1−½ Cup Dried pinto beans, soaked overnight & drained2 Teaspoon Salt1 Bay leaf2 Medium tomatoes, chopped1 Medium red onion, thinly sliced2 Green onions (with tops), sliced3 Teaspoon Fresh lemon juice1 Teaspoon Fresh lime juice1 Teaspoon Salt¼ Cup Olive oil1 Large garlic clove, minced¼ Cup Fresh cilantro, choppedSalt and pepper, to tastePut the pintos in a large Dutch oven and cover with fresh water. Add the bay leaf. Bring to a boil. Then cover and simmer the beans for 30 minutes. Stir in the salt and simmer another 30 minutes until beans are tender. Fish out the bay leaf and discard. Drain the beans and allow to cool until warm, but no longer hot.Combine the lemon and lime juice and salt. Beat in the olive oil gradually until well mixed. Add the garlic and cilantro. Check seasonings and add more salt and pepper, if desired.Pour dressing over the warm beans and mix until well coated. Add the choppedtomatoes and onions and toss well.

this mare is kid-safe and very gentle. she has been my kids' mount but due to rising costs in hay we are selling everything that is not registered. Shana is a great broodmare. We have mainly only ever used her as a broodmare and some light riding. I recommend her for an experienced rider only. She can be difficult to catch sometimes, she has wisdom with her age. She has never offered to buck or kick, but I think she was abused before we got her and she is a bit head shy. She can be ridden with a hackmore, but if is very difficult to get her to take a bit. She is also current on her coggins test. I hate to see her go, but I need to make room in my pasture so I can get my daughter a horse. Contact me for more information or more pics.

RECIPE INGREDIENTS1 cup gallo pinto beans1 bay leaf1 small onion, peeled1 whole clove2 cloves garlic, peeledsalt1 1/2 cups long−grain white rice4 tbsp olive oil1 onion, finely choppedFreshly ground black pepperRECIPE METHODSoak the beans in a pot in cold water covered by at least three inches of water at least four hours. Drain the beans and place in a large pot with two quarts of water. Pin the bay leaf to the onion with the clove, and add to the beans. Add the garlic. Gradually bring the beans to a boil, skimming off any foam. Reduce the heat and gently simmer the beans, uncovered, until tender, about 1 1/2 hours, adding salt, to taste, during the last ten minutes. Drain the beans and refresh under cold water. Discard the onion.Bring 2 1/2 cups of water and 1 teaspoon salt to boil in a large heavy saucepan. Add the rice and return to a boil. Reduce the heat and gently simmer the rice until tender, about 18 minutes. Let the rice sit, covered, five minutes, and fluff with a fork.Heat

El pinto es uno de los pescados que mejor se prestan para esta preparación, pues es un pescado muy rico y jugoso. No es muy abundante en los mercados pero por suerte, se puede conseguir de vez en cuando. Es un pescado de fondos rocosos, por lo que tiene bastantes espinas.Un detalle de la cabeza:Para esta preparación, lo he preparado en filetes, aunque normalmente se prepara en rodajas gruesas.Ingredientes:1 pinto de 1.200 grs. 1 cebolla3 patatas grandes100 grs. guisantes1 cucharada de orégano1 cucharadita de colorante o pimentón dulce 1 vaso de aceite virgen extra1 o 2 hojas de laurelsal gruesaLavamos y cortamos el pescado en filetes.
