In a small saucepan, put the milk, sugar, 3 tablespoons butter and salt. Stir together over low heat until the mixture is warm, making sure the butter is melted. Add this mixture to the flour and yeast mixture. Add in the egg. With an electric mixer, beat the mixture at low speed for 30 seconds. Then turn the speed on the mixer up to high and beat for 3 minutes. Add in the remaining flour and mix well. Cover the mixture and let it set for 30 minutes. Roll out the dough until it makes a 16 x 10 inch rectangle. Put the peanut butter mixture over half of the dough lengthwise to within 1/4 inch of the edge. Then put the jam on top of the peanut butter. Fold the dough in half so it makes a 16 x 5
I remember making this recipe for peanut butter cookies with my mom when I was a kid. I loved to press down on the dough with a fork after she rolled them. More than a decade passed before I tried making them again when I was in college. My dad had recently bought me my own mixmaster electric mixer, similar to my mom’s Sunbeam mixmaster. Although my new Sunbeam mixer now had a light bulb to illuminate the bowl, the body was entirely plastic and the power was definitely not the same. It worked fine for all my other baking needs until I made this recipe, which resulted in smoke pouring out the back of the mixer. It still worked afterwards, but it was never the same and would stutter at lower speeds. In the mixer’s defense I will admit that I had used hydrogenated peanut butter, which is considerably thicker than real peanut butter. Although I now have a wonderful 75th anniversary KitchenAid stand mixer, I still have to recommend you choose your peanut butter wisely.

1/2 cup granulated sugar
1/2 cup packed brown sugar

Finding fresh-made candy hasn’t been a problem, really. You can step into just about any mall or local old-time candy store and get some candy that was just made that day (or heck, make your own). I made these over the weekend, and le husband claims they're the best cookies I've ever made. That's saying something, seeing the way he obsessively snuffles up molasses cookies. The recipe comes froma Quaker Oats booklet that we've had for some time, and I modified it to suit my preferences. This is also a very good way to use up cranberries, wether left over from thanksgiving or picked up for cheap in the store. The cranberry jam came from Nigella Lawson's "Feast" (which is a fabulous cookbook, in case you're wondering) and is just as easy as can be. It's also good on whatever else needs jam at the moment: english muffins, toasts, croissants. Have at it!
