      Toast some slices of bread and spread some butter on them. Boil in salty water some poached eggs until the glairs become solid and remove them with slotted spoon.       Clam Soup with Poached Eggs
      Ingredients1 quart clams.4 cups milk.1 slice onion.1/3 cup butter.1/3 cup flour.1 1/2 teaspoons salt.1/8 teaspoon pepper.Few gratings nutmeg.Whites 2 eggs.Clean and pick over clams, using three-fourths cup cold water; reserve liquor. Put aside soft part of clams; finely chop hard part, add to liquor, bring gradually to boiling point, strain, then thicken with butter and flour cooked together. Scald milk with onion, remove onion, add milk and soft part of clams to stock; cook two minutes. Add seasonings, and pour over whites of eggs beaten stiff.

      Poached Eggs Over Collard Greens & Shiitake Mushrooms
      Prep and Cook Time: 20 minutes Ingredients: 6 cups chopped collard greens (stems removed) 1 medium onion cut in half and sliced thin 6 fresh shiitake mushrooms, sliced medium thick stems removed 4 fresh free range chicken eggs about 4 cups water 1 TBS apple cider vinegar, or any white wine vinegar Dressing 1 TBS fresh lemon juice 1 TBS minced fresh ginger 3 medium cloves garlic pressed 1 TBS soy sauce 1 TBS extra virginolive oil salt and white pepper to taste Directions: -Bring lightly salted water to a boil in a steamer. Rinse greens well, fold leaves in half and pull or cut out stem. Discard stems. Chop leaf and steamfor about 7 minutes. Add mushrooms, onion and steam for another 5 minutes.-While steaming greens, get ready for poaching by bringing water and vinegar to a fast simmer in a small, shallow pan.       Prep and Cook Time: 20 minutes Ingredients: 4 free range chicken eggs 1 tsp light vinegar (rice, apple cider, or white wine) about 4 cups water 1 cup thinly sliced leeks, about 1 large leek, white part only 6 medium cloves garlic, sliced 4 cups chopped kale 3 +1 TBS chicken broth 2 TBS fresh lemon juice salt and black pepper to taste Directions: -Bring water and vinegar to a fast simmer in a skillet large enough to fit eggs.       Fish and Potatoes Poached in White Wine Sauce
      This recipe goes well with any mild fish fillets like bass, flounder, crappie or any white fish. We used to make this a lot when we lived in CT where 9-10 pound large-mouthed bass were plentiful. Also is great with thin boneless pork loin chops. Ingredients for white wine sauce: 4 TBS Butter4 TBS Flour1-1/2 Cup milk1/2 Cup white wine2 tsp dill seed1/2 tsp onion powderSalt to taste1/8 tsp or less of white pepperDash of nutmeg Make a roux by melting butter, remove from heat source, then whisk in the flour, salt and white pepper. Return to the heat source, then add the milk, nutmeg, onion powder and dill seed. Whisk continuously until it thickens; add wine and continue to whisk. Once thickened to a medium sauce, remove from heat. You may need to add more milk if the sauce gets to thick.
