Orange marmalade: sunshine in a jar ...
This is my first successful batch of orange marmalade utilizing the oranges from our backyard. I tried using a recipe from Tyler Florence once upon a time and it failed miserably. Finally, success! The recipe makes 6 half-pint jars, however I ended up with 7 plus a little extra that I put in the fridge. I'm actually not a huge fan of marmalade, but this is pretty tasty -- sweet, bursting

      Toast and Marmalade for Tea
“Toast and marmalade for tea, sailing ships upon the sea aren’t lovelier than you”. What a cheerful little song; Recorded by unknown band Tin Tin and produced by the late Maurice Gibb of the Bee Gees. You can also have honey on your toast. And when you’re ready to don the shirt and tie, try a pair of honey coloured cats eye cufflinks from Veritas Gifts. One gentleman decided to match them with an abstract floral tie by Patrick McMurray. “Nice colours for spring”

Ginger-Lime Tofu with Citrus Marmalade Glaze, March Joust Entry
Here's my entry for the Royal Foodie Joust!Ginger-Lime Tofu with Citrus Marmalade Glaze, Coconut Quinoa with Pink Peppercorns, Orange Balsamic Chard and Radish GreensI'm so pleased with this menu, because they compliment each other so well. The delicate flavour of the quinoa counterbalances the citrus kick of the tofu, and the greens had a smooth, almost creamy texture from the radish tops. The tofu was wonderful in itself, with the texture very akin to pork, and even the color was spot on. I find that red wine and tofu cooked together in most forms makes for a good substitute for heavier meats in recipes. My fiance said that it reminded him very much of a gourmet version of orange beef he used to get at Chinese restaurants, and he gobbled up everything left in the pan, including the leftov

      Grandmother´s Plum Marmalade Recipe
I rarely purchase fresh Swedish plums. Our plum season is very short - from September to October. Like all fruits, I also have to buy the plums in a grocery store. They are imported from other parts of the world, and available all year round. The plum trees are hardy, thriving in cool, dry climates. The fruit can be used in many ways - fresh, dried, cooked or in other forms. This is an old-time plum marmalade recipe. It comes from my grandmother´s cookbook.Well, I am not sure whether I should call it marmalade or jam?I looked up the word "marmalade" in my Standard Dictionary of the English language:Marmalade: A preserve made by boiling the pulp and part of rind or skin of fruits, usually citrus fruits, with sugar to the consistency of jam. Then I looked up the word "jam".Jam: A pulpy, sweet conserve of fruit boiled with sugar; distinguished from jelly.I still don´t quite understand the difference. Besides, "Marmelada" is a Portuguese word derived from "marmelo", describing a quince co

      Esther’s Orange Marmalade Cake
I think that because I tend to be irreverent, people assume that I am “edgy” as opposed to “cozy,” and that I am the sort of person who would tend to choose a book of David Sedaris essays over gentle novels about the daily lives of  small town folks. I do enjoy Sedaris (David and Amy), and I always admire rapier-sharp wits and keen powers of observation, but I truly love the books of Jan Karon about Father Tim, an Episcopal priest living in the small town of Mitford. The books are well-written, the characters are beautifully drawn, and the story lines are compelling. They are also funny (in addition to being moving, inspirational and sometimes suspenseful) but they are definitely not “edgy.” I’m sure that there are people who view them as sentimental pablum for readers who don’t want to be challenged by literary complexity, but there is room in the modern “literary” world (mine, anyway) for novels that are neither ironic nor

Marmalade Cafe @ Surfer's Paradise, Gold Coast
I think I was under the impression that in Australia, everything closes at 5pm. I guess in Gold Coast, this doesn't apply. We made our way back from Brisbane Gold Coast after sundown. The weather has gone from nice and warm to cool and dry ( lovely weather of about 20C).We were to meet up with cousin's Friend , Albert. I told my cousin I wanted to try 2 things, crocodile meat, and kangarro meat. So they brought us to Marmalade Cafe, in Chevron Renaissance. Owned by Steve and Sandy Tan, but apparently run by their Restaurant manager, Nigel. Anyways, I was quite surprised as to how the restaurants here really do it, because while we were waiting for a seat, my cousin when off to buy some wine to be consumed here. So I guess BYO is allowed. So we ordered one entree/appetizer and three mains to be shared by the four of us, while I think Albert who is native here, decided to go for some Fish Steak, didn't take a picture of his food, because his arrived last, and I think he must b

      Chutney and Marmalade
Chutney and Marmalade (buildings 8)My friends kitchen again. I am drawn to the warmth and humanity of this place. The light comes into the room elevating the mundane to the realms of glorious. This day she had been making chutney from the glut of apples and marmalade, which sat on the table in jars like so many jewels. This is autumn, a table loaded with good things being “put up” for the winter, bright splashes of gold and red amongst the warm browns. I know they all think I am a bit nuts when I go on and on about their kitchen but I really love it as a subject for painting.25.5cm x 20.5cm. 10in x 8in.Watercolour. Kumquat Marmalade
I felt guilty looking at all this fruit burdening my little kumquat tree so rather than sit and watch it rot or feed the birds (who don't seem to be interested in them anyway), I purposed myself to make some kumquat marmalade. I'm a little impartial to marmalade at the best of times so adding some extra flavours that I really enjoy seemed the next logical step. The lemons still aren't quite ready so I had to rule them out. And, my family isn't keen on ginger so I had to limit my tastebuds a little but I did find a few ripe limes and even some stalks of lemongrass. Fortunately, my kumquat tree had only yielded 2kg of fruit because it still took my daughter and I an hour to slice and remove the pips. Then it was onto the stove to cook it all up. We had been saving glass jars over the past couple weeks in preparation for this little project but we were still short and had to make do with some Tupperware containers instead of pouring it down the sink. For those who also have kumq

      Of Dispute and Orange Marmalade
Hello, friends!I've been MIA this week, I know. We are visiting family for Mother's Day Weekend! While I was here, my sisters and I remembered a prank we pulled on our mama last year for her birthday; I made her favorite orange marmalade cake (and also a fake one), and then two of our brothers orchestrated a day-long argument that escalated at cake time!Everyone else was in on it, but we just couldn't keep straight faces - fortunately, mama didn't catch on and was not only furious about the fighting, but also the ruined cake! Enjoy a laugh on us!Blessed weekend!

      Pear Marmalade
I had never been a big fan of marmalade until I discovered how delicious it was to just spoon a tiny little bit of it on cheeses. Usually, marmalades are preserves made by boiling the pulp and part of the rind or skin of citrus fruits with sugar to the consistency of jam. However, marmalades can be made from almost any fruit and any berries: Unripe tiny aubergines, green apricots, quinces, small green bitter oranges, rhubarbs mixed with raspberries ... you name it, I probably got a recipe. This recipe of pear marmalade serves about 8-10 at a buffé table.INGREDIENTS:* 3 pears (ab. 250 g)* 2 tablespoons water* ½ lime, zest and juice* 1 teaspoon Certo® fruit pectin (powder)* 2 dl (200 ml) castor sugarMETHOD:1. Peel the pears, remove the seeds.2. Cut them into smaller chunks and put in a saucepan.3. Add water, lime zest and juice.4. Cook covered för about 10 minutes.5. Mix pectin with 2 tablespoons of the sugar.6. Stir the mixture down into the saucepan.7. Add the remaining sugar and co
