      Lotus Root Soup with Peanut
      My son's favourite soup is Lotus Root Soup. My sister likes this soup too but she prefers it with peanut and dried cuttlefish added not dried octopus.The variation is nice too except the taste of lotus root is not as strong and the taste of peanut is present.To make this, follow the instruction for Lotus Root Soup, except replace the dried octopus with dried cuttlefish and add 2 handfuls of raw peanuts. I don't add carrot here.

      Lotus Root Fries
      Hmmm ... leftover lotus root from my last recipe. I'm feeling a little burned out from the regular stews and stir-fries so I thought I'd go the "East meets West" route this time around.       Lotus Root Soup
      Soup, Soup, Soup … my boy must have soup everyday. The thing is I have tried many types and he only like a few … Winter Melon, Sharkfin Melon, ABC and Lotus Roots Soups. He just loves Lotus Roots Soup! God, he can ask me to make it everyday! He doesn't seem to get sick of drink it.To me, making the soup my boy likes is very easy. Just throw in the ingredients and brew. I usually brew it for 4 to 5 hours. I used to double-boiled the soup using a small pot in a slow cooker but electricity bills when sky-high so I stopped. It's cheaper to use gas.Ingredients: 4 pieces of pork ribs 1 section of lotus roots, skinned & sliced ½ carrot, skinned & sliced 1 piece dried octopus, cut into strips 4 red dated, seed removed Wolfberries (optional) salt for tasting How to do it:Blanch the pork ribs in boiling water for 1 mins then remove. In a new pot of water, add in the pork ribs, lotus roots, carrot red dates and dried octopus. Bring it to boil and turn down fire. Continue to brew for
