco.

When I am grilling with good, flavorful meat I like to use recipes that don’t mask the natural flavor of the meat itself, this is definitely one of those recipes. It’s also great if you don’t have the time for a long marinade, just marinate the meat while you are waiting for your grill to heat up.
Ingredients
12 lamb chops
2 lemons
1/4 cup extra-virgin olive oil
Salt & pepper to taste
3 tbsps Herbes de Provence
Directions
Mix the oil with the juice of one lemon
Brush the mixture onto the lamb
Sprinkle the chops with 2 tbsps herbes de Provence, salt and pepper, and let marinate for ten minutes
Grill the chops over high heat for about 4 minutes a side, basting with the oil mixture
When lamb is cooked remove it from the grill and season it with the remaining herbes de Provence. Serve with the remaining lemon cut into wedges

3 tbsps dried rosemary
3 bay leaves
3 tbsps dried basil
3 tbsps dried marjoram
3 tbsps dried summer savory
3 tbsps dried oregano
2 tbsps dried thyme
1 tspn fennel seeds
1 tspn dried lavender
1 tspn freshly ground white pepper
1 tspn ground coriander
Directions
Crumble the rosemary and bay leaves into a small bowl
Mix in the remaining ingredients
Store in an airtight jar away from heat and light up to 6 months
When Andrew and I took our cruise last October I attended a cooking demonstration where the chef had a portable induction cooktop. We're now remodeling our sadly distressed kitchen and in the process I've discovered more information on induction and the more I know the more excited I get.
