I haven't been able to continue writing about our trip because, well, I actually took some time off, and we have been running from place A to B, C and all the way up to Z since Friday morning, and today is the first time I have a moment to sit down and share a few photos with you. I had a wonderful day yesterday. Busy but fun. I'd be blogging more about it later. My kid's school is having a Fair today and we'd be there the whole day. Since my kids will be in the "rides" most of the time, I think I'd bring my laptop so I can type there. We'll see if this plan works. Today I attended a lunch for the 15 or so staff pastors at the church I work at. The lunch was held at the Lubbock Club; It's a nice place to eat, at one of the highest places in Lubbock. The lunch was special because we had a guest speaker there, Charles Neiman, to say a few words to us as church leaders. Thursday, MCG Children’s Hospital held a charity event at Carrabba’s Restaurant called Celebrity Waiter Luncheon. This event raised funds for the hospital’s Children’s Miracle Network. Local celebrities Trent Butler, Liz Hill, and Jay Jeffries Greenjackets mascot- Auggie, Spartans head coach Bubba Diggs, the Lynx mascot Louie, and many more took the time to serve the public chicken marsala to raise money for the hospital. This event is a kick off to the telethon that will be held June 2-3 for Children’s Miracle Network.

On May 9, 2007 John Edwards spoke to the Women Employed group in Chicago, Illinois about low-income families especially those lead by single mothers. John Edwards talked about how if you are a woman you are more likely to live in poverty and you are more likely to not have health insurance. His many solutions to the issue of poverty included; raising the minimum wage, expanding the earned income tax credit (EITC) to include single workers, making it easier for people to form unions, teaching financial literacy to low-income individuals, setting up bank accounts, and also setting up an incentive for them to save by matching what they put in their bank accounts. 1/2 cup scalded milk2 tablespoons melted butter2 tablespoons sugar1 egg1/2 teaspoon saltFew gratings from rind of lemon1/2 yeast cake dissolved in 2 tablespoons lukewarm waterFlourAdd sugar and salt to milk; when lukewarm, add dissolved yeast cake and three-fourths cup flour. Let rise again, roll to one-half inch thickness, shape with small biscuit-cutter, place in buttered pan close together, let rise again, and bake.
