      Ingredients:  1 - box spice cake mix 1 - 15oz can of pumpkin 1/2 cup - chocolate chips 1/2 cup - water Directions: Do not follow the cake recipe for the ingredients, just mix everything listed above together, fill cupcake liners in a muffin pan, and cook at 350 deg for 20 minutes.       Break 100g plain chocolate, 100g milk chocolate and 100g white chocolate in little pieces. Mix in a bowl 300g selfraising flour with 100g caster sugar. Mix in another bowl 1 beaten egg with 250ml milk and 60g melted butter. Pour this mixture with 1 tablespoon vanilla extract and the chocolate into the flour mixture. Mix it well.       Yummy!As surprising as this may seem, blueberries are grown in Honduras. I don't know for sure, but I think they are grown in the cooler mountainous areas and mostly for export.       M's school project - finished!Niece M came to visit and get another crochet lesson yesterday. When El Jefe told me she was coming and that her project was due on Friday, I thought "Oh, no, don't tell me she didn't finished it yet!" But she did. Apparently, she has to do another one and waited until the last minute to come to get another pattern. I hope she finishes in time. She found a pattern that I think will go pretty quickly if she sticks to it. I only had to show her one new stitch, a picot. I have dozens of pattern books, but the problem is that almost all of them have written instructions in English instead of diagrams like the Spanish magazines so the selection is limited.She lost the pattern for her first project and just made something up for the last few rows which made it ruffly around the edges.       Snickerdoodle Muffins: Satisfaction Guaranteed!
      Last week Peabody had a "reader" who sent her an e-mail requesting a refund for muffins he/she had baked from her site. The muffins in question were snickerdoodle muffins, the "reader" stated that the recipe was flawed. Do the above muffins look flawed? I think they look scrumptious! The recipe on Peabody's site is not flawed, I believe the baker is. Many times when recipes do not work it is the baker and not the recipe. Baking is a science, following instructions is crucial for a successful recipe.Now back to muffins, they are by far the BEST muffins I have had in long time. They are moist, buttery, and cinnamon-y. If you like snickerdoodle cookies these muffins will make your knees buckle! I'm looking forward to tomorrow morning when I can have another muffin with coffee for breakfast.

      I was looking for an easy muffin recipe that tastes good. I specifically wanted a recipe using Bisquik® because I have 3 big boxes, thanks to double coupons (it was almost free). I started with a Google search for “bisquick muffins” and ended up on Cook.com. I used the following recipe. TAMMY’S SUGAR MUFFINS 2 c. Bisquick 1/4 c. sugar 2 tbsp. oil 3/4 c. milk 1 egg 1/4 tsp. nutmeg TOPPING: 1/2 c. butter 1 tsp. cinnamon 2/3 c. sugar Combine Bisquick, sugar and nutmeg into bowl. In 2nd bowl slightly beat egg and add milk and oil. Stir with spoon just until dough is moistened. Fill muffins 2/3 full. Bake at 400 degrees for 15 minutes. TOPPING: In one bowl melt butter. In second bowl mix cinnamon and sugar. 1. Take one warm-hot muffin 2. Dip the muffin into the melted butter 3. Dip muffin into the sugar/cinnamon mixture 4. Enjoy the muffins while hot!       These muffins are terrific for breakfast or a break. They are loaded with nutrition and fiber, AND very tasty. Ingredients: 2 cups self-rising flour¼ cup sugar¼ tsp salt1/3 cup Grated rind ½ lemon1/3 cup presoaked golden raisins (optional)1 cup orange juicelemon-infused avocado oil1 egg Procedure: Mix flour, sugar and salt in large mixing bowl.       I don't know of anyone who doesn't like a nice English muffin slathered with butter and jam. These are not difficult to make, and the pleasure derived is long lasting. Ingredients: ½ cup sourdough starter, fed¼ cup WW flour2 1/2 cups AP flour1 cup bottled water½ tsp baking soda½ tsp salt2 tbsp sugarcornmeal Procedure: Once the starter is fed, mix up the dough and let it sit covered overnight. You don't have to worry about overdeveloping the sourdough flavor because the baking soda will neutralize some of it, leaving just the right amount of sourness in your muffins. The major change in this recipe, aside from using some whole wheat flour (1/4 cup) was to replace the milk the original recipe called for with water so as to ensure you get the rather coarse, open texture for English muffins. If you have only a small biscuit cutter - say 2" rather than a 3-inch round, you may need to cook for an extra minute or two per side and you will probably get fewer
