Weekend mornings are one of my favorite times of the week. So many of you have been asking about the beer batter pancakes, so who I am to hold out on a good thing!
1 cup sifted all-purpose flour
1/4 cup white sugar
3/4 teaspoon baking powder
1/2 teaspoon salt
1 egg, beaten
1 cup beer - we used Rouge American Amber
2 tablespoons butter, melted
In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the egg, beer and melted butter; stir with a whisk just until blended - a few lumps are okay.
Heat a skillet or griddle over medium heat. Coat with vegetable oil or cooking spray. Spoon about 1/4 cup of batter onto the hot surface for each pancake. When bubbles appear on top of the pancakes, flip, and cook until browned on the other side.

We had lunch at 3 Guys, 3 Guys a diner with 3 locations, on the Upper East side. Lon ordered pancakes with scrambled eggs with cheese. The semi-warm pancakes were overcooked and far from fluffy. The cheese on the scrambled eggs had a really weird taste and we didn't continue eating it.

Yesterday was probably the warmest day of the year so far, and - one disturbing thing from last year that reared it’s ugly head is that the chavs have come out of hibernation, and into Prince’s Garden’s in Colwyn Bay. Instead of the seren, albeit cold, weather there for my lunch over the winter, I instead have to deal with the lowest form of human existance drinking, swearing and screaming at each others. It’ll be like this until September sometime, and is set to get longer each year, what with global warming.

Tuesdays have become a tad manic of late. I picked the kids up from school, did the usual stuff that winds the Mrs up - like getting them dirty in the garden, messing the house up, leaving snack wrappers in the kitchen. You know, the kinda stuff you intend to smarten up before she gets home but don't! Well, yesterday was Pancake Day (Shrove Tuesday, to give it the proper title). Little fella isn't impressed with such simple fodder (he takes after his mum), so myself and big fella scoffed 10 pancakes between us. It was a 6:4 ratio in my favour, which is a worrying trend. I'll waste away I tell you. Pure stodge, especially the chocolate, peanut butter and jam combo! Still, watching the kids thrashing around Crewe Baths helped me to burn a few calories off! However, the best was yet to come. On the back of a fine, late win away at Bradford, the Alex returned home to once-fortress Gresty Road. It was the Yorkshire lads, again, from Doncaster. Tomorrow (Tuesday, February 20th) is National Pancake Day and to celebrate, you can get 3 free pancakes from IHOP between 7AM and 10PM. They ask that you make a donation to Children’s Miracle Network since they are working together on this freebie, but that doesn’t sound like too much to ask for to me. You donate to a good cause, get some free pancakes, and everybody comes away a winner. Sadly, we don’t have an IHOP near where I live, but I remember they used to run this freebie a few years ago as well and let’s just say that’s not a good idea when an IHOP is located mere seconds away from a major college campus.
