Thanksgiving Pumpkin Lasagna is an excellent vegetarian fall casserole. It also makes a beautiful presentation and is relatively easy to prepare.My good friend John emailed this recipe to me. I was sifting through my recipe files and found this recipe from real simple. I had all the ingredients on hand so I decided to give it a try.It was so easy and fast. I am still into eating less meat and it is going pretty well so far. Today I made a aubergine lasagna. In the tomato sauce I replaced the minced meat with blended beans and I put fried aubergine sticks on every other layer. It tasted great.

The nice thing about Lasagna other than its lure to commit deadly sin #2 is that its very easy to make an outstanding dish of it, you just need a good recipe.

Generally speaking a successful effort in the kitchen requires 3 things-
A good plan (recipe, imagination, etc)
Using the best ingredients you can reasonably/affordably obtain
Proper execution
So assuming you have a good recipe (we do) and you get good quality ingredients it comes down to execution and if you can brown meat, cut vegetables and beat an egg you can make an outstanding lasagna.

When I saw this in the February 2007 issue of Ladies' Home Journal, I just had to share. Instead of using pasta noodles, it uses egg wrappers (the picture, not from LHJ, shows traditional noodles). I love anything that uses roasted veggies, so I'm dying to give this recipe a try even through it's a bit labor intensive.
Best of all - it only has 9 Weight Watchers Points per serving! It's a bit high in calories and fat grams, but with all the fiber from the vegetables, it turns out to be worth the effort. With a salad and a glass of seltzer or wine, it would a perfect winter meal. Enjoy!

They got so many requests for it, that the company started making it again for a while; then once again, stopped production. I bought a case of the jars when I was emailed that it once again would go out of production. The Spaghetti Sauce Seasoning, combined with Spice Islands Italian Herb (still in production) is a match beyond your wildest tastes. This a VERY large recipe for a 12" x 18" x 3" pan. It will feed at least 10 people - and maybe more. It freezes well if you have leftovers. The recipe can be cut in half for a smaller portion.
