      PEANUT BUTTER & JELLY BARS
      1 1/2 c. flour1/2 c. sugar3/4 tsp. baking powder1 egg, beaten1/2 c. softened butter3/4 c. grape jelly1 c. peanut butter flavored chips Combine flour, sugar and baking powder. Cut in the butter until you have coarse crumbs. Add beaten egg and stir until smooth. Reserve 1/2 the mixture. Press remaining 1/2 into the bottom of a 9 inch square pan. Spread grape jelly evenly over crust to within 1/2 inch of the edge. Sprinkle 1/2 cup peanut butter chips over the jelly. Crumble remaining crumbs over the chips. Bake for 30 minutes at 375 degrees or until lightly brown. Cool. Cut into 12 bars.

      Peanut Butter Oatmeal Cookies
      Peanut Butter Oatmeal Cookies1/2 c shortening1/2 c butter, softened1 c brown sugar3/4 c white sugar1 c peanut butter2 eggs1 1/2 c flour2 tsp. baking soda1 tsp. salt 1 cup quick-cooking oatsPreheat oven to 350 degrees. In a large bowl cream together shortening, butter, brown and white sugars, and peanut butter until smooth. Beat in the eggs, one at a time, until well blended. Combine the flour, baking soda, and salt. Stir into the creamed mixture. Mix in the oats until just combined. Drop by tablespoon onto a parchment lined or ungreased cookie sheet. Bake for 12 minutes or until just golden brown. Don't over bake. Let sit on cookie sheet for 3 minutes before removing to a wire rack to cool.

      100 g textured soy chunks100 g peanuts100 g sesame seedssoy milk1 Tbsp brown sugar1/2 tsp salt1/2 tsp citric acid (optional!)Roast peanuts and sesame seeds (separately) until lite golden color, do not roast too much because it can get bitter. Peel peanuts and and grind them with sesame in a poppy seed grinder. Add sugar, salt and citric acid and puree in blender. Use soy milk to control thickness.In this recipe citric acid is completely optional and it's here in order to prevent butter to change color. If you don't feel comfortable with citric acid as a food additive, just omit it.Store butter in a fridge for 7 days. It never stayed longer than that time in mine so I'm not quite sure about keeping it for longer period of time.

      Masala Peanuts or Masala Groundnuts is my most favorite snacks that Amma prepares. I remember Amma making this for all our Vacation Trips. During my high school, we used to make trips to Ooty and other places down south every summer and this used to be on the top list to be done. We used to travel with family friends who was Dad's senior at collage and later colleague. Their girls were of my age. So it used to be fun travelling with them and munching on these snacks. Either of them would decide to make Masala Peanuts as Uncle and Dad loved munching on these as they talk about clinical stuff. It used to be so much fun, when they keep poping these into their mouth, and it misses the target as they get involved in their discussion on a case. They wonder where the peanut gone.
