Growing up I had always been attracted to red foods. I could never really understand this fascination, but a red curry always seemed more appetizing than a green curry. Beets seemed more attractive than cucumbers. I never gave it much thought till I came across a research paper done by our friends at the TWBA / Chiat Day agency for their client, Heinz ketchup. Apparently, this is a very common phenomenon and not as I thought, one more of my many irritating habits. A plate of food where the central item is red always looks appetizing. This is because the eye associates the colour red with many appealing things. Freshly killed meat and blood. An abundance of blood in one’s body also signifies good health. And thus the eye looks for this colour on a plate. I just wish that I could’ve known these facts when I was young. INGREDIENTSSplit gram (Channe ki dal) - 1/2 cupSpinach (palak) - 1/2 kgTomatoes - 2Green chillies (chopped) -2Ginger (chopped) -1/2 " pieceCoriander powder - 1 tspGaram Masala - 1/2 tspRed chilli powder - 1/2 tspOil - 3 tbspOnion (chopped) - 1METHODSoak dal for half an hour.Wash and chop palak leaves. Discard the stem.Heat oil in a pressure cooker. Fry onions till golden brown.Strain the soaked dal. Add dal, palak and all other ingredients, including the spices into the cooker.Cook for 1 minute. Add 1/2 cup water.Pressure cook to give 2 whistles, then cook on low heat for 8-10 minutes.After the pressure comes down, mash the dal slightly.Serve hot with boiled rice or roti.

Spinach with paneer or with alu is a very common combo. I tried a new combo and used two of our fav veggies together and the end result was outstanding. This is my contribution for JFI- Going GreenINGREDIENTS:OkraSpinach- 1 Bunch washed and chopped1 Big Onion Sliced1 tsp Jeera seeds1 tsp Coriander Powder1 Tbsp Kitchen King Masala1 tsp Chili Powder1 tsp Haldi PowderSalt as per tasteMETHOD:Wash and dry Okra and cut them lengthwise.In a heavy bottomed pan heat oil and had jeera seeds. When jeera starts sputtering add sliced onions and fry them until brown.Now add okra and add all the rest of the masala ingredients to it and keep the flame on high and cook okra until they are completely cooked.Now add chopped spinach into this and adjust the salt and cook untill all the spinach in competely cooked. Note: Don't add any water to this as spinach lets enough water and this should be good to cook the vegetable.Serve hot and enjoy it with white rice or chapathi.
