So I looked through some of my files and found a version that called for lemon juice, tomatoes and penne.       When I watched Giada make this, I wanted to reach through the tv and eat it. I longed to work in her husband's office, in the hopes that I could look starved in the corner, so that she might share some with me.       Yah, you know how I said I was going to learn to bake bread this week? Hasn't happened. What HAS happened is lots and lots of ice cream. (I blame Mr. Lebovitz.) Lest you think I've fallen into the arms of my boyfriend, Ice Cream, in my spouse's absence, I'd like to say that I meant to make Guinness ice cream for the Super Bowl, but it didn't happen... and since I already had my ice cream maker attachment in the freezer...       Recipe: Greek-style Lentil & Vegetarian Mince Penne
      Looking to add some lentils to your pasta, but don’t want a traditional style dish? This Greek-style lentil pasta may be just the thing! Most lentil pastas I’ve seen use lemon and keep it simple, but this pasta is more like a bolognese-type pasta but with greek spices. Serves: One Ingredients: 60 gram canned lentils drained 75 grams vegetarian mince (I use Sanitarium but TVP could be used instead) 200 grams passata 1 tsp garlic 60 grams onion, diced 1 tsp oregano flakes 1/2 tsp parsley pinch white pepper 1 vegetarian beef style stock cube (I use Massel) 1/2 small carrot grated 1 tbs dry sherry 1/2 tsp fennel powder 2 tbs water 70 grams corn & rice pasta (or your prefence for pasta) (optional) fetta for garnish Instructions: Cook the pasta seperately and cool with cold water. Place the onions and garlic in a pan and pour in the passata. Crumble the stock through the passata, stirring to mix into the liquid. Place in the spices and the mince, cooking for about 5 min

      PENNE AI CARCIOFI
      Ingredienti:400 gr di penne, 3 carciofi, 50 gr di pancetta tesa, 70 gr di burro, 100 gr di mascarpone, brodo, grana grattugiato, sale, pepe.Preparazione:Tritate finemente la pancetta, poi mettetela in una casseruola in cui avrete fatto spumeggiare metà del burro; dopo qualche minuto aggiungete i carciofi mondati, lavati e tagliati a fettine sottili. Salate, pepate, bagnate con un mestolo di brodo caldo, coprite il recipiente e lasciate cuocere il sugo per 30 minuti circa, mescolando spesso. Fate lessare la pasta in abbondante acqua bollente salata. Fate fondere il restante burro in un pentolino, unitevi il mascarpone e amalgamate bene. Scolate le penne al dente, trasferitele in una terrina calda, conditele prima con il burro e mascarpone e poi con il sugo ai carciofi. Cospargete con abbondante grana, mescolate ancora e servite.

      PENNE RIGATE SFIZIOSE
      Ingredienti:300 gr di penne rigate, 400 gr di melanzane, 200 gr di pomodori pelati, 20 gr di olio extravergine di oliva, 1 cipolla, prezzemolo, sale, pepe.Preparazione:Tagliate le melanzane a dadini, salatele un poco e lasciatele riposare finchè avranno spurgato la loro acqua amarognola. Asciugatele e stufatele in una casseruola con la cipolla tritate sottile e i pelati spezzettati, per circa 10 minuti a pentola coperta e a fiamma bassissima. Scoperchiate, salate, alzate la fiamma per far restringere il sugo, rimescolate di tanto in tanto. Lessate le penne in almeno tre litri di acqua salata. Scolate le penne al dente e passatele in padella nel sugo, aggiungendo all'ultimo momento il prezzemolo tritato e l'olio. Servite subito.

      I love this sauce.I had it a few years ago for the first time and loved it. I made it tonight and it was very good.And fairly easy to prepare. I was rushed with 3 kids ,baths and a Boy Scout Meeting and I made it without any problems. And.....the kids ate it.No wimpers or rolling of the eyes.In fact when the sauce was simmering my 9 year old walked into the kitchen and asked if we were having Spaghettios!!!!!! for dinner.
