Banana Pecan Cake with Maple Glaze
Among the countless blessings this blog has brought to my life is this one: I have met and become friends with a few cookbook authors. They are delicious people to be around, naturally, and if I manage to fox my way into their house they may actually cook for me, but the invaluable bonus is that, once I've come to know and trust them, once I've witnessed how exacting they are, and how much pressu

      Fresh Direct Raisin Pecan Loaf
About a year ago, I was complaining about how the Fresh Direct Ciabatta Rolls had gotten smaller and more expensive. I have to admit, I still buy them, because I don't know of anywhere else to get parbaked breads and I just love the concept. You pop a parbaked bread in your oven for 15-20 minutes, and you've got warm bread that tastes freshly baked. This time, we tried a Raisin Pecan Loaf, and it was great, crusty outside, soft, chewy, and dense, inside, packed with raisins and just the right amount of pecans.Be aware that this Raisin Pecan Loaf is very addictive. It ruined a perfectly healthy meal by adding nearly half a loaf of bread to it. I just couldn't stop eating it...and with some sweet cream butter...you're ready for couch potato heaven.

The Pecan tree - Carya illinoinensis
The Pecan tree (Carya illinoinensis) is native to North America. The pictures in this post are from a tree in the “Jardin Botanico-Historico, La Concepción” in Malaga, Spain. This tree species was brought to Europe by the Spanish explorer “Cabeza de Vaca” in the 16th century. This tree is the source of Pecan nuts which along with Pistachios are my favorite nuts. I am particularly fond of fresh home-made Pecan pie. My mother used to make one for me on my birthday. So you can image my delight when I found a Pecan tree with the nuts fully formed and ready for picking. I had always wanted to know what the tree was like and what the nut looked like before it is picked. These images illustrate what the nut looks like on the tree and also when they are opened. Traditional Pecan Pie with Bourbon-flavored Whipped Cream
A Thanksgiving dinner is never complete without some traditional ingredients like Pecans, Pumkins, Cranberries, Apples and of course Turkey. But as we are making a Vegetarian Thanksgiving, I have to omit turkey out of my preparations. The famous Pecan Pie, traditionally a South-western recipe, has become a trademark for thanksgiving season, and my frequent trips to supermarkets and grocery stores has proved that it's a great hit at tables on this day. On asking at the cash register, I was appaled to hear him say that they sell more than 10,000 pies during the 3 days of thanksgiving weekend!!! Wow, and that's just one store!! I am a huge fan of Marie Callendar's Pecan Pie, and this time I knew I would try making one myself. I decided to get into the holiday mood, and hence added amaretto to the basic recipe. And then I came across the Bourbon-laced whipped cream, and I knew my pie would be incomplete without it! So here's to a rich and gooey pie, and to the ultimate way of saying Th

We teased our little sisters, hung sheet tents from our clothes lines, caught fireflies in glass jars, had a club with all of our dogs and cats as mascots, and played with our dolls. We had original cabbage patch dolls.. the ones with cloth faces. Then we went drifted in middle school. Amy's a year older, so she left me behind as she headed to Jr. High. Somewhere in our junior and senior years of high school we became close friends again. Shared in our teenage struggles, anxieties, and joys. Then we went to different colleges, in different states, but we stayed in touch with a newly emerging technology called e-mail (boy, do I feel old Amy!), we also wrote letters back then. Amy got married after college. Moved away from our small town. But we somehow were able to maintain our friendship. I'm

      Apple and Pecan Cobbler
My favourite memory associated with apples is about my mom making fresh apple jam at home, and I'd be sitting on the kitchen top, watching her make that wonderful jam that would hardly suffice for 4-5 days before she'd have to make another batch! (of course, my brother consumed as much as I did!!) But in recent years, I've never really cooked anything out of apples. So as I scoured the web to find something that interests me, I found this simple apple cobbler recipe, and as I hadn't tried making a cobbler either, I knew I had found something to keep me busy this weekend. Here's my Apple and Pecan Cobbler recipe with a touch of Lavender and Nutmeg. I was skeptical about lavender at first, as cinnamon is a more widely paired spice with apples, but I tried it because my mind loved the flavor combo! The result, a delicate flavored cobbler which turned into an amazing dessert paired with vanilla ice cream!IngredientsFilling1/4 cup sugar ( use 1/2 cup if the apples are not too sweet)1 1

Denton Pick of the Week: Villages of Carmel vs. The Preserve at Pecan Creek
Villages of Carmel has a great location that is about to become prime real estate for North Texas with the completion of the Lewisville Lake toll bridge by Spring 2009! See full article and a map of new tollway extension. Legacy Homes is the largest builder in the Village of Carmel neighborhood and they start from the $120s. Villages of Carmel is located just East of I-35 (just North of the future tollbridge over Lake Lewisville). The more expensive homes at The Preserve at Pecan Creek are from the $150s to the $250s. Between the Villages of Carmel subdivision and the Preserve at Pecan Creek community, there is an elementary school for Denton ISD between these 2 neighborhoods. You can research the Pecan Creek Elementary. The Preserve at Pecan Ridge offers new homes from Standard Pacific Homes, First Texas Homes, and Beazor Homes. The community shares a pool as part of their Home Owner's Association. I suggest looking at both of these communities (Villages of Carmel and The Preserve

Candy Review: Cinnabon Cinnamon Caramel Pecan Clusters
(image from Sweet Factory) I’ve never lived close to any Cinnabon locations, and I’ve never eaten one of their heavily lauded cinnamon rolls, but I’ve always wanted to sample some of their goods. I recently got my chance to taste one of their products, Cinnabon Cinnamon Caramel Pecan Clusters, when I found a 4.2 oz box of them during a trip to Big Lots. At $1.99, the price was low enough for me to give them a shot. The box contains six pieces of candy, separated by a clear plastic divider. They look like an average caramel pecan cluster and smell strongly of chocolate, but they also emit a whiff of Cinnabon’s signature Makara cinnamon. The clusters consist of a layer of glazed pecans topped with cinnamon-flavored caramel and covered in chocolate. The pecan layer is a bit more sparse than your usual pecan caramel cluster, and the chocolate is slightly waxy and unremarkable, but the selling point of this candy is its cinnamon caramel. The cinnamon is subtle at fi

Like chocolate turtles? Check out chocolate dipped pecan maple caramels.
The first year I made candies I only made mocha truffles. The following year saw the addition of classic cream caramel and English toffee. Those three reigned for more than 5 years before I added gianduja truffles and chocolate caramels (I may make these chocolate caramels again, they were good, but my son hated the way they smelled when cooking). Last year saw the introduction of espresso caramels and a second failed batch of maple pecan caramels. This year I was again determined to add another candy to my repertoire. Discovering the obviousI spent some time looking for another type of candy to make. Although there is a lot you can do with truffles flavor-wise, I finally decided on a peanut caramel. It sounded like a home made pay-day candy bar, except I would be dipping mine in dark chocolate. When it came time to buy nuts for candies at Trader Joes, I suddenly realized I could substitute pecans for the peanuts. My wife has been bugging me to make caramel pecan turtles, which she lov
